Basic Muffins Recipe

INGREDIENTS

  1. 2cups siftedall-purpose flour
  2. 3teaspoonsbaking powder
  3. 1/2teaspoonsalt
  4. 2tablespoonssugar
  5. 1egg
  6. 1cupmilk
  7. 1teaspoonvanilla
  8. 4tablespoons meltedbutteror margarine

DIRECTIONS

  1. Melt the butter in a small saucepan or in the microwave on low heat.
  2. Sift, measure and then place the flour in a large bowl.
  3. Add the baking powder, salt and sugar.
  4. Beat the egg well in a small bowl.
  5. Add the milk, vanilla and melted butter and mix thoroughly.
  6. Put the above wet ingredients into the large bowl of dry ingredients.
  7. Stir just until the flour mixture is moistened.
  8. Fill greased muffin tins 1/2 to 2/3 full.
  9. Bake at 400 F or 200 C for 20-25 minutes.
  10. The muffins should be golden brown in colour and spring back when touched.

Pumpkin Muffins with Raisins Recipe

INGREDIENTS

  1. 1egg
  2. 1/2cupmilk
  3. 1/2cuppumpkin, cooked and mashed
  4. 1/4cupvegetable oil
  5. 1 1/2cupsflour
  6. 1/2cupsugar
  7. 2teaspoonsbaking powder
  8. 1/2teaspooncinnamon
  9. 1/2teaspoonnutmeg
  10. 1/2teaspoonsalt
  11. 1/2cupraisins

DIRECTIONS

  1. Stir together egg, milk, pumpkin, and oil.
  2. In another bowl mix dry ingredients.
  3. Add dry ingredients to pumpkin mixture.
  4. Fold in raisins.
  5. Put in muffin cups and bake at 350 degrees for 18- 20 minutes.

Pumpkin Muffins with Walnuts Recipe

INGREDIENTS

  1. 3cupssugar
  2. 1cupvegetable oil
  3. 4eggs
  4. 1 1/2teaspoonssalt
  5. 1teaspooncinnamon
  6. 2/3cupwater
  7. 2cupspumpkin, canned
  8. 3 1/2cupsflour
  9. 1/2teaspoonginger
  10. 1/2teaspooncloves
  11. 2teaspoonsbaking soda
  12. 1 1/2teaspoonsvanilla
  13. 2cupswalnuts, chopped

DIRECTIONS

  1. Mix sugar, oil, eggs, salt, cinnamon, water and pumpkin until well blended.
  2. Add Flour, ginger, cloves, baking soda, vanilla, and nuts.
  3. Mix well.
  4. Bake in muffin cups at 350 degrees for 15 to 20 minutes.

Christmas Cranberry Tarts Recipe

INGREDIENTS

  1. 1 1/2cupssugar
  2. 1/2teaspoonsalt
  3. 1/2teaspooncinnamon
  4. 1/2teaspoonnutmeg
  5. 1/4teaspoonallspice
  6. 1largeapple, peeled,cored and diced
  7. 3clementinesor tangerines
  8. 1cupcranberries
  9. 1/2cup choppedpecans
  10. 24 premademiniature tart shells(or your favourite recipe)

DIRECTIONS

  1. Preheat oven to 375F.
  2. Cut the unpeeled clementines in quarters and remove any seeds then chop in a food processor, peel and all.
  3. Mix sugar, salt, cinnamon, nutmeg, allspice, apple, clementines and any juice from chopping, cranberries and pecans in a saucepan.
  4. Cook over medium heat until the cranberries burst and the apple is tender.
  5. If mixture is too runny thicken with a mixture of cornstarch and water mixed to form a thin paste.
  6. Cool.
  7. Fill the tart shells with the mixture and bake for 10 to 15 minutes (until the edges are slightly brown).

Pumpkin Chocolate Chip Muffins Recipe

INGREDIENTS

  1. 1 2/3cupsall-purpose flour
  2. 1cupsugar
  3. 1teaspoonpumpkin pie spice
  4. 1teaspoonbaking soda
  5. 1/4teaspoonbaking powder
  6. 1/4teaspoonsalt
  7. 2eggs
  8. 1cup plaincanned pumpkin
  9. 1/2cup meltedbutter
  10. 6ounceschocolate chips
  11. 1/2cupwalnuts, chopped

DIRECTIONS

  1. Heat oven to 350 degrees.
  2. Grease muffin cups or line with muffin papers.
  3. Thoroughly mix flour, sugar, spice, baking soda, baking powder, and salt in a large bowl.
  4. Break eggs into another bowl.
  5. Add pumpkin and butter to eggs and whisk until well-blended.
  6. Stir in chocolate chips and walnuts.
  7. Pour over dry ingredients and fold in just until moistened.
  8. Scoop into tins and bake 20-25 minutes.
