Hashbrown Casserole Recipe

INGREDIENTS

  1. 1baghash browns(the little cubed ones)
  2. 1/4cupbutter
  3. 1cupcheddar cheese, plus more for topping
  4. 1containerfat free sour cream
  5. 1cancream of mushroom soup
  6. 1cup finely dicedonions

DIRECTIONS

  1. Mix all ingredients together.
  2. Top with shredded cheese.
  3. Bake at 350 for 45 minutes Enjoy!

Cheesecake Muffins….YUMMY! Recipe

INGREDIENTS

  1. 1 (4 ounce)packagecream cheese
  2. 2tablespoonsicing sugar
  3. 1/3cupbutter, softened
  4. 2/3cupbrown sugar
  5. 1egg
  6. 1teaspoon gratedorange rind
  7. 2cupsflour
  8. 2teaspoonsbaking powder
  9. 1/4teaspoonsalt
  10. 2/3cupmilk
  11. 1/2cupjam(I use homemade but store bought will work just fine, Only use your favorite!)

DIRECTIONS

  1. Blend cream cheese and icing sugar on high speed in blender.
  2. Set aside.
  3. Cream butter and sugar in large bowl.
  4. Beat in egg and orange rind.
  5. Combine flour, baking powder and salt.
  6. Add flour mixture, alternating with milk to creamed mixture.
  7. Stir until blended.
  8. Half fill muffin pan with batter. Add 1 tbsp cheesecake mixture.
  9. Add 1 tsp jam (or a little bit more:) and top with remaining batter.
  10. Bake at 375 for 25-30 minutes until firm.

Clear-The-Cupboard Coconut, Oatmeal, Pecan Cookies Recipe

INGREDIENTS

  1. 1cupshortening
  2. 1cupgranulated sugar
  3. 1cupbrown sugar, firmly packed
  4. 2largeeggs
  5. 2cupsall-purpose flour
  6. 1cup uncookedoats
  7. 1teaspoonbaking soda
  8. 1teaspoonbaking powder
  9. 1teaspoonsalt
  10. 1cupflaked coconut
  11. 1cupcrisp rice cereal
  12. 1teaspoonvanilla extract
  13. 1cuppecans, chopped (optional)

DIRECTIONS

  1. Beat shortening at medium speed with electric mixer until fluffy; add sugars, beating well.
  2. Add eggs, beating until blended.
  3. Combine flour, oats, baking soda, baking powder, and salt; gradually add to sugar mixture, beating until blended.
  4. Stir in coconut, cereal, vanilla, and pecans.
  5. Drop by tablespoonfuls onto baking sheets.
  6. Bake in batches at 350°F for 10 minutes or until lightly golden.
  7. Remove to wire racks to cool.

Dijon Chicken Recipe

INGREDIENTS

  1. 6chicken breasts(either boneless or with bone but remove skin)
  2. salt and pepper
  3. 1/4cupDijon mustard
  4. 1/3cupplain yogurt
  5. 1/2cup finefresh breadcrumbs
  6. 1teaspoonthyme

DIRECTIONS

  1. Sprinkle chicken lightly with salt and pepper.
  2. Mix mustard into yogurt.
  3. In another bowl, mix bread crumbs, thyme, salt and pepper.
  4. Spread each piece of chicken with mustard mixture, then roll in bread crumbs.
  5. Place chicken on a lightly greased baking sheet.
  6. Bake at 350 45-50 minutes for bone-in chicken.
  7. 30-35 minutes for boneless chicken.
  8. Enjoy!

Buttermilk Biscuits Recipe

INGREDIENTS

  1. 1 3/4cupsflour
  2. 1teaspoonbaking powder
  3. 1teaspoonsugar
  4. 1/2teaspoonsalt
  5. 1/2teaspoonbaking soda
  6. 3tablespoonsbuttermilk baking mix
  7. 1/4cupshortening or lard(standard size icecream scoop!)
  8. 3/4cupmilk
  9. meltedbutter, for brushing on finished biscuits

DIRECTIONS

  1. Preheat oven to 450.
  2. Sift the dry ingredients together.
  3. Cut in the shortning or lard.
  4. Add milk and stir until just combined (mixture will be wet) let stand for 5 minutes.
  5. Dump mixture onto a well floured board, dust with flour and knead twice (again, mixture will be sticky).
  6. Gently pat the mixture into a half inch thick circle and cut with floured biscuit cutter.
  7. Place on non-stick baking sheet and bake for 12 to 14 minutes.
  8. Brush with melted butter and serve piping hot!
  9. Enjoy.
