INGREDIENTS
- 1 1/4cupsflour
- 1/2teaspoonsalt
- 2eggs, beaten
- 1/2cupmilk
- 3/4cupmilk
- softenedbutter
DIRECTIONS
- Mix flour and salt in a medium bowl and make a well in the center.
- Pour eggs and 1/2 cup milk into the well.
- Gradually work in flour, whisking until smooth.
- Whisk in 3/4 cup milk.
- Cover bowl with plastic wrap and refridgerate for 30 minutes.
- Heat oven to 450 degrees.
- Preheat muffin or pop-over pan for 10 minutes.
- When hot, brush cups with softened butter.
- Fill cups 2/3 full with pop-over mixture.
- Bake at 450 degrees for 15 minutes.
- Reduce heat to 350 degrees and bake 10-15 minutes longer.
- DO NOT open the oven door until finished baking!
- Pop-over will deflate if you do.

INGREDIENTS
- 1/2lb slicedbacon(cut into 1″ pieces)
- 2 (14 ounce)cansbaked beans
- 1largeonion(sliced thin)
- 1/4cupmolasses(available at most food stores)
- 2 (14 ounce)canstomatoes(crushed)
- 1 (14 ounce)cantomato sauce
- 1teaspoondry mustard
- 1teaspoonsalt
- 3cloves mincedgarlic
- 2-3pieces smokedpork neck bones (optional)
DIRECTIONS
- Fry bacon and remove from pan Briefly saute onion and garlic in bacon grease Add remaining ingredients in a dutch oven or casserole dish Stir in bacon, onion, garlic and bacon grease Add smoked pork (optional) Bake covered in oven at 300 degrees for 2-3 hrs until thick and bubbly.

INGREDIENTS

Bars
- 1cupsugar
- 1/2cupmargarine, softened
- 4eggs, beaten
- 1teaspoonsalt
- 1teaspoonvanilla
- 1cupflour
- 1 (16 ounce)can hersheychocolate syrup

Filling
- 2cupspowdered sugar
- 1/2cupmargarine, softened
- 1tablespoonmilk
- 2teaspoonspeppermint extract
- green food coloring

Glaze
- 1cupsemi-sweet chocolate chips
- 6tablespoonsmargarine
DIRECTIONS
- Mix sugar through chocolate syrup for bars and put into a greased 9×13″ pan.
- Bake at 350 degrees for 30 minutes.
- (Don’t use a glass pan).
- Cool.
- Mix Filling ingredients (powdered sugar through green food coloring) and spread over cooled bars.
- Melt chocolate chips and 6 Tbsp margarine over stove top and smooth over the filling.
- Chill until firm.

INGREDIENTS
- 3cupsrotini pasta, cooked
- 2-3tablespoonsolive oil
- 1lbItalian sausage(mix and match hot and mild to taste)
- 1cupsharp cheddar cheese, grated
- 1/4cupbutter, at room temperature
- 1egg, lightly beaten
- 2lbslow fat cottage cheeseor ricotta cheese
- 1egg, lightly beaten
- 1teaspoonsalt
- 1/2teaspoonfresh ground black pepper
- 2cupsspaghetti sauce
- 1lbmozzarella cheese, grated
- 1/2cupparmesan cheese or romano cheese, grated
DIRECTIONS
- Preheat oven to 350 f.
- Cook pasta.
- Brown Sausage in Olive Oil.
- Drain on paper towel.
- When pasta is done, drain.
- don’t rinse.
- While Pasta is still hot stir in Cheddar, Butter, and 1 Egg.
- Spread 1/2 of the Pasta mix in a large greased casserole dish.
- Pour 1 cup of Spaghetti Sauce evenly over pasta mix.
- Combine Cottage Cheese, 1 Egg, Salt, and Pepper.
- Spread mixture evenly over casserole.
- Spread Sausage evenly over cottage cheese mix.
- Spread remaining Pasta mix over Sausage.
- Pour 1 cup Spaghetti Sauce over Pasta mix.
- Sprinkle Mozzarella on top.
- Bake 50 min.
- Remove from oven.
- Sprinkle Parmesan on top, return to oven.
- Bake 10 min. more
- Remove, cover with loose foil tent, let rest 10 min.
- Serve.
- NOTE- If prepared the night before add 25 min, to the cooking time.
- NOTE- Be sure the dish can stand the sudden tempertaure change.

INGREDIENTS

Cake
- 3/4cupwhite sugar
- 1/4cupdark brown sugar
- 3/4cupvegetable oil
- 2largeeggs
- 1 1/2cupsflour
- 1 1/2teaspoonsbaking soda
- 1 1/2teaspoonsground cinnamon
- 1/4teaspoon gratednutmeg
- 1/8teaspoonground cloves
- 1/4teaspoonsalt
- 1lbtart apples, peeled,cored,cut into 1 inch chunks(3 large Granny Smiths work well)
- 1/2cup choppedwalnutsor pecans
- 1tablespoonvanilla extract

Glaze
- 1/4cupunsalted butter
- 1/4cupwhite sugar
- 1/4cupdark brown sugar
- 1/4cupheavy cream
DIRECTIONS
- Heat oven to 350 degrees.
- Butter a 9″ spring form pan.
- Place all cake ingredients into bowl of mixer.
- Beat on lowest speed until apples are in 1/4″ chunks and their juice has thinned the batter slightly.
- This takes about 3 minutes.
- Pour batter into prepared pan and smooth the top.
- Bake in the middle of the oven until a toothpick inserted in the centre comes out clean- about 50 minutes.
- Let the cake cool slightly.
- Unmold and poke the top of the cake all over with a meat fork.
- Pour glaze over the warm cake, letting the excess run down the sides.
- Cake can be decorated with more chopped walnuts or pecans.
- To Prepare Glaze: Put all ingredients into small saucepan and bring to a simmer, stirring, over low heat.
- Simmer until the sugar dissolves, about 1 minute.
- Let cool until slightly thickened- about 7- 10 minutes.
