INGREDIENTS
- 1boxbutter recipe cake mix(you can use just yellow)
- 1/2cupWesson Oil
- 1 (4 ounce)canmandarin oranges, with juice
- 4eggs
- 1 (16 ounce)containerCool Whip
- 1 (16 ounce)cancrushed pineapple in juice
- 1 (3 1/2 ounce)boxinstant vanilla pudding
DIRECTIONS
- Beat cake mix, oil, oranges and eggs together.
- Bake at 325 degrees for about 30 minutes.
- Cool completely.
- Make frosting: Drain a little of the juice off the pineapple and reserve.
- Put the pineapple in a large bowl.
- Sprinkle pudding on top.
- Fold in Cool Whip.
- If this seems stiff, add some of reserved juice.
- Frost cake, and refrigerate until ready to serve.

INGREDIENTS
- 3cupswhite rice, cooked
- 1 (16 ounce)cankidney beans, rinsed and drained
- 1mediumonion, chopped
- 1 (4 ounce)can choppedgreen chilies
- 2-3cloves fresh mincedgarlic
- 2teaspoonschili powder
- 2teaspoonsground cumin
- 1teaspoondried oregano
- 1teaspooncreole seasoning
- 1/2teaspoonsalt
- 3cups shreddedcheddar cheese, divided
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 2-qt baking dish.
- In a prepared baking dish, combine all ingredients, except the cheese.
- Top with 1-1/2 cups shredded cheddar cheese.
- Cover, and bake for 25 mins.
- Remove from oven and sprinkle the remaining 1-1/2 cups cheese.
- Return to oven, bake uncovered, for another 10 minutes longer.

INGREDIENTS

Meat loaf
- 4-6slicesbacon
- 1cupbreadcrumbs
- 1egg
- 1/2cupmilk
- 1 1/2lbsground beef
- 1mediumonion, chopped
- 4tablespoonscatsup
- salt & pepper

Sauce
- 4tablespoonsvinegar
- 2tablespoonsLea & Perrins Worcestershire Sauce
- 1/2cuponions, chopped
- 4tablespoonsbrown sugar
- 1/2cupcatsup
DIRECTIONS
- Place bacon on bottom of a pan Combine meat loaf ingredients.
- I make about 2 loaves.
- Place loaves on top of bacon.
- Combine ingredients for the sauce and bring to a boil-simmer about 10 minutes.
- Bake meatloaf at 350 for 1 hour and baste with sauce while cooking.

INGREDIENTS
- 2cupsbutter
- 8eggs
- 5cupsflour
- 1/2teaspoonnutmeg
- 1/2teaspoonmace
- 1/2teaspooncinnamon
- 1teaspoonalmond extract
- 1 1/2lbslight raisins
- 4lbsmixed candied fruit(cherries, pineapple, etc)
- 4cupspecans
- 2cupswhite sugar
- 1teaspoonbaking powder
- 1/2teaspoonsalt
- 1teaspoonvanilla
- 1/2cuphoney
- 1/2cupbrandy, plus extra for basting
DIRECTIONS
- Combine fruit, raisins and pecans in a bowl.
- Stir in 1 cup flour.
- Cream butter, sugar, spices and eggs until light.
- Combine remaining flour, salt and baking powder.
- Combine honey, vanilla, almond extract and brandy; blend well.
- Alternately add flour mixture and honey mixture to the butter mixture, beating well after each addition.
- Stir in fruit-nut mixture.
- Spoon into pans-batter should be too stiff to pour.
- Bake at 250º for two hours, until toothpick inserted in center comes out clean.
- While still hot, spoon 2 tablespoons of brandy over each cake.
- When cool, cover with foil; let stand in cool place for at least two weeks; every 3 days pour one tablespoon brandy over each.

INGREDIENTS
- pepperidge farm thin slicedbread
- 8ouncescream cheese, softened
- 1teaspoondry ranch dressing mix
- dill weed
- 1/2-1teaspooncream
- 1seedless European cucumber
- 1/2cupunsalted butter
DIRECTIONS
- Cut bread into rounds with cutters- 1 1/2- 2″ diameter.
- Slice cucumbers into 1/8″ slices.
- Thinly spread rounds with butter.
- Mix cream cheese, ranch dressing mix, dill weed, and cream.
- Spread bread with herbed cream cheese mix.
- Top with cucumber slice.
- Add remainder of cheese into pastry bag fitted with star tip.
- Pipe star on top of cucumber.
- Garnish with dill sprig.
