INGREDIENTS
- 3lbschicken breasts(or your choice of chicken pieces)
- 1onion, coarsely chopped
- 1lbangel hair pasta
- 1cup freshsliced mushrooms(a little more at our house, can also use canned mushroom pieces in a pinch)
- 4tablespoonsbutteror margarine
- garlic powder
- salt and pepper
- 1/2lbVelveeta cheese, cubed
- 2 (10 1/2 ounce)canslow-fat cream of mushroom soup
- 3-4cups gratedsharp cheddar cheese
DIRECTIONS
- Boil chicken pieces in 2 quarts of water, along with the chopped onion.
- Cook until tender, and meat is easily torn or shredded.
- Remove chicken from the pot.
- Set aside to cool a bit.
- Leave the broth in the pot- DO NOT DISCARD THE BROTH.
- Tear or shred the chicken into bite-sized pieces.
- Saute the mushrooms in the butter in a small skillet.
- Season well with garlic powder, salt and pepper.
- In a sauce pan, melt the Velveeta with the cream of mushroom soup, combining until smooth.
- Strain the onion pieces from the reserved broth.
- Boil the angel hair pasta in this broth, according to manufacturer’s directions.Do not drain.
- Mix everything together - shredded chicken, mushrooms, pasta (in broth), and Velveeta mixture.
- Pour into large lasagna pan or other large casserole dish.
- Top with the grated cheddar cheese.
- Bake 30 min at 350.

INGREDIENTS
- 8ouncesmixed dried fruit
- 6fluid ounces cold strainedtea
- 8ouncesself rising flour
- 1dashsalt
- 4ouncesbrown sugar
- 1 beatenegg
DIRECTIONS
- Soak fruit and tea together overnight, covered.
- Drain the fruit, and reserve liquid.
- Mix drained fruit with the beaten egg into the flour Using a little of the liquid to make a firm dropping consistency.
- (This depends on the size of egg used, but about two tbsp. of liquid is used.) Grease a one pound loaf tin and line with greased paper.
- Tin should hold 1 1/2 pints.
- Bake gas mark 4 or 350 degrees F.
- Bake about one hour, or until firm.
- Leave in the pan about 6 minutes.
- Then turn out onto wire tray to cool.

INGREDIENTS

CRUST
- 1 1/2cupsgingersnap crumbs(12 - 14 cookies)
- 1/3cupbutter, melted
- 1/4cupsugar
-
FILLING
- 1 (500 g)containermascarpone cheese
- 1/2cupginger marmalade
- 1teaspoonground ginger
-
GARNISH
- 2mangoes or2 cupsraspberries(or you choose)
- 1tablespoon dicedcandied ginger (optional)
DIRECTIONS
- Mix crust ingredients together& press into a 9 inch flan ring with removeable base (or a pie dish).
- Bake for 10 minutes, then cool completely.
- Blend filling ingredients well& spoon into cold crust.
- Chill for at least 2 hours.
- Just before serving, peel& slice mangoes or wash raspberries (if using fresh).
- Top the flan with your fruit of choice& garnish with candied ginger, if desired.

INGREDIENTS
- 8ouncescream cheese
- 1 (1 1/4 ounce)packetranch dressing mix
- 1cupMiracle Whip
- 1dozentortillas
- 1 (6 ounce)jarjalapeno peppers, diced
DIRECTIONS
- mix cream cheese, ranch& miracle whip until smooth.
- add diced jalapeno peppers to mix (to taste).
- spread onto a tortilla shell.
- roll shell.
- repeat until out of mix.
- chill in refrigerator for about an hour.
- slice into bit sized pieces.

INGREDIENTS
- 1lbground beef
- 2mediumonions, chopped(about 1 cup)
- 1cup choppedgreen peppers
- 1 (28 ounce)cantomatoes
- 1 (8 ounce)cantomato sauce
- 2teaspoonschili powder
- 1teaspoonsalt
- 1/8teaspoonred cayenne pepper
- 1/8teaspoonpaprika
- 1 (15 1/2 ounce)cankidney beans, drained
DIRECTIONS
- Cook and stir ground beef, onion and green pepper in large skillet, until meat is brown and onion is tender.
- Drain off fat.
- Stir in remaining ingredients except kidney beans.
- Heat to boiling.
- Reduce heat; cover and simmer 2 hours, stirring occasionally (or cook uncovered about 45 minutes).
- Stir in beans; heat.
- Serves 4 or 5 (about 1 cup each).
