INGREDIENTS
- 1 (15 ounce)canblack beans, drained and rinsed
- 1/2cupyellow bell peppers, chopped
- 1/2cupred bell peppers, chopped
- 1/2celery, chopped
- 2tablespoonsred onions, chopped
- 1tablespoon choppedfresh parsley
- 2tablespoons freshly squeezedlemon juice
- 1clovegarlic, crushed
- 1/4teaspoonground cumin
- 3tablespoonsextra virgin olive oil
DIRECTIONS
- Toss together beans, yellow and red peppers, celery, onion and parsley.
- Whisk together lemon juice, olive oil, garlic& cumin and toss into bean mixture.

INGREDIENTS
- 12slices of thick-slicedthick slab bacon, halved
- 6smallsweet apples, cut in wedges
- 1cupflour
- 2teaspoonssalt
- 1teaspoonpepper
- 6 thin-slicedpork chops
DIRECTIONS
- Cook bacon in a heavy skillet over medium heat until crisp.
- Remove to a paper towel and reserve.
- In the bacon fat, saute the apples over medium heat until they are soft, but not mushy.
- The cut edges should brown and caramelize.
- Remove apples with a slotted spoon and keep warm.
- Place flour, salt and pepper in a brown paper bag and shake thoroughly.
- Shake the pork chops in the seasoned flour.
- Fry the chops in the remaining fat over medium high-heat until they are browned, turning once.
- Serve the chops on warmed plates, covered with the apples and 4 pieces of bacon per chop.

INGREDIENTS
- 3lbschicken pieces(your choice, we prefer breasts or pick-of-the-chix)
- 1/2cupolive oil, plus
- 1/3cupolive oil
- 1/4cuplemon juice
- kosher salt
- 1cupself-rising flour, mixed with
- 1/4teaspoongarlic powder
- 1/4teaspoononion powder
- 1 1/2teaspoonscayenne(more or less)
- 1/2teaspoonpaprika(more or less)
DIRECTIONS
- Preheat oven to 425.
- Pour 1/3 cup olive oil on 10×15 baking sheet that has been covered with tin foil.
- Spread evenly.
- Set aside.
- In a large mixing bowl, combine the 1/2 cup olive oil and lemon juice, mixing well.
- Sprinkle the chicken pieces with kosher salt, then add to the olive oil/lemon juice mixture, coating well and allowing to to marinate for about 30 minutes.
- Drain each chicken piece a bit before rolling in the prepared flour mixture.
- Coat well, placing skin side (or meaty side, as I always skin my chicken) down on the oiled baking sheet.
- Allow space between chicken pieces for crispness.
- Place in hot oven and immediately reduce oven temperature to 400.
- Bake for 30 minutes, then turn chicken pieces over.
- Reduce oven temperature again to 350 and bake for another 15-20 minutes, or until done.

INGREDIENTS
- 1canblack beans, drained
- 1candiced tomatoes, undrained
- 1 (12 ounce)package frozen bocavegetarian ground beef
- 3cupswater
- 1cup choppedonions
- 3clovesgarlic, minced
- 1tablespoonground cumin
- 1teaspoonhot pepper sauce
- 1teaspoonsalt
DIRECTIONS
- Mix all ingredients in a large pot or Dutch oven.
- Bring to a boil over medium-high heat and cover.
- Reduce heat to low and simmer 15 minutes, stirring occasionally.

INGREDIENTS
- 3largefirm bananas, peeled
- 6 pop cyclesticks
- 1 1/2cupswhite chocolate chips
- 18Fruit Loops cereal
DIRECTIONS
- Cut the bananas in half crosswise.
- Insert a pop cycle stick about 2 inches into cut end of one half.
- Repeat with remaining halves.
- Place on waxed paper and freeze for about one hour.
- Microwave white-chocolate chips on high for about 2 minutes, or until completely melted.
- Spoon over bananas covering them completely.
- While chocolate is still soft, press in 2 Fruit Loops for eyes and 1 for the mouth.
- Freeze banana again until chocolate is hard.
