Quick and Easy Popovers Recipe

INGREDIENTS

  1. 1 1/4cupsflour
  2. 1/2teaspoonsalt
  3. 2eggs, beaten
  4. 1/2cupmilk
  5. 3/4cupmilk
  6. softenedbutter

DIRECTIONS

  1. Mix flour and salt in a medium bowl and make a well in the center.
  2. Pour eggs and 1/2 cup milk into the well.
  3. Gradually work in flour, whisking until smooth.
  4. Whisk in 3/4 cup milk.
  5. Cover bowl with plastic wrap and refridgerate for 30 minutes.
  6. Heat oven to 450 degrees.
  7. Preheat muffin or pop-over pan for 10 minutes.
  8. When hot, brush cups with softened butter.
  9. Fill cups 2/3 full with pop-over mixture.
  10. Bake at 450 degrees for 15 minutes.
  11. Reduce heat to 350 degrees and bake 10-15 minutes longer.
  12. DO NOT open the oven door until finished baking!
  13. Pop-over will deflate if you do.

Baked Beans Recipe

INGREDIENTS

  1. 1/2lb slicedbacon(cut into 1″ pieces)
  2. 2 (14 ounce)cansbaked beans
  3. 1largeonion(sliced thin)
  4. 1/4cupmolasses(available at most food stores)
  5. 2 (14 ounce)canstomatoes(crushed)
  6. 1 (14 ounce)cantomato sauce
  7. 1teaspoondry mustard
  8. 1teaspoonsalt
  9. 3cloves mincedgarlic
  10. 2-3pieces smokedpork neck bones (optional)

DIRECTIONS

  1. Fry bacon and remove from pan Briefly saute onion and garlic in bacon grease Add remaining ingredients in a dutch oven or casserole dish Stir in bacon, onion, garlic and bacon grease Add smoked pork (optional) Bake covered in oven at 300 degrees for 2-3 hrs until thick and bubbly.

Chocolate Mint Bars Recipe

INGREDIENTS

  1. Bars

  2. 1cupsugar
  3. 1/2cupmargarine, softened
  4. 4eggs, beaten
  5. 1teaspoonsalt
  6. 1teaspoonvanilla
  7. 1cupflour
  8. 1 (16 ounce)can hersheychocolate syrup
  9. Filling

  10. 2cupspowdered sugar
  11. 1/2cupmargarine, softened
  12. 1tablespoonmilk
  13. 2teaspoonspeppermint extract
  14. green food coloring
  15. Glaze

  16. 1cupsemi-sweet chocolate chips
  17. 6tablespoonsmargarine

DIRECTIONS

  1. Mix sugar through chocolate syrup for bars and put into a greased 9×13″ pan.
  2. Bake at 350 degrees for 30 minutes.
  3. (Don’t use a glass pan).
  4. Cool.
  5. Mix Filling ingredients (powdered sugar through green food coloring) and spread over cooled bars.
  6. Melt chocolate chips and 6 Tbsp margarine over stove top and smooth over the filling.
  7. Chill until firm.

Rotini Casserole Recipe

INGREDIENTS

  1. 3cupsrotini pasta, cooked
  2. 2-3tablespoonsolive oil
  3. 1lbItalian sausage(mix and match hot and mild to taste)
  4. 1cupsharp cheddar cheese, grated
  5. 1/4cupbutter, at room temperature
  6. 1egg, lightly beaten
  7. 2lbslow fat cottage cheeseor ricotta cheese
  8. 1egg, lightly beaten
  9. 1teaspoonsalt
  10. 1/2teaspoonfresh ground black pepper
  11. 2cupsspaghetti sauce
  12. 1lbmozzarella cheese, grated
  13. 1/2cupparmesan cheese or romano cheese, grated

DIRECTIONS

  1. Preheat oven to 350 f.
  2. Cook pasta.
  3. Brown Sausage in Olive Oil.
  4. Drain on paper towel.
  5. When pasta is done, drain.
  6. don’t rinse.
  7. While Pasta is still hot stir in Cheddar, Butter, and 1 Egg.
  8. Spread 1/2 of the Pasta mix in a large greased casserole dish.
  9. Pour 1 cup of Spaghetti Sauce evenly over pasta mix.
  10. Combine Cottage Cheese, 1 Egg, Salt, and Pepper.
  11. Spread mixture evenly over casserole.
  12. Spread Sausage evenly over cottage cheese mix.
  13. Spread remaining Pasta mix over Sausage.
  14. Pour 1 cup Spaghetti Sauce over Pasta mix.
  15. Sprinkle Mozzarella on top.
  16. Bake 50 min.
  17. Remove from oven.
  18. Sprinkle Parmesan on top, return to oven.
  19. Bake 10 min. more
  20. Remove, cover with loose foil tent, let rest 10 min.
  21. Serve.
  22. NOTE- If prepared the night before add 25 min, to the cooking time.
  23. NOTE- Be sure the dish can stand the sudden tempertaure change.

Apple Spice Cake with Brown Sugar Glaze Recipe

INGREDIENTS

  1. Cake

  2. 3/4cupwhite sugar
  3. 1/4cupdark brown sugar
  4. 3/4cupvegetable oil
  5. 2largeeggs
  6. 1 1/2cupsflour
  7. 1 1/2teaspoonsbaking soda
  8. 1 1/2teaspoonsground cinnamon
  9. 1/4teaspoon gratednutmeg
  10. 1/8teaspoonground cloves
  11. 1/4teaspoonsalt
  12. 1lbtart apples, peeled,cored,cut into 1 inch chunks(3 large Granny Smiths work well)
  13. 1/2cup choppedwalnutsor pecans
  14. 1tablespoonvanilla extract
  15. Glaze

  16. 1/4cupunsalted butter
  17. 1/4cupwhite sugar
  18. 1/4cupdark brown sugar
  19. 1/4cupheavy cream

DIRECTIONS

  1. Heat oven to 350 degrees.
  2. Butter a 9″ spring form pan.
  3. Place all cake ingredients into bowl of mixer.
  4. Beat on lowest speed until apples are in 1/4″ chunks and their juice has thinned the batter slightly.
  5. This takes about 3 minutes.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake in the middle of the oven until a toothpick inserted in the centre comes out clean- about 50 minutes.
  8. Let the cake cool slightly.
  9. Unmold and poke the top of the cake all over with a meat fork.
  10. Pour glaze over the warm cake, letting the excess run down the sides.
  11. Cake can be decorated with more chopped walnuts or pecans.
  12. To Prepare Glaze: Put all ingredients into small saucepan and bring to a simmer, stirring, over low heat.
  13. Simmer until the sugar dissolves, about 1 minute.
  14. Let cool until slightly thickened- about 7- 10 minutes.
