INGREDIENTS
- 1cuphalf-and-half
- 1/4cupflour
- 1teaspoonvanilla
- 1cupsugar
- 1/2cupbutter
- 1/2cupCrisco shortening
DIRECTIONS
- In a small saucepan, whisk and cook the flour and half and half until thick.
- Set aside to cool (keep mixture covered while cooling).
- In a bowl, beat sugar, butter and shortening with mixer until fluffy.
- Add milk mixture with vanilla; continue beating until fluffy.
- Food colouring may be added if desired.

INGREDIENTS
- 2cupswater
- 1cuplong grain white rice
- 1/2cupflour
- 1teaspoonpaprika
- 1teaspoonoregano
- 1 1/2lbsboneless skinless chicken breasts, cut into bite-size cubes
- 1/4cupbutter
- 1onion, coarsely chopped
- 1-2tablespoon fresh mincedgarlic(or to taste)
- 1 1/2cupsmilk(use half and half for a more creamier taste)
- 1 (14 ounce)canwhole tomatoes, drained and cut in chunks
- 6ouncesfeta cheese, diced
- 1/2cupblack olives, sliced
DIRECTIONS
- Cook rice in water until cooked (about 20-25 mins).
- Combine next 3 ingredients and pepper (to taste) in a shallow bowl.
- Dredge chicken in flour to coat lightly. Reserve remaining flour mixture. Melt half the butter in a skillet over med-high heat.
- Saute chicken for 2 mins per side, or until lightly browned. Remove from skillet, set aside Add remaining butter to skillet. Saute onions and garlic 2-3 mins, or until softened.
- Stir in 2 tablespoons remaining flour mixture and cook about 2 minutes or until bubbly and lightly browned.
- Stir in milk and bring to a boil stirring frequently.
- Return chicken pieces to skillet and simmer 8-10 minutes.
- Stir in tomatoes and feta; cook another minute.
- Season with salt and pepper to taste.
- Serve over rice.
- Sprinkle with olives.

INGREDIENTS
- 1lblean ground beef
- 1/2cupbreadcrumbs
- 1/2cupmilk
- 3tablespoonsinstant minced onion
- 1teaspoongarlic salt
- 1/4lbmozzarella cheese, cut into small cubes
- 3tablespoonsflour
- 2-3tablespoonsoil
- pizza sauce, homemade or store-bought
DIRECTIONS
- Combine first 5 ingredients with pepper to taste.
- Placing a cube of mozza cheese inside each one, shape into 12 large size meatballs.
- Roll each meatball in flour, shaking off excess.
- Heat oil in skillet, brown meatballs on all sides.
- Drain off any excess fat and oil.
- Add pizza sauce and bring to a boil.
- Reduce heat to low, and simmer 10-12 mins, or until cooked throughout.

INGREDIENTS
- 6tablespoonssugar
- 2 1/2tablespoonspeanut butter
- 2tablespoonsbutter, softened
- 1egg white
- 1teaspoonvanilla
- 3/4cupflour, plus
- 2tablespoonsflour
- 1/2teaspoonbaking soda
- 1/8teaspoonsalt
DIRECTIONS
- Set oven to 375 degrees.
- Combine sugar, peanut butter and butter in a mixing bowl.
- Beat with mixer until light and fluffy.
- Add egg white and vanilla and mix thoroghly.
- Combine remaining ingredients in a bowl.
- Slowly stir into peanut butter mixture.
- FREEZE 20 mins.
- Form dough into 2-inch balls.
- Arrange 2-inches apart on greased cookie sheet.
- Bake approx 12 mins.
- Cool on rack.

INGREDIENTS
- 1/2cup choppeddates
- 3tablespoonscream sherry
- 1/2cup finely choppedpecans
- 1/3cup packedbrown sugar
- 1/4cupgranulated sugar
- 1teaspoonground cinnamon
- 1tablespoonbutter, softened
- 1cupgranulated sugar
- 1/4cupbutter, softened
- 1egg
- 1 (8 ounce)cartonsour cream
- 1tablespooncream sherry
- 2cupsall-purpose flour
- 1teaspoonbaking soda
- 1teaspoonbaking powder
- 1teaspoonsalt

Sherry Glaze
- 2tablespoonsbutter
- 2tablespoonswater
- 1/4cupsugar
- 2tablespoonssherry wine
DIRECTIONS
- In a small bowl combine dates and the 3 tablespoons of sherry.
- Cover and let stand for 10 minutes.
- In another small bowl combine pecans, brown sugar, the 1/4 cup granulated sugar, cinnamon, and the 1 tablespoon butter.
- Stir in date mixture.
- Set aside.
- In a bowl beat the 1 cup granulated sugar, the 1/4 cup butter, and egg with an electric mixer till smooth.
- Beat in sour cream and the 1 tablespoon sherry.
- Combine flour, baking soda, baking powder, and salt; add to sour cream mixture.
- Beat till well combined.
- In a greased 8×8x2-inch baking pan spread half the sour cream batter.
- Top with half the date mixture.
- Top with remaining batter, then date mixture.
- Bake in a 375 degree F oven for 40 to 45 minutes or till toothpick inserted near center comes out clean.
- To prevent overbrowning, cover cake with foil for last 15 minutes of baking.
- Cool slightly.
- Sherry Glaze: In a saucepan combine 2 tablespoons butter, 2 tablespoons water, and 1/4 cup sugar.
- Cook and stir till bubbly.
- Reduce heat; simmer for 5 minutes.
- Remove from heat; stir in 2 tablespoons sherry.
- Drizzle glaze over coffee cake.
