Cuban Black Bean Salad Recipe

INGREDIENTS

  1. 1 (15 ounce)canblack beans, drained and rinsed
  2. 1/2cupyellow bell peppers, chopped
  3. 1/2cupred bell peppers, chopped
  4. 1/2celery, chopped
  5. 2tablespoonsred onions, chopped
  6. 1tablespoon choppedfresh parsley
  7. 2tablespoons freshly squeezedlemon juice
  8. 1clovegarlic, crushed
  9. 1/4teaspoonground cumin
  10. 3tablespoonsextra virgin olive oil

DIRECTIONS

  1. Toss together beans, yellow and red peppers, celery, onion and parsley.
  2. Whisk together lemon juice, olive oil, garlic& cumin and toss into bean mixture.

Pork Chops With Apples and Bacon Recipe

INGREDIENTS

  1. 12slices of thick-slicedthick slab bacon, halved
  2. 6smallsweet apples, cut in wedges
  3. 1cupflour
  4. 2teaspoonssalt
  5. 1teaspoonpepper
  6. 6 thin-slicedpork chops

DIRECTIONS

  1. Cook bacon in a heavy skillet over medium heat until crisp.
  2. Remove to a paper towel and reserve.
  3. In the bacon fat, saute the apples over medium heat until they are soft, but not mushy.
  4. The cut edges should brown and caramelize.
  5. Remove apples with a slotted spoon and keep warm.
  6. Place flour, salt and pepper in a brown paper bag and shake thoroughly.
  7. Shake the pork chops in the seasoned flour.
  8. Fry the chops in the remaining fat over medium high-heat until they are browned, turning once.
  9. Serve the chops on warmed plates, covered with the apples and 4 pieces of bacon per chop.

Crispy Oven-Fried Chicken Recipe

INGREDIENTS

  1. 3lbschicken pieces(your choice, we prefer breasts or pick-of-the-chix)
  2. 1/2cupolive oil, plus
  3. 1/3cupolive oil
  4. 1/4cuplemon juice
  5. kosher salt
  6. 1cupself-rising flour, mixed with
  7. 1/4teaspoongarlic powder
  8. 1/4teaspoononion powder
  9. 1 1/2teaspoonscayenne(more or less)
  10. 1/2teaspoonpaprika(more or less)

DIRECTIONS

  1. Preheat oven to 425.
  2. Pour 1/3 cup olive oil on 10×15 baking sheet that has been covered with tin foil.
  3. Spread evenly.
  4. Set aside.
  5. In a large mixing bowl, combine the 1/2 cup olive oil and lemon juice, mixing well.
  6. Sprinkle the chicken pieces with kosher salt, then add to the olive oil/lemon juice mixture, coating well and allowing to to marinate for about 30 minutes.
  7. Drain each chicken piece a bit before rolling in the prepared flour mixture.
  8. Coat well, placing skin side (or meaty side, as I always skin my chicken) down on the oiled baking sheet.
  9. Allow space between chicken pieces for crispness.
  10. Place in hot oven and immediately reduce oven temperature to 400.
  11. Bake for 30 minutes, then turn chicken pieces over.
  12. Reduce oven temperature again to 350 and bake for another 15-20 minutes, or until done.

Western Bean and Burger Soup Recipe

INGREDIENTS

  1. 1canblack beans, drained
  2. 1candiced tomatoes, undrained
  3. 1 (12 ounce)package frozen bocavegetarian ground beef
  4. 3cupswater
  5. 1cup choppedonions
  6. 3clovesgarlic, minced
  7. 1tablespoonground cumin
  8. 1teaspoonhot pepper sauce
  9. 1teaspoonsalt

DIRECTIONS

  1. Mix all ingredients in a large pot or Dutch oven.
  2. Bring to a boil over medium-high heat and cover.
  3. Reduce heat to low and simmer 15 minutes, stirring occasionally.

Banana Ghouls Recipe

INGREDIENTS

  1. 3largefirm bananas, peeled
  2. 6 pop cyclesticks
  3. 1 1/2cupswhite chocolate chips
  4. 18Fruit Loops cereal

DIRECTIONS

  1. Cut the bananas in half crosswise.
  2. Insert a pop cycle stick about 2 inches into cut end of one half.
  3. Repeat with remaining halves.
  4. Place on waxed paper and freeze for about one hour.
  5. Microwave white-chocolate chips on high for about 2 minutes, or until completely melted.
  6. Spoon over bananas covering them completely.
  7. While chocolate is still soft, press in 2 Fruit Loops for eyes and 1 for the mouth.
  8. Freeze banana again until chocolate is hard.
