Smashed Potato Soup Recipe

INGREDIENTS

  1. 3 1/2cupsnonfat milk
  2. 3tablespoonsall-purpose flour
  3. 1tablespooncanola oilor butter
  4. 1largeonion, finely chopped(1 cup)
  5. 4mediumpotatoes, cut into 1/4 inch pieces(1 1/2 pounds)
  6. 1teaspoonsalt
  7. 1/4teaspoonblack pepper
  8. 1/8teaspoonground red pepper(cayenne)
  9. 1 1/2cups shreddedreduced-fat sharp cheddar cheese(6 ounces)
  10. 1/3cupreduced-fat sour cream
  11. 8mediumgreen onions, sliced(1/2 cup)

DIRECTIONS

  1. Beat 1/2 cup of the milk and flour with a wire whisk until smooth; set aside.
  2. Heat oil in 4-quart Dutch oven over medium heat.
  3. Cook onion in oil about 2 minutes, stirring occasionally, until tender.
  4. Increase heat to high; stir in remaining 3 cups milk.
  5. Stir in potatoes, salt, black pepper and red pepper.
  6. Heat to boiling; reduce heat.
  7. Simmer uncovered 15 to 16 minutes, stirring frequently, until potatoes are tender.
  8. Beat in flour mixture with wire whisk.
  9. Cook about 2 minutes, stirring frequently, until thickened; remove from heat.
  10. Beat potato mixture with wire whisk until potatoes are slightly mashed.
  11. Stir in cheese, sour cream and green onions.

Breakfast Pita Pocket Recipe

INGREDIENTS

  1. 1/2whole wheat pita bread
  2. 1tablespoonsoy nut butter
  3. 1tablespoonapple butter
  4. 6slicesapples(about 1/4 apple)

DIRECTIONS

  1. Spread soy nut butter and apple butter in pita half.
  2. Arrange apple slices inside pita.
  3. Enjoy!

Sweet Sausage Casserole Recipe

INGREDIENTS

  1. 1package maple flavorJimmy Dean sausage, cooked,crumbled and drained
  2. 1 (8 ounce)packagecream cheese, softened
  3. 2mediumcooking apples, cored and sliced
  4. 1/4cup coarsely choppedwalnuts
  5. 2tablespoonsbrown sugar
  6. 2 (8 ounce)packagesrefrigerated crescent dinner rolls, divided
  7. 1tablespooncinnamon sugar (optional)

DIRECTIONS

  1. Preheat oven to 375 F.
  2. Spread 1 package of crescent rolls in bottom of 9” x 13” baking dish; press perforations to seal.
  3. In separate bowl, combine cooked sausage, cream cheese, chopped apples, walnuts and brown sugar; mix well.
  4. Spread mixture evenly in baking dish.
  5. Top with remaining package of crescent rolls, covering sausage mixture completely; press perforations to seal.
  6. Sprinkle with cinnamon sugar if desired.
  7. Bake 20 minutes or until golden brown.
  8. Cool 5 minutes before slicing.
  9. Makes 8-10 servings.

American Steakhouse Beef Recipe

INGREDIENTS

  1. 1 (1 1/2 lb) trimmed leanboneless beef top sirloin steaks
  2. 1/3cuplow sodium soy sauce
  3. 1/3cupunsweetened pineapple juice
  4. 1/3cupdry sherry
  5. 1/4cupcider vinegar

DIRECTIONS

  1. Place steak in large, shallow dish.
  2. Combine soy sauce and remaining ingredients; pour over steak.
  3. Cover and chill 4 hours, turning steak occasionally.
  4. Drain, discarding marinade.
  5. Grill over hot coals (400-500 degrees) 10 to 15 minutes on each side or to desired degree of doneness.
  6. To serve, slice across the grain into thin slices.

Sweet-Sour Beef Recipe

INGREDIENTS

  1. 2lbsboneless round steak or chuck steaks, cut into 1 inch cubes
  2. 2tablespoonsvegetable oil
  3. 2 (8 ounce)canstomato sauce
  4. 2cups slicedcarrots
  5. 2cupswhite pearl onions
  6. 1largegreen pepper, cut into 1 inch pieces
  7. 1/2cupmolasses
  8. 1/3cupvinegar
  9. 1/4cupsugar
  10. 2teaspoonschili powder
  11. 2teaspoonspaprika
  12. 1teaspoonsalt
  13. shell macaroni (optional)

DIRECTIONS

  1. In a skillet, brown steak in oil; transfer to a slow cooker.
  2. Add the next 10 ingredients; stir well.
  3. Cover and cook on low for 7-8 hours or until meat is tender.
  4. Thicken if desired.
  5. Serve over macaroni if desired.
