INGREDIENTS
- 1lbmushrooms, sliced
- 6slices dicedbacon
- 2cloves mincedgarlic
- 2tablespoonsfresh parsley, chopped
- 3tablespoonsolive oil
- 4eggs, beaten
- 1cup gratedparmesan cheese
- 1/2teaspoonsalt
- 1/8teaspoonblack pepper
- 19″ unbaked pie shell
DIRECTIONS
- Saute mushrooms, bacon, garlic and parsley in oil until mushrooms are tender.
- Drain and cool for 10 minutes.
- Combine eggs, cheese and seasonings and mix well.
- Stir into mushroom mixture and pour into pie shell.
- Bake at 350° for 30 minutes.

INGREDIENTS
- 2 (14 ounce)canssauerkraut
- 1largeonion(chopped)
- 2clovesgarlic(crushed)
- 3/4cupbrown sugar
- 1bay leaf
- 1packagekielbasa, cut into 1 to 2 inch pieces
- 4-6potatoes, peeled and cut into 1 inch squares
DIRECTIONS
- Preheat oven to 350 degrees.
- I put mine in the crockpot.
- Drain and rinse sauerkraut in a colander.
- Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
- Or let cook in crockpot on low for several hours until potatoes are tender.I usually add 1 can of water and mix well…Add more water accordinally throughout the day.
- I let mine cook all day on low.
- You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
- I also use the Boverian kraut– this gives this dish a sweeter flavor– even my kids like it.

INGREDIENTS
- 1/4lbbutter
- 1cupsugar
- 2eggs
- 2teaspoonscoconut extract
- 1cupsour cream(8oz)
- 1cupcoconut
- 2cupsflour
- 1teaspoonbaking powder
- 1teaspoonbaking soda
DIRECTIONS
- Cream together butter and sugar.
- Beat in eggs and coconut extract.
- Mix in sour cream, then add coconut and mix well.
- Stir flour, baking powder and baking soda together and add to batter and mix well.
- Place batter into greased loaf pan and bake at 350° for 45 to 50 minutes or until done.

INGREDIENTS
- 1lbhamburger, browned
- 1smallonion, chopped
- 3celery ribs, chopped
- 1 (10 1/2 ounce)cancream of chicken soup
- soy sauce
- chow mein noodles
- rice
DIRECTIONS
- Sauté onion and celery just until tender.
- Brown hamburger in large skillet.Add onion and celery to hamburger.
- Add one can of cream of chicken soup and 1/2 can of water.Add soy sauce to taste.
- Let simmer 5-10 minutes.
- Serve over white rice and top with chow mein noodles.
- NOTE: If too runny, you can add flour to thicken up to your liking.

INGREDIENTS
- 1 1/2lbshamburger
- beef gravy(either home made or store bought, either works)
- mashed potatoes
DIRECTIONS
- Brown hamburger in large pot (you don’t want to crumble it up too fine–big pieces are the best).
- Make gravy and add to pot.Let it simmer until heated.
- Serve over mashed potatoes.
- NOTE: You don’t want this too runny–kind of thick and with big chunks of hamburger is the best.
