Battered Squid Recipe

INGREDIENTS

  1. 1teaspoonsalt
  2. 1/4teaspoonpepper
  3. 2tablespoons mincedgarlic
  4. 1tablespoonfish sauce
  5. 1/2cupwhite wine
  6. 2eggs
  7. 1teaspoonpaprika
  8. 4tablespoons chinesehot pepper sauce
  9. 1cupflour
  10. 2lbscalamari, cleaned, cut into rings
  11. 6tablespoonscornstarch
  12. 8cupsoil, for frying
  13. 6leavesiceberg lettuce(large)
  14. currymayonnaise

DIRECTIONS

  1. Combine salt, pepper, garlic, fish sauce, wine, eggs, pepper sauce and paprika in blender and blend 30 seconds.
  2. Pour mixture into a large bowl and stir in flour just until combined.
  3. Do not overmix.
  4. Add calamari.
  5. Cover with plastic warp and refigerate at least 1 hour.
  6. Just before cooking, stir cornstarch into calamari mixture.
  7. (important for crispness) Heat oil in large deep saucepan to 375 deg.
  8. (pinch of flour dropped into oil bubbles).
  9. Drop small batch of calamari into hot oil.
  10. Do not crowd the pan.
  11. Cook in batches until calamari rings are golden brown and crispy (about 2 minutes).
  12. Remove and drain on paper towels.
  13. To serve; fill each lettuce leaf with 1 cup calamari and serve with Curry Mayo.

Beer-battered Fried Avocado Wedges Recipe

INGREDIENTS

  1. 1cuplager beeror ale
  2. 1cupall-purpose flour
  3. 1 1/2teaspoonspaprika
  4. 2clovesgarlic, chopped finely
  5. 2 californiaavocados
  6. vegetable oil, as needed(for deep frying)
  7. salt, as needed
  8. favoritesalsa

DIRECTIONS

  1. To make beer batter, whisk together beer, flour, paprika, and garlic until well blended.
  2. Let stand at least 2 hours.
  3. Peel avocados; cut each into 6 wedges.
  4. Dredge 6 wedges in reserved beer batter.
  5. Deep fry in hot oil (370 F) until golden about 3 minutes.
  6. Repeat with remaining wedges.
  7. Serve wedges with fav.
  8. salsa.

Denver Broncos Hot and Spicy Cheeseballs Recipe

INGREDIENTS

  1. 1lbsharp cheddar cheese, grated
  2. 1cup softmargarine
  3. 1teaspoonred chili powder(savina)or2 teaspoonspaprika
  4. 1teaspoonsalt
  5. 2jarsjalapeno-stuffed green olives
  6. 2cupsflour

DIRECTIONS

  1. Blend the cheese and butter.
  2. Stir in the flour, salt and chile powder.
  3. Mix well.
  4. Wrap the dough around an olive, covering it completely.
  5. Place on an ungreased cookie sheet.
  6. Bake at 400 for 12-15 minutes or till lightly browned.
  7. Note: These do not spread like a cookie so you can space them close on the sheet.

Chile Cornmeal Pancakes Recipe

INGREDIENTS

  1. 1 1/2cupscheddar cheese, mild,shredded(6 oz)
  2. 1cangreen chilies, diced(4 oz)
  3. 1 (8 ounce)packagecornbread mix
  4. 1/2cupsalsa
  5. slicedgreen onions(to garnish)

DIRECTIONS

  1. In small bowl, stir 1 cup cheese and undrained chiles into prepared corn bread batter.
  2. Heat lightly greased skillet or griddle over medium heat.
  3. Spoon 1 tablespoon batter on griddle for each pancake.
  4. Cook 2 to 3 minutes on each side, turning once.
  5. Serve immediately topped with salsa, remaining cheese and sliced green onions.

Spicy meatballs with savoury jam Recipe

INGREDIENTS

  1. 500gground lamb
  2. 1cupbreadcrumbs
  3. 1onion, chopped
  4. 1clovegarlic, crushed
  5. 1teaspoon choppedchili
  6. 1teaspoonground cumin
  7. 1fresh lemon rind
  8. olive oil flavored cooking spray
  9. SAVOURY JAM

  10. 2onions, sliced
  11. 1red capsicum, seeded and chopped
  12. 1tomato, chopped
  13. 1/2cupred wine vinegar
  14. 1/2cupwater
  15. 1/2cupbrown sugar

DIRECTIONS

  1. Combine all meatball ingredients, except the oil.
  2. Mix well and taking about 1 tablespoon of mix, form into balls.
  3. Place on a foil lined baking tray, and spray with the oil.
  4. and bake in a moderate oven for 10 to 15 minutes or until golden brown and cooked through.
  5. SAVOURY JAM: Place all ingredients into a saucepan and slowly bring to the boil, stirring to ensure the sugar dissolves.
  6. Reduce the heat and simmer for 10 to 15 minutes or until a jam-like consistency is reached.
