Super Easy Sweet & Sour Pork Meatballs Recipe

INGREDIENTS

  1. Meatballs

  2. 550gground ham
  3. 450gground pork(or veal for less fat)
  4. 2cupsbreadcrumbs
  5. 1cupmilk
  6. 2eggs, beaten
  7. 1teaspoonsalt
  8. Sauce

  9. 1 1/2cupsbrown sugar
  10. 1/2cupvinegar
  11. 1cupwater
  12. 1tablespoondried mustard

DIRECTIONS

  1. Mix ham, pork, bread crumbs, milk, eggs& salt Make 24 small meatballs, you can use a small ice cream spoon to make them even Place into a baking dish (9″x13″) Prepare sauce by mixing brown sugar, vinegar, water and dried mustard.
  2. Pour over meatballs.
  3. Bake at 325F, 40 minutes Serve over rice.

Make-Ahead Cherry Christmas Slices Recipe

INGREDIENTS

  1. 1cupbutter, softened(no subsitutions)
  2. 1cupicing sugar(confectioners)
  3. 1egg
  4. 1teaspoonvanilla
  5. 2 1/2cupsflour
  6. 2cups red andgreen glazed cherries, halved
  7. 1cuppecans, coarsely chopped

DIRECTIONS

  1. In a mixing bowl, cream the butter and sugar.
  2. Add the egg and vanilla; beat until fluffy.
  3. Add the flour; mix well.
  4. Stir in cherries and pecans.
  5. Chill the dough for 1 hour.
  6. Shape the dough into three 10-in rolls; wrap in plastic wrap, and place in a zip-lock freezer bag.
  7. Freeze up to 2 months.
  8. TO BAKE COOKIES: Remove the rolls from the freezer.
  9. Cut rolls into 1/8-inch slices.
  10. Place the cookies 1-inch apart on ungreased baking sheets.
  11. Bake at 325 degrees for 10-12 mins, or until the edges are golden brown (don’t overbake).
  12. Remove to wire racks; cool.

Ripplecove’s Light Berry Muffins Recipe

INGREDIENTS

  1. 1egg, beaten
  2. 1cupsugar
  3. 1/4cupoil(or Crisco)
  4. 1cupsour cream(regular or light)
  5. 1 1/2cupsflour
  6. 1teaspoonbaking powder
  7. 1teaspoonbaking soda
  8. 1 1/4cupsberries(fresh or frozen I usually buy a bag of frozen mixed berries raspberries, strawberries, blueberries a)

DIRECTIONS

  1. Beat sugar and egg.
  2. Add oil and sour cream and mix.
  3. Add flour, soda and baking powder and mix.
  4. Cut strawberries& blackberries (if any) into pieces the size of a raspberry.
  5. Carefully add berries and mix by hand.
  6. Pour mix into a small 12-muffin mold.
  7. Bake at 375F until top is golden brown (approximately 30 minutes).

Natural Remedy for Colds & Infections Recipe

INGREDIENTS

  1. 3-4clovesgarlic(crushed)
  2. 1tablespooncider vinegar
  3. 2teaspoonshoney(Manuka if you can get it)
  4. 1cupboiling water

DIRECTIONS

  1. Mix altogether and allow to cool.
  2. Add juice of 1 lemon (optional).
  3. Take 1-2 Tablespoons either neat, or if preferred, dilute with boiled water, 3-4 times a day.
  4. Good to take at first sign of a cold, sore throat, sinus etc.
  5. Continue taking for a few days.
  6. Keep in a glass jug or container in the fridge.

Jambalaya#1 Recipe

INGREDIENTS

  1. 3/4cup choppedonions
  2. 1/2cup choppedcelery
  3. 1/4cup choppedgreen peppers
  4. 2-3 freshminced garlic cloves
  5. 2tablespoonsbutter
  6. 2cups cubedcooked ham
  7. 1 (28 ounce)candiced tomatoes, undrained
  8. 1 (10 1/2 ounce)canbeef broth
  9. 1cup uncookedlong grain white rice
  10. 1cupwater
  11. 1teaspoonsugar
  12. 1teaspoondried thyme
  13. 1/2teaspoonchili powder
  14. 1/4teaspoonblack pepper
  15. 1 1/2lbs uncookedshrimp, fresh or frozen, peeled, and deveined
  16. 1tablespoon choppedfresh parsley

DIRECTIONS

  1. In a Dutch oven, saute onion, celery, green pepper and garlic in 2 tbsp butter, until tender.
  2. Add the next nine ingredients; bring to a boil.
  3. Reduce heat; cover and simmer until the rice is tender (about 25 mins).
  4. Add the shrimp and parsley; simmer, uncovered, until the shrimp are cooked (about 7-10 mins).
