INGREDIENTS
- 3-4largepotatoes(sliced thin)
- 1cup of gratedcheese(jack, cheddar, your choice, or more)
- 1canevaporated milk
- 1/2-1onion(diced)
- 3-4tablespoonsbutteror margarine
- salt(to taste)
- pepper(to taste)
DIRECTIONS
- Place sliced potatoes into ovenproof dish or pan.
- Add diced onions over top.
- Sprinkle grated cheese over top of potato/onion mixture.
- Pour the can of evaporated milk into the same dish.
- Place sliced butter or margarine scattered over top.
- Sprinkle salt and pepper over top.
- Place a baking sheet on the oven floor in case of overflow.
- Bake in oven at 350 degrees fahrenheit for aproximately an hour.
- Potatoes will be done when the top is light golden brown, the cheese is melted, and the potatoes are tender.

INGREDIENTS
- 1cupfresh orange juice
- 1/2cupdry sherry
- 6clovesgarlic, minced
- 1teaspoonsalt
- 1tablespoon dave gourmet insanityhot sauce(no substitutions unless it’s “beyond insanity”)
- 1lbboneless pork loin
DIRECTIONS
- Slice loin into six cutlets and pound to about half their thickness between waxed paper.
- Place cutlets in a glass dish and set aside.
- Mix together all other ingredients and pour over the top of pork cutlets.
- Cover the top of the glass dish with plastic wrap and refrigerate 6 hours or overnight.
- Prior to cooking, drain marinade and reserve.
- Broil cutlets for 10 minutes or until they are just cooked through.
- While they are cooking, place the reserved marinade in a saucepan and cook for about 5 minutes over medium heat.
- At serving time, pour the cooked sauce over the cutlets.
- The cutlets go nice with Mexican rice and refried beans.
- You can also serve more Insanity sauce if you dare!

INGREDIENTS
- 1 (8 ounce)bag of frozenbaby shrimp
- 1 (8 ounce)cancream of mushroom soup
- 1 (8 ounce)bagfettuccine pasta
- 1lime
- 1dashparmesan cheese (optional)
DIRECTIONS
- Boil water as directed on package of fettucine noodles, takes about 10 minutes or so In a medium saucepan, heat the entire can of cream of mushroom, takes about 5 minutes Run salad shrimp under cold water to thaw it out, you can serve cold or heat them if you like Once noodles are cooked, strain them, serve on plates, then each person serves cream of mushroom sauce to their liking, Top off with shrimp on top.
- Good with lime juice or parmesan cheese sprinkled on top.

INGREDIENTS
- 2 (15 ounce)cansranch style beans, do not drain
- 2 (15 ounce)cansroma tomatoes, crushed
- 2cupschicken stock
- 2teaspoonschili powder
- 1teaspooncumin, freshly ground
- 1/2teaspoon driedcrushed red pepper flakes
- 3tablespoonsoil
- 3lbsground chuckor cubedchuck
- 3tablespoonsoil
- 2onions, chopped
- 3jalapenos, seeded,vained,chopped
- 1/3lbbaby carrots, quartered
- 6stalkscelery, chopped
- 3cups cookedelbow macaroni
DIRECTIONS
- Place Beans, Tomatoes, Stock, Chili Powder, Cumin, and Red Chilies in crock pot set on high.
- Heat oil in large pan.
- Brown meat, drain on paper towel.
- Discard drippings.
- Wipe pan.
- Heat oil, saute Onions, Jalapenos, Carrots, and Celery ’til tender.
- Place Meat and Vegetables in crock pot.
- Reduce heat to low.
- Cook at least 5 hours, Overnight is better.
- Add Pasta, stir, heat, and serve.

INGREDIENTS
- 1/4cupbutter
- 1/4cupflour
- 2cupsmilk
- 1/2teaspoonsalt
- 4ouncescheddar cheese, shredded
- 1/2cup freshly gratedparmesan cheese
- 5mediumpotatoes, cooked peeled,and sliced
- 1/4cupfresh breadcrumbs
- 1tablespoon meltedbutter
DIRECTIONS
- In a saucepan, melt the 1/4 cup butter over low heat.
- Add the flour and whisk until smooth.
- Add the milk slowly, stirring until the mixture thickens.
- Remove from heat.
- Add the salt and the cheeses, stirring until they melt.
- Fold in the potatoes, stirring gently until coated.
- Place the mixture in a buttered 2-quart baking dish.
- Toss the melted tbsp of butter with the breadcrumbs and sprinkle evenly over the top.
- Bake, uncovered, at 350 degrees F for 30-35 minutes, until lightly browned and bubbly.
