A Student’s Coffee Cake Recipe

INGREDIENTS

  1. 2cupsBisquick baking mix
  2. 1egg, beaten
  3. 2/3cupwater
  4. 1/3cupsugar
  5. 2tablespoonsbutteror margarine
  6. 2tablespoonssugar
  7. 1teaspooncinnamon

DIRECTIONS

  1. For this recipe, you will need a cup, fork, 1-cup measure, mixing spoon, Tablespoon, teaspoon, 9-inch glass pie plate, and a knife.
  2. First you will want to crack your egg into a cup and beat it.
  3. In your pie plate, put 2 cups of bisquick, the egg, water, and 1/3cup sugar; stir until mixture is smooth.
  4. With a knife, cut your butter or margarine into small pieces and drop it on to the top of the batter.
  5. Sprinkle the top with 2 Tablespoons sugar and 1 teaspoon cinnamon.
  6. Cook, uncovered in your microwave for 10 minutes.
  7. Allow cake to cool for 10 minutes and serve.

Mini Sausage & Cheese Breakfast Biscuit Sandwiches Recipe

INGREDIENTS

  1. 1canrefrigerated biscuits
  2. 8-10ouncescheddar cheese
  3. 1roll of pork sausage or1 package frozen of small roundsausage patty
  4. 1tablespoonoil
  5. butteror margarine
  6. scrambledeggsor baconor ham (optional)

DIRECTIONS

  1. Bake biscuits according to package directions.
  2. Meanwhile, if using the pork sausage roll, cut into round slices/form into small patties.
  3. In a large skillet, cook patties in oil.
  4. Slice cheese into 1/2 inch square slices.
  5. Butter biscuit halves and make biscuit sandwiches; serve.

Orange Crusted Fish Recipe

INGREDIENTS

  1. 3slicesbread
  2. 1/4cupfresh parsley, chopped
  3. 1orange, grated rind only
  4. 1red chili, seeded and finely chopped
  5. 4 bonelesswhite fish fillets
  6. cooking spray

DIRECTIONS

  1. Preheat oven to 200 degree C.
  2. Process the bread in a blender or food processor to form fine crumbs.
  3. Transfer to a bowl and stir in the parsley, orange rind and chilli.
  4. Season with salt and pepper.
  5. Spray the fish with oil.
  6. Place into a baking dish and press the crumb mix onto the fish.
  7. Spray with oil again.
  8. Cook for 10 to 15 minutes or until fish is cooked through.

Claypot Chicken Rice - without the claypot! Recipe

INGREDIENTS

  1. 1cuplong grain rice(uncooked)
  2. 1cupwater
  3. 2tablespoonsgarlic, chopped
  4. 2tablespoonsonions, chopped
  5. 2tablespoonsoyster sauce
  6. 1tablespoondark soy sauce(may omit if unavailable)
  7. 4piecesboneless skinless chicken(cut to bite sized pieces)
  8. 10slicesChinese sausage(may substitute with other sausages in a pinch)
  9. 1pinchwhite pepper
  10. garnishes

  11. 2tablespoons deep-friedshallots (optional)
  12. 2tablespoonsscallions, chopped (optional)

DIRECTIONS

  1. Wash the rice, then stir in the rest of the ingredients except for the garnishes.
  2. Cook the mixture in a rice-cooker as you normally would for rice.
  3. Garnish the cooked rice with the shallots and spring onion.
  4. If you like, drizzle a little more dark soy sauce over and serve.

Risotto cakes Recipe

INGREDIENTS

  1. 1tablespoonbutter
  2. 1tablespoonolive oil
  3. 1leek, sliced
  4. 2clovesgarlic, minced
  5. 1 1/4cupsarborio rice
  6. 1/2cupwhite wine(optional, can just replace with stock or water)
  7. 2 1/2cupschicken stock
  8. 2cupsbaby spinach leaves
  9. 2zucchini, halved lengthways and sliced
  10. 1cupbasil
  11. 2eggs, lightly beaten
  12. 180gmozzarella cheese, cut into cubes

DIRECTIONS

  1. Heat butter and oil over medium-low heat.
  2. Add the leek and garlic and cook until soft.
  3. Add the rice and cook, stirring, for 1 minute.
  4. Increase heat to high.
  5. Add the wine and cook 2-3 minutes.
  6. Add stock, bring to the boil.
  7. Reduce heat to low.
  8. Cover and cook for 20 minutes or until stock is absorbed.
  9. Add the spinach, zucchini and basil.
  10. Stir to combine and set mixture aside to cool completely (preferably in the fridge).
  11. Once cool stir through eggs and season with salt and pepper.
  12. Preheat oven to 220 degree C.
  13. Grease a 6 x 3/4 cup Texas muffin pan.
  14. Half fill the holes with the mixture and place a cube of cheese on each.
  15. Then cover with more rice mixture.
  16. Bake for 30 minutes.
  17. Serve with a salad.
