90 Minute Wonder Or less ( Barley and Mushroom Soup) Recipe

INGREDIENTS

  1. 1teaspoonolive oil
  2. 3cupssliced mushrooms
  3. 1cup choppedonions
  4. 1/2cup choppedcelery
  5. 1teaspoon mincedgarlic(or more, your choice)
  6. 1/2cup uncookedbarley
  7. 3cupsvegetable broth
  8. 1 (15 1/2 ounce)canwhite beans, drained

DIRECTIONS

  1. Heat oil in medium saucepan over medium heat, and stir in mushrooms, onion, celery, and garlic.
  2. Saute til tender.
  3. Mix barley and broth into saucepan.
  4. Bring to a boil, cover, and reduce heat.
  5. Simmer 45- 50 minutes, til barley is tender.
  6. Stir white beans into barley mixture.
  7. Continue cooking about 5 minutes, til beans are heated.

Sausage and pepper Subs Recipe

INGREDIENTS

  1. 1lbItalian sausage, cut into 1/2 to 1 inch thick slices(any heat)
  2. 1green bell pepper(cored, seeded and sliced in thin strips)
  3. 1red bell pepper(cored, seeded and sliced in thin strips)
  4. 1yellow bell pepper(cored, seeded and sliced in thin strips)
  5. 2tablespoonsmargarine
  6. 1onion, sliced in thin wedges
  7. 1teaspoon texas petehot sauceor Frank’s red hot sauce
  8. 1/2teaspoonLawry’s Seasoned Salt
  9. pepper
  10. 4hoagie rolls

DIRECTIONS

  1. place margarine in nonstick frying pan and heat to med high.
  2. saute onion and bell pepper in margarine until coooked through and almost carmelized.
  3. remove peppers and onions with slotted spoon, set aside pour any remaing margarine out of pan.
  4. add sausage to the pan and season with lawry’s and pepper.
  5. cook over med-high heat until throughly cooked (no pink).
  6. return pepper/onion mixture and cook for 2 minutes.
  7. add hot sauce stir and cook 1 minute more.
  8. slice open and toast (if desired) sub rolls.
  9. fill sub rolls with sausage and vegies.
  10. Add condiments if desired.
  11. serve immediately.

Beans and Burger, Baked Beans Recipe

INGREDIENTS

  1. 1lbground beef
  2. 2 (16 ounce)canspork and beans
  3. 1smallonion(chopped)
  4. 1/2green pepper(diced)
  5. 1/2cupbarbecue sauce
  6. 1/2cupcatsup
  7. 1/2cupbrown sugar(packed)
  8. 1teaspoonmustard powder

DIRECTIONS

  1. Brown the beef with the onions and peppers; drain off grease.
  2. Lightly spray a baking dish with Pam or your brand of spray.
  3. Mix meat, pork and beans, bbq sauce, catsup, brown sugar and mustard; combine well.
  4. Pour into casserole and bake at 375° for 20 to 30 minutes.

Chocolate Rum Balls (No-Bake) Recipe

INGREDIENTS

  1. 1 (12 ounce)packagevanilla wafers, crushed
  2. 1 1/2cups finely choppednuts
  3. 3/4cupicing sugar(confectioners)
  4. 1/4cupbaking cocoa
  5. 1/2cuplight rum
  6. 3tablespoonslight corn syrup

DIRECTIONS

  1. In a large bowl, combine the crushed wafers, chopped nuts, 3/4 cup icing sugar and the cocoa; add/mix in rum and corn syrup.
  2. Shape the dough into 1-inch balls, then roll in the icing sugar.
  3. Store rum balls in an airtight container for 2-3 days to develop the flavors.
  4. Roll them again in icing sugar before serving.

Semolina Porridge Recipe

INGREDIENTS

  1. 25gsemolina
  2. 250gjaggery
  3. thickcoconut milk, from 1 coconut
  4. 1cinnamon stick
  5. 1/4teaspoongreen cardamom powder
  6. 5dates, cut into small pieces and soaked in water
  7. 10cashews, chopped

DIRECTIONS

  1. Take half of the milk and add all the ingredients to it, except the semolina and cook well.
  2. When it starts boiling, add the semolina to it and continue to cook.
  3. When the semolina gets cooked, add the rest of the milk.
  4. Cook for 7-10 more minutes.
  5. Remove from heat and serve hot.
