INGREDIENTS

Cake
- 4ouncesbutter
- 1egg
- 1teaspoonbaking powder
- 1 1/2cupsflour
- 4ouncessugar

Topping
- 4tablespoonssugar
- 4tablespoonsflour
- 1teaspooncinnamon
- 2tablespoonsbutter
- 1teaspoonbaking powder
- 1tablespooncocoa
DIRECTIONS
- Turn oven on to 350 F.
- Cake: Cream the butter and sugar, add egg and then the dry ingredients which have been sifted together first.
- Press into a non-stick flat tin.
- Topping: Cream the butter and sugar and then add the sifted dry ingredients.
- Spread over the cake mixture.
- Bake until cooked which usually takes 20-30 minutes.

INGREDIENTS
- 1mediumbanana, sliced
- 2-3tablespoonscreamy peanut butter
- 1cup2% low-fat milk
- 2scoopslow-fat vanilla ice cream
DIRECTIONS
- In blender, place banana, peanut butter and milk.
- Cover and blend well.
- Add ice cream, cover and blend until smooth.

INGREDIENTS
- 2teaspoonsDijon mustard
- 1/4cupchampagne vinegar
- 3/4cupolive oil
- 1/2teaspoonsalt
- fresh ground black pepper
DIRECTIONS
- Place all ingredients in a small glass jar and shake until oil is emulsified.
- May be kept in refrigerator up to 1 month.
- Homemade champagne vinegar can be done by storing leftover champagne in an open jar, at room temperature for a few weeks.
- It will turn into vinegar.

INGREDIENTS
- 2teaspoonsbutteror margarine
- 1teaspoonunbleached flour
- 1/4cupmilk
- 1/4cupchickens, cooked,boned and shredded
- 1/4largepotato, boiled or baked and cubed
- 1tablespoon gratedwhite cheddar cheeseor mild cheddar cheese (optional)
- vegetables, of your choice (optional)
- salt (optional)
DIRECTIONS
- Grill or bake chicken, remove bones and shred.
- Bake or boil potato and chop into small cubes or mash.
- Melt butter in a saucepan.
- Add milk,flour, and cheese and make a sauce.
- Add chicken and potato to it.
- Add remaining ingredients.

INGREDIENTS
- 1/2cupwalnuts
- 8-10button mushrooms
- 2shallots, chopped
- 1clovegarlic, minced
- 2cupscarrotsor green beansor zucchinior broccolior cauliflower or squash(precooked)or red peppersor green peppers
- 1teaspoondried basil
- 1teaspoondried marjoram
- sea salt
- black pepper, to taste
- 2tablespoonsolive oil
- 1tablespoonlemon juice
DIRECTIONS
- In a blend, mix all ingredients except olive oil and lemon juice to the consistency of coarse bread crumbs.
- Heat the olive oil in a skillet.
- Saute the blended ingredients in the oil for 6-8 minutes.
- Add the lemon juice.
- Serve and enjoy.
