INGREDIENTS
- 1cupflour
- 1teaspoonbaking soda
- 1teaspoonsalt
- 4eggs
- 2/3cupcottage cheese
- 1 1/2cupssour cream
DIRECTIONS
- Place all ingredients in blender and mix at high speed.
- Let stand for 10 minutes.
- Fry on a buttered, moderately hot griddle until brown, turning once.
- Serve with warm pure maple syrup.

INGREDIENTS
- 3 gratedraw potatoes
- 1teaspoonhorseradish
- 2green onions, chopped
- 1egg
- 1pinchsalt and pepper
- 1/2cupbreadcrumbs
- 1/2cupsour cream
DIRECTIONS
- Combine all ingredients until blended.
- Spoon dollops onto hot griddle coated with olive oil and fry until golden brown on each side.

INGREDIENTS
- 2tablespoonsoil
- 2eggs
- 1cupmilk
- 2cupsflour
- 4tablespoonsbaking powder
- 4tablespoonssugar
- 1cupsoda water
DIRECTIONS
- Mix oil, egg and milk in a large bowl.
- Stir together flour, baking powder and sugar.
- Add dry ingredients to liquid ingredients.
- Blend well.
- Add soda water.
- Drop 1/2 cupfuls of batter onto lightly oiled griddle.

INGREDIENTS
- 3eggs, separated
- 2cupsbuttermilk
- 1 1/2cupsflour
- 1tablespoonsugar
- 1teaspoonbaking soda
- 1/4cupunsalted butter
- 1cupblueberries(fresh or frozen)
DIRECTIONS
- Beat eggs whites until stiff and set aside.
- In another bowl beat egg yolks with buttermilk.
- Combine flour with sugar and baking soda.
- Stir together well.
- Mix dry ingredients into egg yolk mixture until only just blended.
- Gently fold in beaten egg whites.
- Fold in blueberries.
- Melt butter in a skillet and stir melted butter into batter.
- Return skillet to medium high heat.
- Spoon batter in 1/4 cupfuls into pan.
- Serve with pure maple syrup and garnish with fresh fruit.

INGREDIENTS
- 1cupflour
- 1teaspoonsalt
- 1teaspoonbaking powder
- 2tablespoonsicing sugar
- 2eggs
- 1cupmilk
- 1/2teaspoonvanilla

Garnish
- 1tablespoonlemon juice
- 2tablespoonsicing sugar
DIRECTIONS
- Sift all dry ingredients together and make a well in the centre.
- In a separate bowl, beat the eggs and add the remaining liquid ingredients.
- Pour the beaten liquid into the flour mixture.
- Don’t over mix and ignore the small lumps.
- Wipe a hot griddle lightly with oil.
- Spoon batter onto hot griddle, and let it spread until thin.
- When browned on bottom flip onto other side.
- Fill with fresh fruit, and roll into tubes.
- Sprinkle with fresh lemon juice, and coat with sieved icing sugar.
