Easy Beef Burgundy Recipe

INGREDIENTS

  1. 1lbbottom round steaks, cubes
  2. 1tablespoonolive oil
  3. 1/2lbfresh mushrooms, sliced
  4. 1mediumonion, chopped
  5. 1clovegarlic, minced
  6. 2tablespoonstomato paste
  7. 1/2cup goodBurgundy wine(Do Not Use Cooking Wine)
  8. 1cuplow sodium beef broth
  9. 1tablespooncornstarch
  10. 1/2packagewide egg noodles

DIRECTIONS

  1. Brown beef cubes in oil.
  2. Add mushrooms, onion, and garlic and saute’ 3-5 minutes (being careful not to burn garlic).
  3. Add broth, tomato paste and wine; simmer, covered, 1 hour or until meat is tender.
  4. Cook noodles according to package directions; drain.
  5. Mix cornstarch with a little water in samll bowl.
  6. Stir into beef burgundy.
  7. Bring to a boil.
  8. Reduce heat and simmer an additional 5 minutes.
  9. Serve over noodles.

Crabmeat Casserole Recipe

INGREDIENTS

  1. 2cupslump crabmeat
  2. 2cups of softfresh breadcrumbs
  3. 1 (10 ounce)canlow-sodium cream of mushroom soup
  4. 1/3cupmayonnaise
  5. 1smallonion, finely chopped
  6. 1/3cupcelery, very finely chopped
  7. 1pinchsalt
  8. 1/4teaspoonpepper
  9. 3eggs, beaten
  10. 1 1/2cupsmilk
  11. 1cup gratedcheddar cheese

DIRECTIONS

  1. Mix first 8 ingrdients in a bowl.
  2. Spray a 9×13 baking dish with non stick cooking spray.
  3. Pour Crab mixture into baking dish.
  4. Combine eggs and milk and pour over mixture in dish.
  5. Sprinkle cheese over top.
  6. Bake at 350 degrees for approximately 1 hour.

Apples and Cheese Recipe

INGREDIENTS

  1. 3cans friedapples
  2. 3/4cupflour
  3. 1cupsugar
  4. 1/2cupbutter
  5. 16ouncesVelveeta cheese

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Put apples in 2 qt casserole dish.
  3. Mix flour and sugar in medium bowl.
  4. Cut in butter and cheese.
  5. Sprinkle on top of apples.
  6. Bake 45 minutes to an hour.

Chicken Vegetable Soup Recipe

INGREDIENTS

  1. 2largechicken breasts
  2. 64ounceschicken broth
  3. 2cupsbroccoli, chopped
  4. 2stalkscelery, sliced
  5. 1cupzucchini, chopped
  6. 1smallonion, chopped
  7. 4clovesgarlic
  8. 1/2teaspoonpoultry seasoning
  9. 1teaspooncajun seasoning
  10. 1teaspoonsalt
  11. 1tablespoondried parsley
  12. 2bay leaves

DIRECTIONS

  1. Simmer chicken, chicken broth, bay leaves, poultry seasoning, cajun seasoning, salt, parsley, garlic, celery and onions in large pot for a couple of hours or until chicken is falling apart.
  2. Add broccoli and zucchini, cook until tender.
  3. Remove bay leaves.
  4. Enjoy.

Breakfast Frittata Recipe

INGREDIENTS

  1. 1tablespoonbutter
  2. 1/2red onion, finely chopped
  3. 1red pepper or green pepper, seeded and chopped
  4. 1smalljalapeno pepper, minced
  5. 8eggs
  6. 1/4cup gratedparmesan cheese
  7. 1/2teaspoonTabasco sauce
  8. 1/2teaspoonsalt
  9. 1/2teaspoonpepper
  10. 1/2teaspoonoregano

DIRECTIONS

  1. melt butter in frying pan over medium heat Add onion and stir for 2 min add red pepper and jalepeno cook 2 minute more.
  2. remove from heat In a large bowl whisk eggs stir in cheese tabasco and seasoning add onion mixture.
  3. bake in oven at 350 degrees whisk before pouring in to 9 inch pie plate sprayed with Pam.
  4. If making ahead wait until the onion mixture has cooled before adding cover and refridgerate overnight if desired.
