INGREDIENTS
- 1/2cupextra virgin olive oil
- 1mediumyellow onion, chopped
- 6clovesgarlic, chopped
- 1/2teaspoondried red peppers, crushed
- 24ounces fresh ripetomatoes, chopped
- 2teaspoonstomato paste
- 1lbpenne pasta(freshly cooked)
- 4ouncesparmesan cheese, grated
- 1/4cupfresh basil, chopped
- 1teaspoonsalt
- 2tablespoonsbalsamic vinegar
DIRECTIONS
- Heat oil in a large pot over medium high heat.
- Add chopped onions, chopped garlic and crushed red pepper and sauté until onions begin to soften, about 4 minutes.
- Add tomato and tomato paste and stir until tomatoes are just warmed through, about 2 minutes.
- Mix in balsamic vinegar; bring the sauce to a boil.
- Add cooked pasta, 1 cup of Parmesan cheese and fresh chopped basil.
- Add salt and toss.
- Transfer to another large bowl and serve with remaining Parmesan cheese.

INGREDIENTS
- 2tablespoonsolive oil
- 1mediumonion
- 1/2cupwhite wine
- 1 1/2lbs freshmedium shrimp, shelled
- 3clovesgarlic, crushed
- 3tablespoons finely choppedparsley
- 1/3teaspooncrushed red pepper flakes
- 4ouncesbutter
- 10ouncesangel hair pasta
- salt(as needed)
- pepper(as needed)
DIRECTIONS
- Cook pasta in rapidly boiling salted water.
- While pasta is boiling, heat the oil in a sauté pan, add onion, and sauté 2 minutes.
- Add garlic, sauté 1 minute.
- Add shrimp; cook 1-2 minutes.
- Add butter, wine, red pepper, salt, and pepper.
- When pasta is done, drain and place on plate and pour shrimp mixture over it.

INGREDIENTS
- 1quartvanilla ice cream
- 1cupcornflake crumbs
- 1/2cupsugar
- 1/2teaspooncinnamon
DIRECTIONS
- At least 5 hours in advance: Combine crumbs, sugar, and cinnamon in a shallow pan.
- Let ice cream soften slightly for 5 minutes.
- Make 6 balls of ice cream; roll in crumb mixture until well-coated, pressing coating into ice cream.
- Wrap in aluminum foil and freeze for 5 hours.
- Heat oil to 450°F.
- Unwrap each ball and fry in hot oil VERY BRIEFLY, about 2 seconds.
- Place in dessert dish; decorate with toppings, whipped cream, and a cherry.
- Serve immediately.

INGREDIENTS
- 1cup dryoats
- 1cupflour
- 1teaspoonbaking powder
- 1/2teaspoonbaking soda
- 3/4cupbrown sugar
- 1egg
- 1/4cup meltedbutter
- 1 (6 ounce)containerlow-fat vanilla yogurt
- 1/2cuplow fat cottage cheese
- 1 1/2cupsblueberries
DIRECTIONS
- Mix oats with yogurt and cottage cheese.
- Mix flour, baking powder and soda.
- Add beaten egg, sugar and butter to oat mixture.
- Add flour and mix well.
- Fold in berries.
- Bake 400 degrees for 18 minutes.

INGREDIENTS
- 3lbschicken pieces, cut-up
- 1/4teaspoonsalt
- 1/4teaspoonblack pepper
- 1cupwhole berry cranberry sauce
- 1/2cupketchup
- 1tablespoonbrown sugar
- 2tablespoonslemon juice
- 1tablespoonWorcestershire sauce
- 1tablespoonprepared mustard
- 1tablespoon red winevinegar
DIRECTIONS
- Preheat oven to 325F.
- Place chicken pieces on a foil covered baking sheet (one with sides will help keep the sauce from running off the pan).
- Season the chicken with salt and pepper.
- In a bowl, stir together remaining ingredients.
- Pour the sauce over the chicken.
- Bake for approximately 55-60 minutes, basting every 15 minutes or so, cooking until the juices run clear and chicken is done.
