Fluff Frosting Recipe

INGREDIENTS

  1. 1cuphalf-and-half
  2. 1/4cupflour
  3. 1teaspoonvanilla
  4. 1cupsugar
  5. 1/2cupbutter
  6. 1/2cupCrisco shortening

DIRECTIONS

  1. In a small saucepan, whisk and cook the flour and half and half until thick.
  2. Set aside to cool (keep mixture covered while cooling).
  3. In a bowl, beat sugar, butter and shortening with mixer until fluffy.
  4. Add milk mixture with vanilla; continue beating until fluffy.
  5. Food colouring may be added if desired.

Chicken With Feta Cheese and Tomatoes Recipe

INGREDIENTS

  1. 2cupswater
  2. 1cuplong grain white rice
  3. 1/2cupflour
  4. 1teaspoonpaprika
  5. 1teaspoonoregano
  6. 1 1/2lbsboneless skinless chicken breasts, cut into bite-size cubes
  7. 1/4cupbutter
  8. 1onion, coarsely chopped
  9. 1-2tablespoon fresh mincedgarlic(or to taste)
  10. 1 1/2cupsmilk(use half and half for a more creamier taste)
  11. 1 (14 ounce)canwhole tomatoes, drained and cut in chunks
  12. 6ouncesfeta cheese, diced
  13. 1/2cupblack olives, sliced

DIRECTIONS

  1. Cook rice in water until cooked (about 20-25 mins).
  2. Combine next 3 ingredients and pepper (to taste) in a shallow bowl.
  3. Dredge chicken in flour to coat lightly. Reserve remaining flour mixture. Melt half the butter in a skillet over med-high heat.
  4. Saute chicken for 2 mins per side, or until lightly browned. Remove from skillet, set aside Add remaining butter to skillet. Saute onions and garlic 2-3 mins, or until softened.
  5. Stir in 2 tablespoons remaining flour mixture and cook about 2 minutes or until bubbly and lightly browned.
  6. Stir in milk and bring to a boil stirring frequently.
  7. Return chicken pieces to skillet and simmer 8-10 minutes.
  8. Stir in tomatoes and feta; cook another minute.
  9. Season with salt and pepper to taste.
  10. Serve over rice.
  11. Sprinkle with olives.

Pizza Meatballs Recipe

INGREDIENTS

  1. 1lblean ground beef
  2. 1/2cupbreadcrumbs
  3. 1/2cupmilk
  4. 3tablespoonsinstant minced onion
  5. 1teaspoongarlic salt
  6. 1/4lbmozzarella cheese, cut into small cubes
  7. 3tablespoonsflour
  8. 2-3tablespoonsoil
  9. pizza sauce, homemade or store-bought

DIRECTIONS

  1. Combine first 5 ingredients with pepper to taste.
  2. Placing a cube of mozza cheese inside each one, shape into 12 large size meatballs.
  3. Roll each meatball in flour, shaking off excess.
  4. Heat oil in skillet, brown meatballs on all sides.
  5. Drain off any excess fat and oil.
  6. Add pizza sauce and bring to a boil.
  7. Reduce heat to low, and simmer 10-12 mins, or until cooked throughout.

Peanut Butter Ball Cookies Recipe

INGREDIENTS

  1. 6tablespoonssugar
  2. 2 1/2tablespoonspeanut butter
  3. 2tablespoonsbutter, softened
  4. 1egg white
  5. 1teaspoonvanilla
  6. 3/4cupflour, plus
  7. 2tablespoonsflour
  8. 1/2teaspoonbaking soda
  9. 1/8teaspoonsalt

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Combine sugar, peanut butter and butter in a mixing bowl.
  3. Beat with mixer until light and fluffy.
  4. Add egg white and vanilla and mix thoroghly.
  5. Combine remaining ingredients in a bowl.
  6. Slowly stir into peanut butter mixture.
  7. FREEZE 20 mins.
  8. Form dough into 2-inch balls.
  9. Arrange 2-inches apart on greased cookie sheet.
  10. Bake approx 12 mins.
  11. Cool on rack.

Norwegian Date Coffee Cake Recipe

INGREDIENTS

  1. 1/2cup choppeddates
  2. 3tablespoonscream sherry
  3. 1/2cup finely choppedpecans
  4. 1/3cup packedbrown sugar
  5. 1/4cupgranulated sugar
  6. 1teaspoonground cinnamon
  7. 1tablespoonbutter, softened
  8. 1cupgranulated sugar
  9. 1/4cupbutter, softened
  10. 1egg
  11. 1 (8 ounce)cartonsour cream
  12. 1tablespooncream sherry
  13. 2cupsall-purpose flour
  14. 1teaspoonbaking soda
  15. 1teaspoonbaking powder
  16. 1teaspoonsalt
  17. Sherry Glaze

  18. 2tablespoonsbutter
  19. 2tablespoonswater
  20. 1/4cupsugar
  21. 2tablespoonssherry wine

DIRECTIONS

  1. In a small bowl combine dates and the 3 tablespoons of sherry.
  2. Cover and let stand for 10 minutes.
  3. In another small bowl combine pecans, brown sugar, the 1/4 cup granulated sugar, cinnamon, and the 1 tablespoon butter.
  4. Stir in date mixture.
  5. Set aside.
  6. In a bowl beat the 1 cup granulated sugar, the 1/4 cup butter, and egg with an electric mixer till smooth.
  7. Beat in sour cream and the 1 tablespoon sherry.
  8. Combine flour, baking soda, baking powder, and salt; add to sour cream mixture.
  9. Beat till well combined.
  10. In a greased 8×8x2-inch baking pan spread half the sour cream batter.
  11. Top with half the date mixture.
  12. Top with remaining batter, then date mixture.
  13. Bake in a 375 degree F oven for 40 to 45 minutes or till toothpick inserted near center comes out clean.
  14. To prevent overbrowning, cover cake with foil for last 15 minutes of baking.
  15. Cool slightly.
  16. Sherry Glaze: In a saucepan combine 2 tablespoons butter, 2 tablespoons water, and 1/4 cup sugar.
  17. Cook and stir till bubbly.
  18. Reduce heat; simmer for 5 minutes.
  19. Remove from heat; stir in 2 tablespoons sherry.
  20. Drizzle glaze over coffee cake.
