INGREDIENTS

Meatballs
- 550gground ham
- 450gground pork(or veal for less fat)
- 2cupsbreadcrumbs
- 1cupmilk
- 2eggs, beaten
- 1teaspoonsalt

Sauce
- 1 1/2cupsbrown sugar
- 1/2cupvinegar
- 1cupwater
- 1tablespoondried mustard
DIRECTIONS
- Mix ham, pork, bread crumbs, milk, eggs& salt Make 24 small meatballs, you can use a small ice cream spoon to make them even Place into a baking dish (9″x13″) Prepare sauce by mixing brown sugar, vinegar, water and dried mustard.
- Pour over meatballs.
- Bake at 325F, 40 minutes Serve over rice.

INGREDIENTS
- 1cupbutter, softened(no subsitutions)
- 1cupicing sugar(confectioners)
- 1egg
- 1teaspoonvanilla
- 2 1/2cupsflour
- 2cups red andgreen glazed cherries, halved
- 1cuppecans, coarsely chopped
DIRECTIONS
- In a mixing bowl, cream the butter and sugar.
- Add the egg and vanilla; beat until fluffy.
- Add the flour; mix well.
- Stir in cherries and pecans.
- Chill the dough for 1 hour.
- Shape the dough into three 10-in rolls; wrap in plastic wrap, and place in a zip-lock freezer bag.
- Freeze up to 2 months.
- TO BAKE COOKIES: Remove the rolls from the freezer.
- Cut rolls into 1/8-inch slices.
- Place the cookies 1-inch apart on ungreased baking sheets.
- Bake at 325 degrees for 10-12 mins, or until the edges are golden brown (don’t overbake).
- Remove to wire racks; cool.

INGREDIENTS
- 1egg, beaten
- 1cupsugar
- 1/4cupoil(or Crisco)
- 1cupsour cream(regular or light)
- 1 1/2cupsflour
- 1teaspoonbaking powder
- 1teaspoonbaking soda
- 1 1/4cupsberries(fresh or frozen I usually buy a bag of frozen mixed berries raspberries, strawberries, blueberries a)
DIRECTIONS
- Beat sugar and egg.
- Add oil and sour cream and mix.
- Add flour, soda and baking powder and mix.
- Cut strawberries& blackberries (if any) into pieces the size of a raspberry.
- Carefully add berries and mix by hand.
- Pour mix into a small 12-muffin mold.
- Bake at 375F until top is golden brown (approximately 30 minutes).

INGREDIENTS
- 3-4clovesgarlic(crushed)
- 1tablespooncider vinegar
- 2teaspoonshoney(Manuka if you can get it)
- 1cupboiling water
DIRECTIONS
- Mix altogether and allow to cool.
- Add juice of 1 lemon (optional).
- Take 1-2 Tablespoons either neat, or if preferred, dilute with boiled water, 3-4 times a day.
- Good to take at first sign of a cold, sore throat, sinus etc.
- Continue taking for a few days.
- Keep in a glass jug or container in the fridge.

INGREDIENTS
- 3/4cup choppedonions
- 1/2cup choppedcelery
- 1/4cup choppedgreen peppers
- 2-3 freshminced garlic cloves
- 2tablespoonsbutter
- 2cups cubedcooked ham
- 1 (28 ounce)candiced tomatoes, undrained
- 1 (10 1/2 ounce)canbeef broth
- 1cup uncookedlong grain white rice
- 1cupwater
- 1teaspoonsugar
- 1teaspoondried thyme
- 1/2teaspoonchili powder
- 1/4teaspoonblack pepper
- 1 1/2lbs uncookedshrimp, fresh or frozen, peeled, and deveined
- 1tablespoon choppedfresh parsley
DIRECTIONS
- In a Dutch oven, saute onion, celery, green pepper and garlic in 2 tbsp butter, until tender.
- Add the next nine ingredients; bring to a boil.
- Reduce heat; cover and simmer until the rice is tender (about 25 mins).
- Add the shrimp and parsley; simmer, uncovered, until the shrimp are cooked (about 7-10 mins).
