Coyote Pizza Recipe

INGREDIENTS

  1. 16ouncesBoboli pizza crusts
  2. 2cups shreddedchickens
  3. 3/4cup spicy shreddedcheese
  4. 1avocado, sliced
  5. 1cupsour cream
  6. 3jalapeno peppers, fresh and sliced
  7. 2anaheim chilies, halved and seeded
  8. 2red sweet peppers, halved and seeded
  9. 1clove mincedgarlic
  10. 1 1/2tablespoonsolive oil
  11. 1/2teaspoonsalt
  12. 1teaspooncumin

DIRECTIONS

  1. Place Anaheim and red peppers cut side down on greased foil lined baking sheet.
  2. Bake at 425 for 20 min.
  3. Wrap in foil and let stand 10 min.
  4. Remove skins with knife.
  5. Chop and put in a blender.
  6. Add garlic, oil, salt and cumin.
  7. Blend until mixture becomes a smooth sauce.
  8. Place Boboli shell on pizza pan and spread sauce over crust.
  9. Bake at 425 for 5 min.
  10. Top with chicken and cheese.
  11. Bake 10 min or until crust and toppings are heated to your taste.
  12. Top with Avacado, Sour cream and jalepenos.
  13. Cut and serve.

Mexican Pasta Casserole Recipe

INGREDIENTS

  1. 1lbrigatoni pasta, cooked
  2. 2teaspoonsolive oil
  3. 1clovegarlic, minced
  4. 2jalapenos, minced no seeds
  5. 1 (28 ounce)cantomatoes, undrained
  6. 2tablespoonschili powder
  7. 1 1/2teaspoonscumin
  8. 1teaspoondried oregano
  9. 8ounces cubedcooked chicken
  10. 1can slicedolives
  11. 1cupmonterey jack cheese

DIRECTIONS

  1. Preheat oven to 375.
  2. While cooking pasta heat oil over medium heat in a frying pan.
  3. Add garlic and jalepenos.
  4. Cook 3 minutes.
  5. Add chili powder, stir 1 minute.
  6. Mixture will be thick and powdery.
  7. Add tomatoes with liquid, cumin, and oregano.
  8. Simmer 15 minutes.
  9. Combine drained pasta, chicken, olives, 3/4 c.
  10. of the cheese and sauce.
  11. Pour into 2 quart baking dish sprayed with vegetable oil.
  12. Sprinkle remaining cheese on top, cover loosely with foil.
  13. Bake 15 minutes until heated through.

Broccoli Cheese Soup Recipe

INGREDIENTS

  1. 2tablespoonsbutter
  2. 3/4cup choppedonions
  3. 6cupswater
  4. 6chicken bouillon cubes
  5. 1teaspoonsalt
  6. 1/8teaspoongarlic salt
  7. 2packages choppedfrozen broccoli
  8. 6cupsmilk
  9. 1lbVelveeta cheese, cubed
  10. 8ouncesegg noodles

DIRECTIONS

  1. Heat oil in large pan.
  2. Add onion, saute’ 3 minutes.
  3. Add water and bouillon cubes.
  4. Heat to boiling, stirring occasionally until cubes are dissolved.
  5. Add noodles and salt.
  6. Cook, uncoverd 3 minutes.
  7. Stir in frozen broccoli and garlic salt.
  8. Cook 4 minutes.
  9. Turn down heat.
  10. Add milk and cheese.
  11. Continue cooking until cheese melts.
  12. Stirring frequently.
  13. Do not allow to boil once milk and cheese has been added.
  14. Can be left on stove on low heat for up to an hour or left on low in a crockpot.
  15. Is still wonderful reheated.

Noodles Recipe

INGREDIENTS

  1. 1cupflour
  2. 1/2teaspoonsalt
  3. 1/4teaspoonbaking powder
  4. 1egg
  5. 1/4teaspoonmargarine
  6. 2 1/2tablespoonsmilk

DIRECTIONS

  1. Mix together, roll out.
  2. Let stand 20 minutes.
  3. Cut into desired size of noodle.
  4. Add to chicken broth and cook until desired consistency.
  5. About 30 to 45 minutes.
  6. We serve over mashed potatoes.
  7. For a more soup like noodle add more broth and some vegetables if desired.

Spiked Brownies Recipe

INGREDIENTS

  1. For the brownies

  2. 2/3cup blanchedwhole almonds, toasted
  3. 1 (8 ounce)packagesemisweet baking chocolate
  4. 1/3cupbutteror margarine
  5. 1 1/4cupsall-purpose flour
  6. 1cupsugar
  7. 2tablespoonsAmaretto
  8. 1teaspoonbaking powder
  9. 1/2teaspoonsalt
  10. For the Frosting

  11. 2cupspowdered sugar
  12. 3tablespoonsbutter or margarine, softened
  13. 1tablespoonAmaretto
  14. 1tablespoonmilk(1 to 2 tablespoons)
  15. 2eggs

DIRECTIONS

  1. Heat oven to 350º and grease rectangular pan, 13 × 9 × 2 inches.
  2. Put 1/3 cup of the almonds in food processor.
  3. Cover and process, using”pulse” button, util almonds are ground; set aside.
  4. Chop remaining 1/3 cup almonds; reserve.
  5. Melt chocolate and butter in 3-quart saucepan over low heat, stirring frequently; remove from heat.
  6. Stir in ground almonds and remaining ingredients in brownie list.
  7. Spread in pan.
  8. Bake 22 to 27 minutes or until toothpick inserted in center comes out clean.
  9. Cool completely.
  10. Prepare Amaretto Frosting by mixing all ingredients in frosting list until smooth.
  11. Spread frosting on brownies.
  12. Sprinkle with reserved chopped almonds.
  13. Cut into about 3 × 1-inch bars.
