INGREDIENTS
- 1 1/2cupswhite rice, cooked
- 1/2cupsugar
- 1tablespooncornstarch
- 1/2teaspoonsalt
- 1/4teaspoonnutmeg
- 2 1/2cupsmilk, 2% or whole, do not use skim or 1%
- 2egg yolks
- 1/2teaspoonvanilla
DIRECTIONS
- In large bowl, combine sugar, salt, cornstarch and nutmeg.
- Add milk, egg yolks, and vanilla, using wire whisk to beat until smooth.
- Add cooked rice, and pour into a 1 and 1/2 quart baking dish–you can also use a 9 x 9 square baking dish, but you’ll need to decrease the cooking time by at least 15 minutes, if not more, so check carefully after the first hour.
- Place baking dish into larger pan, and pour hot water into outer pan to create a 1 inch deep water bath.
- Bake at 350 degrees, stirring occasionally, for 1 1/2 hours, or until pudding is creamy and milk is absorbed.

INGREDIENTS
- 2cupsdried black-eyed peas
- 2sweet potatoes, peeled and cut in small chunks
- 3fresh tomatoes, peeled and cut in small chunks or1 canstewed tomatoes(works, but fresh ones are better)
- 3clovesfresh garlic, chopped
- 1/2largered onion, chopped
- 3tablespoonsfresh parsley, chopped
- 1teaspooncinnamon(or more)
- 1teaspoonOld Bay Seasoning or Mrs. Dash seasoning mix(or more)
- 1/2-1teaspooncayenneor red peppersor creole seasoning
- 1/2teaspoon wholecelery seeds or1-2 stalk choppedcelery, with leaves(or both)
- salt and pepper
DIRECTIONS
- Rinse black-eyed peas in colander (to clean), then drain.
- Add enough water to cover beans in 3 quart vessel.
- Boil, then turn down to medium-low heat for 30 minutes (cook until tender).
- Keep on lower heat and add onions, garlic, parsley, celery (if desired) and seasonings.
- Add tomatoes, and sweet potatoes.
- Cook for another 15 minutes, or until sweet potatoes are tender.
- Other suggested ingredients for variation are: 1 can of corn, chopped red bell peppers, or a few hot peppers.
- You can also add olive oil and/or a dash of vinegar for added flavor.
- Serve with, or over brown rice– with corn bread on the side!

INGREDIENTS
- 2/3cupbutter
- 2/3cupsugar
- 2cupsflour
- 2teaspoonsbaking powder
- 1/2teaspoonsalt
- 1/2teaspoonbaking soda
- 1/2teaspooncinnamon
- 1/4teaspoonnutmeg
- 2eggs
- 2/3cupbuttermilk
- 1/3cupseedless raspberry preservesor strawberry preservesor boysenberry preserves
DIRECTIONS
- In a large bowl, cream together butter and sugar; add 3/4 cup of the flour and blend until mixture resembles crumbs; remove 2/3 cup for topping; reserve.
- To the remaining crumb mixture add baking powder, salt, soda, cinnamon, nutmeg and eggs; beat until smooth Add remaining 1 1/4 cup flour alternately with buttermilk, beating after each addition just until blended.
- Spread batter in a greased 9-inch-square baking pan.
- Drop teaspoonfuls of the berry preserves over the top of the batter; cut through the batter with a knife to marble the preserves through the cake.
- Work reserved mixture between fingers until it resembles coarse crumbs.
- Sprinkle over the top of the batter.
- Bake in a 375° oven for 35 minutes, or until a toothpick inserted in the center comes out clean.

INGREDIENTS
- 2tablespoonsvegetable oil
- 2mediumonions, chopped
- 1teaspoondried oregano
- 1teaspoonground cumin
- 1lbground turkey(I like dark meat)
- 1/4cupchili powder
- 2bay leaves
- 1tablespoonunsweetened cocoa powder
- 1/2teaspoonsalt
- 1/4teaspoonground cinnamon
- 1 (28 ounce)can choppedtomatoes, unsalted
- 2cupschicken stock
- 1 (8 ounce)canno-salt-added tomato sauce
- 2 (15 ounce)canssmall white beans, rinsed & drained
DIRECTIONS
- Heat oil in heavy large pot over medium heat.
- Add onions and saute until light brown and tender.
- Add oregano and cumin- stir 1 minute.
- Increase heat to medium-high.
- Add turkey and stir until no longer pink, being sure to break up meat while stirring.
- Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon.
- Add tomatoes with their juices.
- Mix in stock and tomato sauce.
- Bring to a boil.
- Reduce heat and simmer for 45 minutes.
- Stir occassionally.
- Add beans to chili and simmer until flavors blend, about another 10 minutes longer.
- Discard bay leaves.
- Ready to serve.

INGREDIENTS
- nonstick cooking spray
- 1/2cupunsalted butter
- 4ouncesunsweetened chocolate, broken in pieces
- 1 3/4cupsdark brown sugar
- 1pinchsalt
- 2teaspoonsvanilla extract
- 3eggs
- 1cupall-purpose flour
- 3/4cupsemi-sweet chocolate chips
DIRECTIONS
- Preheat oven to 375 degrees.
- Coat a 9-inch-square baking pan with nonstick cooking spray.
- In a large, heavy-bottomed saucepan over medium heat, begin melting the butter.
- When it is half melted, add the chocolate.
- Remove from heat and stir until the butter and chocolate are completely melted.
- Stir in the sugar, salt, vanilla and eggs until smooth.
- Stir in the flour until well-combined.
- Mix in the chocolate chips.
- Pour and scrape the batter into the prepared pan.
- Bake for 20-25 minutes, until the top is dry but the center is still damp.
- Do not overbake.
- Remove from the oven and cool on a rack until the brownies are cool and firm, about 30 minutes.
