Cheesy Pancakes Recipe

INGREDIENTS

  1. 1cupflour
  2. 1teaspoonbaking soda
  3. 1teaspoonsalt
  4. 4eggs
  5. 2/3cupcottage cheese
  6. 1 1/2cupssour cream

DIRECTIONS

  1. Place all ingredients in blender and mix at high speed.
  2. Let stand for 10 minutes.
  3. Fry on a buttered, moderately hot griddle until brown, turning once.
  4. Serve with warm pure maple syrup.

My P.E.I. Potato Pancakes Recipe

INGREDIENTS

  1. 3 gratedraw potatoes
  2. 1teaspoonhorseradish
  3. 2green onions, chopped
  4. 1egg
  5. 1pinchsalt and pepper
  6. 1/2cupbreadcrumbs
  7. 1/2cupsour cream

DIRECTIONS

  1. Combine all ingredients until blended.
  2. Spoon dollops onto hot griddle coated with olive oil and fry until golden brown on each side.

Plain Ole Pancake, eh! Recipe

INGREDIENTS

  1. 2tablespoonsoil
  2. 2eggs
  3. 1cupmilk
  4. 2cupsflour
  5. 4tablespoonsbaking powder
  6. 4tablespoonssugar
  7. 1cupsoda water

DIRECTIONS

  1. Mix oil, egg and milk in a large bowl.
  2. Stir together flour, baking powder and sugar.
  3. Add dry ingredients to liquid ingredients.
  4. Blend well.
  5. Add soda water.
  6. Drop 1/2 cupfuls of batter onto lightly oiled griddle.

Buttermilk Blueberry Pancakes Recipe

INGREDIENTS

  1. 3eggs, separated
  2. 2cupsbuttermilk
  3. 1 1/2cupsflour
  4. 1tablespoonsugar
  5. 1teaspoonbaking soda
  6. 1/4cupunsalted butter
  7. 1cupblueberries(fresh or frozen)

DIRECTIONS

  1. Beat eggs whites until stiff and set aside.
  2. In another bowl beat egg yolks with buttermilk.
  3. Combine flour with sugar and baking soda.
  4. Stir together well.
  5. Mix dry ingredients into egg yolk mixture until only just blended.
  6. Gently fold in beaten egg whites.
  7. Fold in blueberries.
  8. Melt butter in a skillet and stir melted butter into batter.
  9. Return skillet to medium high heat.
  10. Spoon batter in 1/4 cupfuls into pan.
  11. Serve with pure maple syrup and garnish with fresh fruit.

Mormors Danish Crepes Recipe

INGREDIENTS

  1. 1cupflour
  2. 1teaspoonsalt
  3. 1teaspoonbaking powder
  4. 2tablespoonsicing sugar
  5. 2eggs
  6. 1cupmilk
  7. 1/2teaspoonvanilla
  8. Garnish

  9. 1tablespoonlemon juice
  10. 2tablespoonsicing sugar

DIRECTIONS

  1. Sift all dry ingredients together and make a well in the centre.
  2. In a separate bowl, beat the eggs and add the remaining liquid ingredients.
  3. Pour the beaten liquid into the flour mixture.
  4. Don’t over mix and ignore the small lumps.
  5. Wipe a hot griddle lightly with oil.
  6. Spoon batter onto hot griddle, and let it spread until thin.
  7. When browned on bottom flip onto other side.
  8. Fill with fresh fruit, and roll into tubes.
  9. Sprinkle with fresh lemon juice, and coat with sieved icing sugar.
