INGREDIENTS
- 1teaspoonsalt
- 1/4teaspoonpepper
- 2tablespoons mincedgarlic
- 1tablespoonfish sauce
- 1/2cupwhite wine
- 2eggs
- 1teaspoonpaprika
- 4tablespoons chinesehot pepper sauce
- 1cupflour
- 2lbscalamari, cleaned, cut into rings
- 6tablespoonscornstarch
- 8cupsoil, for frying
- 6leavesiceberg lettuce(large)
- currymayonnaise
DIRECTIONS
- Combine salt, pepper, garlic, fish sauce, wine, eggs, pepper sauce and paprika in blender and blend 30 seconds.
- Pour mixture into a large bowl and stir in flour just until combined.
- Do not overmix.
- Add calamari.
- Cover with plastic warp and refigerate at least 1 hour.
- Just before cooking, stir cornstarch into calamari mixture.
- (important for crispness) Heat oil in large deep saucepan to 375 deg.
- (pinch of flour dropped into oil bubbles).
- Drop small batch of calamari into hot oil.
- Do not crowd the pan.
- Cook in batches until calamari rings are golden brown and crispy (about 2 minutes).
- Remove and drain on paper towels.
- To serve; fill each lettuce leaf with 1 cup calamari and serve with Curry Mayo.

INGREDIENTS
- 1cuplager beeror ale
- 1cupall-purpose flour
- 1 1/2teaspoonspaprika
- 2clovesgarlic, chopped finely
- 2 californiaavocados
- vegetable oil, as needed(for deep frying)
- salt, as needed
- favoritesalsa
DIRECTIONS
- To make beer batter, whisk together beer, flour, paprika, and garlic until well blended.
- Let stand at least 2 hours.
- Peel avocados; cut each into 6 wedges.
- Dredge 6 wedges in reserved beer batter.
- Deep fry in hot oil (370 F) until golden about 3 minutes.
- Repeat with remaining wedges.
- Serve wedges with fav.
- salsa.

INGREDIENTS
- 1lbsharp cheddar cheese, grated
- 1cup softmargarine
- 1teaspoonred chili powder(savina)or2 teaspoonspaprika
- 1teaspoonsalt
- 2jarsjalapeno-stuffed green olives
- 2cupsflour
DIRECTIONS
- Blend the cheese and butter.
- Stir in the flour, salt and chile powder.
- Mix well.
- Wrap the dough around an olive, covering it completely.
- Place on an ungreased cookie sheet.
- Bake at 400 for 12-15 minutes or till lightly browned.
- Note: These do not spread like a cookie so you can space them close on the sheet.

INGREDIENTS
- 1 1/2cupscheddar cheese, mild,shredded(6 oz)
- 1cangreen chilies, diced(4 oz)
- 1 (8 ounce)packagecornbread mix
- 1/2cupsalsa
- slicedgreen onions(to garnish)
DIRECTIONS
- In small bowl, stir 1 cup cheese and undrained chiles into prepared corn bread batter.
- Heat lightly greased skillet or griddle over medium heat.
- Spoon 1 tablespoon batter on griddle for each pancake.
- Cook 2 to 3 minutes on each side, turning once.
- Serve immediately topped with salsa, remaining cheese and sliced green onions.

INGREDIENTS
- 500gground lamb
- 1cupbreadcrumbs
- 1onion, chopped
- 1clovegarlic, crushed
- 1teaspoon choppedchili
- 1teaspoonground cumin
- 1fresh lemon rind
- olive oil flavored cooking spray

SAVOURY JAM
- 2onions, sliced
- 1red capsicum, seeded and chopped
- 1tomato, chopped
- 1/2cupred wine vinegar
- 1/2cupwater
- 1/2cupbrown sugar
DIRECTIONS
- Combine all meatball ingredients, except the oil.
- Mix well and taking about 1 tablespoon of mix, form into balls.
- Place on a foil lined baking tray, and spray with the oil.
- and bake in a moderate oven for 10 to 15 minutes or until golden brown and cooked through.
- SAVOURY JAM: Place all ingredients into a saucepan and slowly bring to the boil, stirring to ensure the sugar dissolves.
- Reduce the heat and simmer for 10 to 15 minutes or until a jam-like consistency is reached.
