INGREDIENTS
- 2cups siftedall-purpose flour
- 3teaspoonsbaking powder
- 1/2teaspoonsalt
- 2tablespoonssugar
- 1egg
- 1cupmilk
- 1teaspoonvanilla
- 4tablespoons meltedbutteror margarine
DIRECTIONS
- Melt the butter in a small saucepan or in the microwave on low heat.
- Sift, measure and then place the flour in a large bowl.
- Add the baking powder, salt and sugar.
- Beat the egg well in a small bowl.
- Add the milk, vanilla and melted butter and mix thoroughly.
- Put the above wet ingredients into the large bowl of dry ingredients.
- Stir just until the flour mixture is moistened.
- Fill greased muffin tins 1/2 to 2/3 full.
- Bake at 400 F or 200 C for 20-25 minutes.
- The muffins should be golden brown in colour and spring back when touched.

INGREDIENTS
- 1egg
- 1/2cupmilk
- 1/2cuppumpkin, cooked and mashed
- 1/4cupvegetable oil
- 1 1/2cupsflour
- 1/2cupsugar
- 2teaspoonsbaking powder
- 1/2teaspooncinnamon
- 1/2teaspoonnutmeg
- 1/2teaspoonsalt
- 1/2cupraisins
DIRECTIONS
- Stir together egg, milk, pumpkin, and oil.
- In another bowl mix dry ingredients.
- Add dry ingredients to pumpkin mixture.
- Fold in raisins.
- Put in muffin cups and bake at 350 degrees for 18- 20 minutes.

- 3cupssugar
- 1cupvegetable oil
- 4eggs
- 1 1/2teaspoonssalt
- 1teaspooncinnamon
- 2/3cupwater
- 2cupspumpkin, canned
- 3 1/2cupsflour
- 1/2teaspoonginger
- 1/2teaspooncloves
- 2teaspoonsbaking soda
- 1 1/2teaspoonsvanilla
- 2cupswalnuts, chopped
DIRECTIONS
- Mix sugar, oil, eggs, salt, cinnamon, water and pumpkin until well blended.
- Add Flour, ginger, cloves, baking soda, vanilla, and nuts.
- Mix well.
- Bake in muffin cups at 350 degrees for 15 to 20 minutes.

INGREDIENTS
- 1 1/2cupssugar
- 1/2teaspoonsalt
- 1/2teaspooncinnamon
- 1/2teaspoonnutmeg
- 1/4teaspoonallspice
- 1largeapple, peeled,cored and diced
- 3clementinesor tangerines
- 1cupcranberries
- 1/2cup choppedpecans
- 24 premademiniature tart shells(or your favourite recipe)
DIRECTIONS
- Preheat oven to 375F.
- Cut the unpeeled clementines in quarters and remove any seeds then chop in a food processor, peel and all.
- Mix sugar, salt, cinnamon, nutmeg, allspice, apple, clementines and any juice from chopping, cranberries and pecans in a saucepan.
- Cook over medium heat until the cranberries burst and the apple is tender.
- If mixture is too runny thicken with a mixture of cornstarch and water mixed to form a thin paste.
- Cool.
- Fill the tart shells with the mixture and bake for 10 to 15 minutes (until the edges are slightly brown).

INGREDIENTS
- 1 2/3cupsall-purpose flour
- 1cupsugar
- 1teaspoonpumpkin pie spice
- 1teaspoonbaking soda
- 1/4teaspoonbaking powder
- 1/4teaspoonsalt
- 2eggs
- 1cup plaincanned pumpkin
- 1/2cup meltedbutter
- 6ounceschocolate chips
- 1/2cupwalnuts, chopped
DIRECTIONS
- Heat oven to 350 degrees.
- Grease muffin cups or line with muffin papers.
- Thoroughly mix flour, sugar, spice, baking soda, baking powder, and salt in a large bowl.
- Break eggs into another bowl.
- Add pumpkin and butter to eggs and whisk until well-blended.
- Stir in chocolate chips and walnuts.
- Pour over dry ingredients and fold in just until moistened.
- Scoop into tins and bake 20-25 minutes.
