Triple Chocolate Mud Bars Recipe

INGREDIENTS

  1. 1/2cupbutter, softened
  2. 1cupgranulated sugar
  3. 2largeeggs, separated
  4. 1 1/2cupsflour
  5. 4tablespoonscocoa
  6. 1teaspoonbaking powder
  7. 1/2teaspoonsalt
  8. 1cup choppedwalnuts
  9. 1/2cupmilk chocolate chips
  10. 1/2cupsemi-sweet chocolate chips
  11. 1/2cupbutterscotch chips
  12. 1cupminiature marshmallows
  13. 1cup firmly packedbrown sugar

DIRECTIONS

  1. Preheat oven to 350 F.
  2. Grease a 13×9-inch baking pan.
  3. Beat butter and sugar at medium speed with an electric mixer until light and fluffy then add in egg yolks, one at a time, until blended.
  4. Mix flour, cocoa, baking powder, and salt until well combined then fold into the butter mixture.
  5. Stir in milk chocolate chips.
  6. Press mixture firmly and evenly into the pan.
  7. Sprinkle with nuts, semi-sweet chocolate chips, butterscotch chips and marshmallows.
  8. Whip egg whites until stiff peaks form then fold in the brown sugar.
  9. Spread egg whites over the mixture in pan.
  10. Bake for 35 minutes or until a crust is formed.
  11. Cut into 36 bars.

Ranch Style Brunch Eggs Recipe

INGREDIENTS

  1. 8slicesbacon(or more)
  2. 2cupsfrozen hash brown potatoes
  3. 1 1/2cups shredded oldcheddar cheese(can use more or less cheese)
  4. 6eggs, beaten
  5. 1cupmilkor half-and-half
  6. 2 thinly slicedgreen onions
  7. salt and black pepper

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Butter 4 individual 1-cup shallow baking dishes or one medium-size baking dish.
  3. Cook bacon in a large frypan, until crisp; drain.
  4. Reserve about 3-4 tablespoons bacon drippings.
  5. Fry hash brown potatoes in the bacon drippings until browned, about 10 minutes.
  6. Divide potatoes evenly in the bottom of the prepared baking dishes or dish.
  7. Sprinkle with cheese, then with bacon.
  8. In a bowl, beat together eggs, milk and green onions; pour evenly into dishes.
  9. Bake uncovered for about 20-25 minutes, or until set.
  10. Delicious!

Baked Potatoes and Cheese Recipe

INGREDIENTS

  1. 6large bakedpotatoes
  2. 1/3cup hotmilk
  3. 2teaspoonssalt
  4. 1/4lb gratedcheese(I just dump some in from a pre-grated bag)
  5. 1/8teaspoonpaprika

DIRECTIONS

  1. Cut potatoes in half lengthwise and scoop out the center.
  2. Mash thoroughly.
  3. Add cheese and hot milk and beat with egg beater until smooth.
  4. Mix with the potatoes and seasoning;whip until light and creamy.
  5. Refill the potatoe shells and bake in a hot oven for 10 minutes about 375-400 degrees.

Ranch Potatoes Recipe

INGREDIENTS

  1. 8-10mediumpotatoes, peeled and cut into 1/2 inch cubes
  2. 1cancream of mushroom soup, undiluted
  3. 1 1/4cupsmilk
  4. 1enveloperanch dressing mix
  5. 1 1/2cups shreddedcheddar cheese, divided
  6. salt and pepper
  7. 6slicesbacon, cooked and crumbled

DIRECTIONS

  1. Add the potatoes to a saucepan.
  2. Add water to cover.
  3. Bring to a boil; cook about 10-12 minutes or until potatoes are almost tender; drain.
  4. Place drained potatoes into a greased 13×9 inch baking dish.
  5. In a bowl, mix together the soup, milk, salad dressing mix, 1 cup cheese, salt and pepper to taste; pour over potatoes.
  6. Sprinkle crumbled bacon and the remaining cheese over the top.
  7. Bake, uncovered, at 350° for 25-30 minutes or until potatoes are tender.

Pumpkin Black Bean Turkey Chili Recipe

INGREDIENTS

  1. 2tablespoonsvegetable oil
  2. 1cup choppedonions
  3. 1cup choppedyellow bell peppers
  4. 3clovesgarlic, minced
  5. 2teaspoonsdried oregano
  6. 1 1/2teaspoonsground cumin
  7. 1-2tablespoonchili powder
  8. 2 (15 ounce)cansblack beans, rinsed and drained
  9. 3cups choppedcooked turkey
  10. 1 (16 ounce)canpumpkin
  11. 1 (14 1/2 ounce)candiced tomatoes, undrained
  12. 3cupschicken broth
  13. 1/2cupcream sherry
  14. salt and pepper

DIRECTIONS

  1. In a large dutch oven, heat oil over medium heat.
  2. Add the onion, yellow bell pepper, and garlic; stir and cook for about 8 minutes or until soft.
  3. Add in oregano, cumin, and chili powder.
  4. Cook and stir 1 minute.
  5. Add in black beans, turkey, pumpkin, tomatoes with liquid, broth, sherry, and salt/pepper to taste.
  6. Bring mixture to a boil; stir occasionally.
  7. Lower heat, cover and simmer for 45 minutes.
  8. Serve hot.
