INGREDIENTS
- 3largerusset potatoes
- 1/4cupbutter
- 1cupsmall curd cottage cheese
- 1/2mediumonion(diced)
- 1/3teaspoongarlic salt
- black pepper
- paprika
DIRECTIONS
- Preheat oven to 350 degrees F.
- Scrub potatoes under running water thoroughly.
- Slice them (skin on) lengthwise into quarters.
- Slice each of the quarters across into 4 chunks.
- In a pot add potatoe chunks with enough water to cover them.
- Boil 25-35 mins or until tender when pierced with a fork.
- .
- Drain chunks.
- In a bowl mash potatoes with a hand masher to a very coarse texture adding 2 Tbs butter at the same time.
- To the potatoes gently mix in the cottage cheese, onion, garlic salt and pepper to taste.
- Pour mixture into a greased casserole dish– place small pieces of the remaining 2 Tbs of butter over top of the potatoes.
- Sprinkle with small amount of Paprika.
- Bake uncovered for 30 mins.
- Let cool for 10 mins or so before serving.

INGREDIENTS
- 3tablespoonsbutter
- 2tablespoonslemon juice
- 2tablespoonshoney
- 1/4teaspooncinnamon
- 4mediumcooking apples, unpeeled,cored,and cut into 1/2 in rings
DIRECTIONS
- place the butter in a 12×8-in baking dish.
- microwave on HIGH for 50 seconds, or until butter melts.
- stir in the lemon juice, honey and cinnamon with the melted butter.
- place apple slices in the butter mixture, turning to coat both sides.
- cover with heavy-duty plastic wrap.
- microwave at HIGH for 5-6 mins, or until apples are tender, give the dish a half-turn after 2 mins.
- let stand for 2 mins before serving.

INGREDIENTS
- 18 1/4ouncesyellow cake mix, i use duncan hines
- 2eggs
- 1/3cupvegetable oil
- 1/2cupsugar
- 2teaspoonsvanilla extract
- 2teaspoonsground cinnamon
DIRECTIONS
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl mix cake mix, oil, eggs and vanilla extract.
- Stir until well blended.
- In a separate small bowl mix sugar and cinnamon.
- Form cookie dough into 1 inch balls.
- Roll balls in cinnamon-sugar mixture until completely covered.
- Place on cookie sheets.
- Bake@ 275 degrees Fahrenheit for 8-10 minutes until lightly browned.
- Remove to wire rack to cool.

INGREDIENTS
- 1boxangel food cake mix
- 1 (20 ounce)cancrushed pineapple, in juice
- 2 (3 ounce)packagessugar-free instant vanilla pudding mix
- 3cupsskim milk
- 1 (8 ounce)containerCool Whip Lite, thawed
- 3/4cup shreddedcoconut (optional)
DIRECTIONS
- In a 13×9 pan bake Angel Food Cake according to package directions.
- While cake bakes cook undrained pineapple until syrupy, Remove cake from oven and poke holes evenly, use a two tined fork.
- Pour pineapple evenlly over cake.
- Cool completely.
- When cake is cool, mix pudding mix and milk and spread over cake.
- Spread cool whip lite over pudding.
- Sprinkle with coconut.
- Refrigerate.
- Cake tastes better if made 24 hours before serving.

INGREDIENTS

DATE FILLING
- 3cupsdates, chopped
- 1/4cupsugar
- 1 1/2cupswater

CRUST MIXTURE
- 1/2cupbutteror margarine
- 1/4cupshortening
- 1cupbrown sugar, packed
- 1 3/4cupsall-purpose flour
- 1teaspoonsalt
- 1/2teaspoonbaking soda
- 1 1/2cupsquick-cooking oats
DIRECTIONS
- Date Filling: Mix 3 cups chopped dates (1 lb.) with 1/4 cup sugar and 1 1/2 cups water in saucepan.
- Cook over low heat, stirring constantly, about 10 minutes or until thickened; Cool.
- Grease 13×9 baking pan.
- Crust Mixture: Cream butter, shortening, and brown sugar.
- Mix in remaining ingredients.
- Press half the mixture in bottom of pan.
- Spread with filling.
- Top with remaining crumble mixture, pressing lightly.
- Bake at 400°F 25 to 30 minutes or until light brown.
- While warm, cut into bars about 2 inches X 1 1/2 inches.
- VARIATION: You can omit date filling and substitute 1 cup of your favorite jam.
