INGREDIENTS
- 2teaspoonsactive dry yeast
- 1tablespoonolive oil
- 2tablespoonssugar
- 1teaspoonhoney
- 4cupswhole wheat flour
- 1teaspoonsalt
- 1 3/4cupswater
DIRECTIONS
- mix the yeast 1/2 cup of flour, sugar, honey, olive oil and 1/2 cup of warm water to a bowl, stir and let sit for two hours.
- Add the rest of the ingredients and and stir until the dough is not sticky, take out of the bowl and knead the dough for ten to fifteen minutes, until it will absorb no more flour.
- let the dough rise for two hours, cut into three balls and let rise again for twenty minutes.
- roll the dough into desired shape, top and bake at 425 for ten minutes.

INGREDIENTS
- 1 1/2cupsunbleached all-purpose flour
- 1/2cupwhole wheat flour
- 2tablespoonssugar
- 1teaspoonbaking soda
- 1teaspoonground cinnamon
- 1teaspoonsalt
- 2cups peeled cored and dicedapples
- 3/4cupraisins
- 2cupsbuttermilk
- 3largeeggs, separated
- 2tablespoonsunsalted butter, melted
- 1teaspoonvanilla extract

apple Cider Syrup
- 1/2cupsugar
- 2tablespoonscornstarch
- 2cupsapple cider
- 1cinnamon stick
- ground nutmeg
DIRECTIONS
- To make apple Cider Syrup: add the 1/2 cup sugar and cornstarch to a saucepan; stir to blend.
- Gradually add and stir in the apple cider.
- Add in the cinnamon stick; bring to a boil, stirring frequently.
- Lower heat, cover, and cook for 10 minutes.
- Remove from the heat; sprinkle a litte ground nutmeg or fresh grated nutmeg over the top.
- Take out the cinnamon stick before serving.
- To make the pancakes: Sift the flours, sugar, baking soda, cinnamon, and salt into a big mixing bowl.
- Add in the apples and raisins; toss to coat.
- In another bowl, add the buttermilk, egg yolks, butter and vanilla; stir to blend.
- In yet another bowl, beat the egg whites until soft peaks form.
- Combine the buttermilk mixture with the dry ingredients; stir just until the dry ingredients are moistened.
- Add the egg whites and fold in gently until just blended.
- Heat a large skillet over medium heat.
- Spray with non-stick cooking spray or brush with a light film of vegetable oil.
- Pour 1/4 cup batter into skillet; change heat to medium-low.
- Cook until the tops are covered with small bubbles and bottoms are golden brown.
- Flip pancake (carefully) and cook until lightly browned on the other side.
- Repeat with remaining batter.

INGREDIENTS
- 1mediumonion, chopped
- 2clovesgarlic, minced
- 1bell pepper, seeded and chopped
- 2tomatoes, chopped(or 1 can chopped tomatoes)
- 1/4teaspoonblack pepper
- 2cupscanned black beans(not rinsed)
- cooking spray
DIRECTIONS
- Spray a heavy pan with cooking spray.
- Cook the onion, garlic, and pepper for about 3 minutes or until starting to get soft.
- Add the tomatoes and pepper.
- Cook and stir for 5 minutes.
- Add the beans, cover, and simmer for 20 minutes.
- Serve with rice.

INGREDIENTS
- 1/2cupshortening
- 1 1/2cupssugar
- 1/2cupmolasses
- 2largeeggs
- 1 3/4cupsall-purpose flour
- 1teaspoonbaking soda
- 1teaspoonsalt
- 1teaspoonground cinnamon
- 2cups uncookedoats
- 1 1/2cupsraisins
- 3/4cup choppedpecans (optional)
DIRECTIONS
- In a mixing bowl, add the first 3 ingredients; beat with an electric mixer on medium speed until blended.
- Add eggs; beat until blended.
- In another bowl, add the flour, salt, baking soda, and cinnamon; stir to combine.
- Add to the shortening mixture; beat until blended.
- Add in the oats, raisins, and pecans, if desired; stir to combine.
- Drop batter by heaping teaspoonfuls onto lightly greased baking sheets.
- Bake at 350° for 10 minutes or until golden brown; transfer cookies to a wire rack to cool.

INGREDIENTS
- 1 1/2ouncesKahlua
- 1/2ouncevodka
- 3ounceswhole milk
- 1/2ouncepure maple syrup
- 1pinchground cinnamon
DIRECTIONS
- Add ice to a cocktail shaker until it is about 3/4 full.
- Add all the ingredients; cover and shake vigorously.
- Strain into a cocktail glass filled with ice.
