INGREDIENTS
- 2tablespoonsgarlic-infused olive oil
- 2teaspoonssalt
- 1teaspoonblack pepper
- 1 3/4cupswalnuts, halved
DIRECTIONS
- Pre-heat oven to 180C.
- Warm the oil slightly.
- Add salt and pepper.
- Toss in the nuts.
- Mix well.
- Immediately spread out the oiled walnuts onto a baking sheet lined onto a baking tray.
- Bake for 15-20 minutes, stirring and tossing the nuts frequently, until the nuts are light brown.
- Cool the nuts completely.
- Store in a tightly covered jar.

INGREDIENTS
- 300gmozzarella cheese
- 1/2cupall-purpose flour
- 3eggs, beaten
- salt and black pepper
- 1/4teaspoonthyme
- oil, to fry
- 3/4cupbreadcrumbs
DIRECTIONS
- Cut cheese into 2 1/2 inch length and 3/4 inch thickness.
- Keep aside.
- Beat eggs in a bowl, one at a time, until light and fluffy.
- Add flour and mix well until smooth.
- Mix in salt, black pepper and thyme.
- Heat oil in a wok.
- Dip the cheese cubes one by one in the batter.
- Then roll them one by one in breadcrumbs.
- Deep fry the cubes now in hot oil until golden brown.
- Remove onto clean paper kitchen napkins to drain out excess oil.
- Serve hot with ketchup or chutney.

INGREDIENTS
- 2 greencucumbers, cut into round slices(1 cm thick)
- 2tablespoonscream cheese
- 1/2tablespooncottage cheese, crumbled(paneer)
- 1teaspoonchives, cut into 3/4 inch pieces
- 1tablespoonsliced almonds, toasted
- 1tablespoonred bell peppers, finely chopped
- salt
- red chili powder
DIRECTIONS
- Blend the cream cheese and cottage cheese together in a blender.
- Add salt and red chilli powder to the blended mixture and mix well.
- Arrange the cucumber slices very neatly on a serving platter.
- Place 2 tsps.
- of the mixture on each slice.
- Garnish with 2 1/2 inch pieces of chives, almond flakes and red bell pepper.
- Serve immediately.

INGREDIENTS
- 3cupsall-purpose flour, sifted
- 3/4cupbutter
- 1 1/2teaspoonsground ginger
- 2teaspoonsground cinnamon
- 1/8teaspoon gratednutmeg
- 1teaspoonbaking soda
- 4tablespoonsmilk
- 1/2cupdark molasses(Black treacle)
- 1/2cuplight corn syrup(Pure Cane Syrup or Golden syrup)
- 3/4cupdark brown sugar
- 2eggs, lightly beaten
- 1/2cupwater
DIRECTIONS
- Line a buttered 2lb loaf tin with greaseproof paper and paint the paper with a little melted butter.
- My tin measures 6½ x 3¾ inches at the base and is 3 3/8 inches high.
- Do not use a smaller tin as the mixture rises above the rim of the tin.
- Measure the molasses, syrup, sugar and butter into a saucepan with ½ cup of water, gently heat on a medium/low flame and stir gently until thoroughly melted and blended.
- Don’t let it boil!
- If it gets very hot, allow the mixture to cool slightly.
- Sift the flour, and spices into a large bowl.
- Mix the baking soda with the milk and set aside.
- Next add the syrup mixture to the flour and spices, a little at a time and beat vigorously with a wooden spoon until the mixture is smooth with no flour lumps.
- Beat in the eggs a little at a time.
- Add the baking soda and milk.
- Pour the mixture into the tin and bake in the center of oven at 325 F convection (300 F fan assisted) for 1 to 1¼ hours, until it’s well risen and firm to the touch.
- Allow to cool for 5 or 10 minutes before turning out onto a cooling rack.
- Once cool, put into a tin for 24 hours then enjoy.

INGREDIENTS
- 8slicesbread, crusts trimmed
- 8piecescream cheese
- 1/4cupcelery, washed and finely chopped
- 2tablespoonsparsley, washed and chopped
- 2tablespoonschili sauce (optional)
- oil, to fry
DIRECTIONS
- Moisten a slice of bread with a little water.
- Press and flatten each slice between the palms of your hand.
- Now, place a portion of cheese, 1 tsp.
- of celery, a little parsley and a few drops of chilli sauce onto the bread slice.
- Close up the bread over the cheese to form a ball shape.
- Heat oil in a wok.
- Deep fry the bread balls in it.
- Drain on clean paper kitchen napkins.
- Serve hot with Heinz tomato ketchup or green chutney.
