Chicken Spaghetti Recipe

INGREDIENTS

  1. 3lbschicken breasts(or your choice of chicken pieces)
  2. 1onion, coarsely chopped
  3. 1lbangel hair pasta
  4. 1cup freshsliced mushrooms(a little more at our house, can also use canned mushroom pieces in a pinch)
  5. 4tablespoonsbutteror margarine
  6. garlic powder
  7. salt and pepper
  8. 1/2lbVelveeta cheese, cubed
  9. 2 (10 1/2 ounce)canslow-fat cream of mushroom soup
  10. 3-4cups gratedsharp cheddar cheese

DIRECTIONS

  1. Boil chicken pieces in 2 quarts of water, along with the chopped onion.
  2. Cook until tender, and meat is easily torn or shredded.
  3. Remove chicken from the pot.
  4. Set aside to cool a bit.
  5. Leave the broth in the pot- DO NOT DISCARD THE BROTH.
  6. Tear or shred the chicken into bite-sized pieces.
  7. Saute the mushrooms in the butter in a small skillet.
  8. Season well with garlic powder, salt and pepper.
  9. In a sauce pan, melt the Velveeta with the cream of mushroom soup, combining until smooth.
  10. Strain the onion pieces from the reserved broth.
  11. Boil the angel hair pasta in this broth, according to manufacturer’s directions.Do not drain.
  12. Mix everything together - shredded chicken, mushrooms, pasta (in broth), and Velveeta mixture.
  13. Pour into large lasagna pan or other large casserole dish.
  14. Top with the grated cheddar cheese.
  15. Bake 30 min at 350.

English Bun Loaf 1975 Recipe

INGREDIENTS

  1. 8ouncesmixed dried fruit
  2. 6fluid ounces cold strainedtea
  3. 8ouncesself rising flour
  4. 1dashsalt
  5. 4ouncesbrown sugar
  6. 1 beatenegg

DIRECTIONS

  1. Soak fruit and tea together overnight, covered.
  2. Drain the fruit, and reserve liquid.
  3. Mix drained fruit with the beaten egg into the flour Using a little of the liquid to make a firm dropping consistency.
  4. (This depends on the size of egg used, but about two tbsp. of liquid is used.) Grease a one pound loaf tin and line with greased paper.
  5. Tin should hold 1 1/2 pints.
  6. Bake gas mark 4 or 350 degrees F.
  7. Bake about one hour, or until firm.
  8. Leave in the pan about 6 minutes.
  9. Then turn out onto wire tray to cool.

Ginger Flan Recipe

INGREDIENTS

  1. CRUST

  2. 1 1/2cupsgingersnap crumbs(12 - 14 cookies)
  3. 1/3cupbutter, melted
  4. 1/4cupsugar
  5. FILLING

  6. 1 (500 g)containermascarpone cheese
  7. 1/2cupginger marmalade
  8. 1teaspoonground ginger
  9. GARNISH

  10. 2mangoes or2 cupsraspberries(or you choose)
  11. 1tablespoon dicedcandied ginger (optional)

DIRECTIONS

  1. Mix crust ingredients together& press into a 9 inch flan ring with removeable base (or a pie dish).
  2. Bake for 10 minutes, then cool completely.
  3. Blend filling ingredients well& spoon into cold crust.
  4. Chill for at least 2 hours.
  5. Just before serving, peel& slice mangoes or wash raspberries (if using fresh).
  6. Top the flan with your fruit of choice& garnish with candied ginger, if desired.

Tony’s Jalapeno Wrap Recipe

INGREDIENTS

  1. 8ouncescream cheese
  2. 1 (1 1/4 ounce)packetranch dressing mix
  3. 1cupMiracle Whip
  4. 1dozentortillas
  5. 1 (6 ounce)jarjalapeno peppers, diced

DIRECTIONS

  1. mix cream cheese, ranch& miracle whip until smooth.
  2. add diced jalapeno peppers to mix (to taste).
  3. spread onto a tortilla shell.
  4. roll shell.
  5. repeat until out of mix.
  6. chill in refrigerator for about an hour.
  7. slice into bit sized pieces.

Chili Con Carne with Tomatoes Recipe

INGREDIENTS

  1. 1lbground beef
  2. 2mediumonions, chopped(about 1 cup)
  3. 1cup choppedgreen peppers
  4. 1 (28 ounce)cantomatoes
  5. 1 (8 ounce)cantomato sauce
  6. 2teaspoonschili powder
  7. 1teaspoonsalt
  8. 1/8teaspoonred cayenne pepper
  9. 1/8teaspoonpaprika
  10. 1 (15 1/2 ounce)cankidney beans, drained

DIRECTIONS

  1. Cook and stir ground beef, onion and green pepper in large skillet, until meat is brown and onion is tender.
  2. Drain off fat.
  3. Stir in remaining ingredients except kidney beans.
  4. Heat to boiling.
  5. Reduce heat; cover and simmer 2 hours, stirring occasionally (or cook uncovered about 45 minutes).
  6. Stir in beans; heat.
  7. Serves 4 or 5 (about 1 cup each).
