INGREDIENTS
- 3 1/2cupsnonfat milk
- 3tablespoonsall-purpose flour
- 1tablespooncanola oilor butter
- 1largeonion, finely chopped(1 cup)
- 4mediumpotatoes, cut into 1/4 inch pieces(1 1/2 pounds)
- 1teaspoonsalt
- 1/4teaspoonblack pepper
- 1/8teaspoonground red pepper(cayenne)
- 1 1/2cups shreddedreduced-fat sharp cheddar cheese(6 ounces)
- 1/3cupreduced-fat sour cream
- 8mediumgreen onions, sliced(1/2 cup)
DIRECTIONS
- Beat 1/2 cup of the milk and flour with a wire whisk until smooth; set aside.
- Heat oil in 4-quart Dutch oven over medium heat.
- Cook onion in oil about 2 minutes, stirring occasionally, until tender.
- Increase heat to high; stir in remaining 3 cups milk.
- Stir in potatoes, salt, black pepper and red pepper.
- Heat to boiling; reduce heat.
- Simmer uncovered 15 to 16 minutes, stirring frequently, until potatoes are tender.
- Beat in flour mixture with wire whisk.
- Cook about 2 minutes, stirring frequently, until thickened; remove from heat.
- Beat potato mixture with wire whisk until potatoes are slightly mashed.
- Stir in cheese, sour cream and green onions.

- 1/2whole wheat pita bread
- 1tablespoonsoy nut butter
- 1tablespoonapple butter
- 6slicesapples(about 1/4 apple)
DIRECTIONS
- Spread soy nut butter and apple butter in pita half.
- Arrange apple slices inside pita.
- Enjoy!

INGREDIENTS
- 1package maple flavorJimmy Dean sausage, cooked,crumbled and drained
- 1 (8 ounce)packagecream cheese, softened
- 2mediumcooking apples, cored and sliced
- 1/4cup coarsely choppedwalnuts
- 2tablespoonsbrown sugar
- 2 (8 ounce)packagesrefrigerated crescent dinner rolls, divided
- 1tablespooncinnamon sugar (optional)
DIRECTIONS
- Preheat oven to 375 F.
- Spread 1 package of crescent rolls in bottom of 9 x 13 baking dish; press perforations to seal.
- In separate bowl, combine cooked sausage, cream cheese, chopped apples, walnuts and brown sugar; mix well.
- Spread mixture evenly in baking dish.
- Top with remaining package of crescent rolls, covering sausage mixture completely; press perforations to seal.
- Sprinkle with cinnamon sugar if desired.
- Bake 20 minutes or until golden brown.
- Cool 5 minutes before slicing.
- Makes 8-10 servings.

INGREDIENTS
- 1 (1 1/2 lb) trimmed leanboneless beef top sirloin steaks
- 1/3cuplow sodium soy sauce
- 1/3cupunsweetened pineapple juice
- 1/3cupdry sherry
- 1/4cupcider vinegar
DIRECTIONS
- Place steak in large, shallow dish.
- Combine soy sauce and remaining ingredients; pour over steak.
- Cover and chill 4 hours, turning steak occasionally.
- Drain, discarding marinade.
- Grill over hot coals (400-500 degrees) 10 to 15 minutes on each side or to desired degree of doneness.
- To serve, slice across the grain into thin slices.

INGREDIENTS
- 2lbsboneless round steak or chuck steaks, cut into 1 inch cubes
- 2tablespoonsvegetable oil
- 2 (8 ounce)canstomato sauce
- 2cups slicedcarrots
- 2cupswhite pearl onions
- 1largegreen pepper, cut into 1 inch pieces
- 1/2cupmolasses
- 1/3cupvinegar
- 1/4cupsugar
- 2teaspoonschili powder
- 2teaspoonspaprika
- 1teaspoonsalt
- shell macaroni (optional)
DIRECTIONS
- In a skillet, brown steak in oil; transfer to a slow cooker.
- Add the next 10 ingredients; stir well.
- Cover and cook on low for 7-8 hours or until meat is tender.
- Thicken if desired.
- Serve over macaroni if desired.
