Penna alla Rocca Recipe

INGREDIENTS

  1. 1/2cupextra virgin olive oil
  2. 1mediumyellow onion, chopped
  3. 6clovesgarlic, chopped
  4. 1/2teaspoondried red peppers, crushed
  5. 24ounces fresh ripetomatoes, chopped
  6. 2teaspoonstomato paste
  7. 1lbpenne pasta(freshly cooked)
  8. 4ouncesparmesan cheese, grated
  9. 1/4cupfresh basil, chopped
  10. 1teaspoonsalt
  11. 2tablespoonsbalsamic vinegar

DIRECTIONS

  1. Heat oil in a large pot over medium high heat.
  2. Add chopped onions, chopped garlic and crushed red pepper and sauté until onions begin to soften, about 4 minutes.
  3. Add tomato and tomato paste and stir until tomatoes are just warmed through, about 2 minutes.
  4. Mix in balsamic vinegar; bring the sauce to a boil.
  5. Add cooked pasta, 1 cup of Parmesan cheese and fresh chopped basil.
  6. Add salt and toss.
  7. Transfer to another large bowl and serve with remaining Parmesan cheese.

Shrimp alla Aglio Recipe

INGREDIENTS

  1. 2tablespoonsolive oil
  2. 1mediumonion
  3. 1/2cupwhite wine
  4. 1 1/2lbs freshmedium shrimp, shelled
  5. 3clovesgarlic, crushed
  6. 3tablespoons finely choppedparsley
  7. 1/3teaspooncrushed red pepper flakes
  8. 4ouncesbutter
  9. 10ouncesangel hair pasta
  10. salt(as needed)
  11. pepper(as needed)

DIRECTIONS

  1. Cook pasta in rapidly boiling salted water.
  2. While pasta is boiling, heat the oil in a sauté pan, add onion, and sauté 2 minutes.
  3. Add garlic, sauté 1 minute.
  4. Add shrimp; cook 1-2 minutes.
  5. Add butter, wine, red pepper, salt, and pepper.
  6. When pasta is done, drain and place on plate and pour shrimp mixture over it.

El Chico Fried Ice Cream Recipe

INGREDIENTS

  1. 1quartvanilla ice cream
  2. 1cupcornflake crumbs
  3. 1/2cupsugar
  4. 1/2teaspooncinnamon

DIRECTIONS

  1. At least 5 hours in advance: Combine crumbs, sugar, and cinnamon in a shallow pan.
  2. Let ice cream soften slightly for 5 minutes.
  3. Make 6 balls of ice cream; roll in crumb mixture until well-coated, pressing coating into ice cream.
  4. Wrap in aluminum foil and freeze for 5 hours.
  5. Heat oil to 450°F.
  6. Unwrap each ball and fry in hot oil VERY BRIEFLY, about 2 seconds.
  7. Place in dessert dish; decorate with toppings, whipped cream, and a cherry.
  8. Serve immediately.

Blueberry Oat/Yogurt Muffins Recipe

INGREDIENTS

  1. 1cup dryoats
  2. 1cupflour
  3. 1teaspoonbaking powder
  4. 1/2teaspoonbaking soda
  5. 3/4cupbrown sugar
  6. 1egg
  7. 1/4cup meltedbutter
  8. 1 (6 ounce)containerlow-fat vanilla yogurt
  9. 1/2cuplow fat cottage cheese
  10. 1 1/2cupsblueberries

DIRECTIONS

  1. Mix oats with yogurt and cottage cheese.
  2. Mix flour, baking powder and soda.
  3. Add beaten egg, sugar and butter to oat mixture.
  4. Add flour and mix well.
  5. Fold in berries.
  6. Bake 400 degrees for 18 minutes.

Cranberry Barbecued Chicken Recipe

INGREDIENTS

  1. 3lbschicken pieces, cut-up
  2. 1/4teaspoonsalt
  3. 1/4teaspoonblack pepper
  4. 1cupwhole berry cranberry sauce
  5. 1/2cupketchup
  6. 1tablespoonbrown sugar
  7. 2tablespoonslemon juice
  8. 1tablespoonWorcestershire sauce
  9. 1tablespoonprepared mustard
  10. 1tablespoon red winevinegar

DIRECTIONS

  1. Preheat oven to 325F.
  2. Place chicken pieces on a foil covered baking sheet (one with sides will help keep the sauce from running off the pan).
  3. Season the chicken with salt and pepper.
  4. In a bowl, stir together remaining ingredients.
  5. Pour the sauce over the chicken.
  6. Bake for approximately 55-60 minutes, basting every 15 minutes or so, cooking until the juices run clear and chicken is done.
