The Best Rice Pudding ! Recipe

INGREDIENTS

  1. 1 1/2cupswhite rice, cooked
  2. 1/2cupsugar
  3. 1tablespooncornstarch
  4. 1/2teaspoonsalt
  5. 1/4teaspoonnutmeg
  6. 2 1/2cupsmilk, 2% or whole, do not use skim or 1%
  7. 2egg yolks
  8. 1/2teaspoonvanilla

DIRECTIONS

  1. In large bowl, combine sugar, salt, cornstarch and nutmeg.
  2. Add milk, egg yolks, and vanilla, using wire whisk to beat until smooth.
  3. Add cooked rice, and pour into a 1 and 1/2 quart baking dish–you can also use a 9 x 9 square baking dish, but you’ll need to decrease the cooking time by at least 15 minutes, if not more, so check carefully after the first hour.
  4. Place baking dish into larger pan, and pour hot water into outer pan to create a 1 inch deep water bath.
  5. Bake at 350 degrees, stirring occasionally, for 1 1/2 hours, or until pudding is creamy and milk is absorbed.

Black-Eyed Peas and Sweet Potato Stew Recipe

INGREDIENTS

  1. 2cupsdried black-eyed peas
  2. 2sweet potatoes, peeled and cut in small chunks
  3. 3fresh tomatoes, peeled and cut in small chunks or1 canstewed tomatoes(works, but fresh ones are better)
  4. 3clovesfresh garlic, chopped
  5. 1/2largered onion, chopped
  6. 3tablespoonsfresh parsley, chopped
  7. 1teaspooncinnamon(or more)
  8. 1teaspoonOld Bay Seasoning or Mrs. Dash seasoning mix(or more)
  9. 1/2-1teaspooncayenneor red peppersor creole seasoning
  10. 1/2teaspoon wholecelery seeds or1-2 stalk choppedcelery, with leaves(or both)
  11. salt and pepper

DIRECTIONS

  1. Rinse black-eyed peas in colander (to clean), then drain.
  2. Add enough water to cover beans in 3 quart vessel.
  3. Boil, then turn down to medium-low heat for 30 minutes (cook until tender).
  4. Keep on lower heat and add onions, garlic, parsley, celery (if desired) and seasonings.
  5. Add tomatoes, and sweet potatoes.
  6. Cook for another 15 minutes, or until sweet potatoes are tender.
  7. Other suggested ingredients for variation are: 1 can of corn, chopped red bell peppers, or a few hot peppers.
  8. You can also add olive oil and/or a dash of vinegar for added flavor.
  9. Serve with, or over brown rice– with corn bread on the side!

Jam Swirl Coffee Cake Recipe

INGREDIENTS

  1. 2/3cupbutter
  2. 2/3cupsugar
  3. 2cupsflour
  4. 2teaspoonsbaking powder
  5. 1/2teaspoonsalt
  6. 1/2teaspoonbaking soda
  7. 1/2teaspooncinnamon
  8. 1/4teaspoonnutmeg
  9. 2eggs
  10. 2/3cupbuttermilk
  11. 1/3cupseedless raspberry preservesor strawberry preservesor boysenberry preserves

DIRECTIONS

  1. In a large bowl, cream together butter and sugar; add 3/4 cup of the flour and blend until mixture resembles crumbs; remove 2/3 cup for topping; reserve.
  2. To the remaining crumb mixture add baking powder, salt, soda, cinnamon, nutmeg and eggs; beat until smooth Add remaining 1 1/4 cup flour alternately with buttermilk, beating after each addition just until blended.
  3. Spread batter in a greased 9-inch-square baking pan.
  4. Drop teaspoonfuls of the berry preserves over the top of the batter; cut through the batter with a knife to marble the preserves through the cake.
  5. Work reserved mixture between fingers until it resembles coarse crumbs.
  6. Sprinkle over the top of the batter.
  7. Bake in a 375° oven for 35 minutes, or until a toothpick inserted in the center comes out clean.

Turkey Chili with White Beans Recipe

INGREDIENTS

  1. 2tablespoonsvegetable oil
  2. 2mediumonions, chopped
  3. 1teaspoondried oregano
  4. 1teaspoonground cumin
  5. 1lbground turkey(I like dark meat)
  6. 1/4cupchili powder
  7. 2bay leaves
  8. 1tablespoonunsweetened cocoa powder
  9. 1/2teaspoonsalt
  10. 1/4teaspoonground cinnamon
  11. 1 (28 ounce)can choppedtomatoes, unsalted
  12. 2cupschicken stock
  13. 1 (8 ounce)canno-salt-added tomato sauce
  14. 2 (15 ounce)canssmall white beans, rinsed & drained

DIRECTIONS

  1. Heat oil in heavy large pot over medium heat.
  2. Add onions and saute until light brown and tender.
  3. Add oregano and cumin- stir 1 minute.
  4. Increase heat to medium-high.
  5. Add turkey and stir until no longer pink, being sure to break up meat while stirring.
  6. Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon.
  7. Add tomatoes with their juices.
  8. Mix in stock and tomato sauce.
  9. Bring to a boil.
  10. Reduce heat and simmer for 45 minutes.
  11. Stir occassionally.
  12. Add beans to chili and simmer until flavors blend, about another 10 minutes longer.
  13. Discard bay leaves.
  14. Ready to serve.

The Dampest, Darkest, Deadliest Brownies of All Time Recipe

INGREDIENTS

  1. nonstick cooking spray
  2. 1/2cupunsalted butter
  3. 4ouncesunsweetened chocolate, broken in pieces
  4. 1 3/4cupsdark brown sugar
  5. 1pinchsalt
  6. 2teaspoonsvanilla extract
  7. 3eggs
  8. 1cupall-purpose flour
  9. 3/4cupsemi-sweet chocolate chips

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. Coat a 9-inch-square baking pan with nonstick cooking spray.
  3. In a large, heavy-bottomed saucepan over medium heat, begin melting the butter.
  4. When it is half melted, add the chocolate.
  5. Remove from heat and stir until the butter and chocolate are completely melted.
  6. Stir in the sugar, salt, vanilla and eggs until smooth.
  7. Stir in the flour until well-combined.
  8. Mix in the chocolate chips.
  9. Pour and scrape the batter into the prepared pan.
  10. Bake for 20-25 minutes, until the top is dry but the center is still damp.
  11. Do not overbake.
  12. Remove from the oven and cool on a rack until the brownies are cool and firm, about 30 minutes.
