Garlic Walnuts Recipe

INGREDIENTS

  1. 2tablespoonsgarlic-infused olive oil
  2. 2teaspoonssalt
  3. 1teaspoonblack pepper
  4. 1 3/4cupswalnuts, halved

DIRECTIONS

  1. Pre-heat oven to 180C.
  2. Warm the oil slightly.
  3. Add salt and pepper.
  4. Toss in the nuts.
  5. Mix well.
  6. Immediately spread out the oiled walnuts onto a baking sheet lined onto a baking tray.
  7. Bake for 15-20 minutes, stirring and tossing the nuts frequently, until the nuts are light brown.
  8. Cool the nuts completely.
  9. Store in a tightly covered jar.

Fried Mozzarella Cheese Recipe

INGREDIENTS

  1. 300gmozzarella cheese
  2. 1/2cupall-purpose flour
  3. 3eggs, beaten
  4. salt and black pepper
  5. 1/4teaspoonthyme
  6. oil, to fry
  7. 3/4cupbreadcrumbs

DIRECTIONS

  1. Cut cheese into 2 1/2 inch length and 3/4 inch thickness.
  2. Keep aside.
  3. Beat eggs in a bowl, one at a time, until light and fluffy.
  4. Add flour and mix well until smooth.
  5. Mix in salt, black pepper and thyme.
  6. Heat oil in a wok.
  7. Dip the cheese cubes one by one in the batter.
  8. Then roll them one by one in breadcrumbs.
  9. Deep fry the cubes now in hot oil until golden brown.
  10. Remove onto clean paper kitchen napkins to drain out excess oil.
  11. Serve hot with ketchup or chutney.

Cucumber with cream cheese topping Recipe

INGREDIENTS

  1. 2 greencucumbers, cut into round slices(1 cm thick)
  2. 2tablespoonscream cheese
  3. 1/2tablespooncottage cheese, crumbled(paneer)
  4. 1teaspoonchives, cut into 3/4 inch pieces
  5. 1tablespoonsliced almonds, toasted
  6. 1tablespoonred bell peppers, finely chopped
  7. salt
  8. red chili powder

DIRECTIONS

  1. Blend the cream cheese and cottage cheese together in a blender.
  2. Add salt and red chilli powder to the blended mixture and mix well.
  3. Arrange the cucumber slices very neatly on a serving platter.
  4. Place 2 tsps.
  5. of the mixture on each slice.
  6. Garnish with 2 1/2 inch pieces of chives, almond flakes and red bell pepper.
  7. Serve immediately.

Damp Jamaican Gingerbread (English recipe) Recipe

INGREDIENTS

  1. 3cupsall-purpose flour, sifted
  2. 3/4cupbutter
  3. 1 1/2teaspoonsground ginger
  4. 2teaspoonsground cinnamon
  5. 1/8teaspoon gratednutmeg
  6. 1teaspoonbaking soda
  7. 4tablespoonsmilk
  8. 1/2cupdark molasses(Black treacle)
  9. 1/2cuplight corn syrup(Pure Cane Syrup or Golden syrup)
  10. 3/4cupdark brown sugar
  11. 2eggs, lightly beaten
  12. 1/2cupwater

DIRECTIONS

  1. Line a buttered 2lb loaf tin with greaseproof paper and paint the paper with a little melted butter.
  2. My tin measures 6½ x 3¾ inches at the base and is 3 3/8 inches high.
  3. Do not use a smaller tin as the mixture rises above the rim of the tin.
  4. Measure the molasses, syrup, sugar and butter into a saucepan with ½ cup of water, gently heat on a medium/low flame and stir gently until thoroughly melted and blended.
  5. Don’t let it boil!
  6. If it gets very hot, allow the mixture to cool slightly.
  7. Sift the flour, and spices into a large bowl.
  8. Mix the baking soda with the milk and set aside.
  9. Next add the syrup mixture to the flour and spices, a little at a time and beat vigorously with a wooden spoon until the mixture is smooth with no flour lumps.
  10. Beat in the eggs a little at a time.
  11. Add the baking soda and milk.
  12. Pour the mixture into the tin and bake in the center of oven at 325 F convection (300 F fan assisted) for 1 to 1¼ hours, until it’s well risen and firm to the touch.
  13. Allow to cool for 5 or 10 minutes before turning out onto a cooling rack.
  14. Once cool, put into a tin for 24 hours then enjoy.

Bread Balls with Cheese and Celery Filling Recipe

INGREDIENTS

  1. 8slicesbread, crusts trimmed
  2. 8piecescream cheese
  3. 1/4cupcelery, washed and finely chopped
  4. 2tablespoonsparsley, washed and chopped
  5. 2tablespoonschili sauce (optional)
  6. oil, to fry

DIRECTIONS

  1. Moisten a slice of bread with a little water.
  2. Press and flatten each slice between the palms of your hand.
  3. Now, place a portion of cheese, 1 tsp.
  4. of celery, a little parsley and a few drops of chilli sauce onto the bread slice.
  5. Close up the bread over the cheese to form a ball shape.
  6. Heat oil in a wok.
  7. Deep fry the bread balls in it.
  8. Drain on clean paper kitchen napkins.
  9. Serve hot with Heinz tomato ketchup or green chutney.
