INGREDIENTS
- 8ounces roundbrie cheese(about 4 inches in diameter)
- 1/2cup preparedwhole berry cranberry sauce
- 2tablespoonsgranulated sugar
- 1teaspoon fresh peeledginger, grated or finely chopped
- 1/4teaspoon finely gratedorange zest
- 1/4teaspooncornstarch
- 1/8teaspoonground allspice
- 2tablespoons chopped roasted saltedpistachiosor hazelnutsor pecans
- 1tablespoon thinly slicedfresh chives
DIRECTIONS
- Preheat oven to 350 degrees F.
- With sharp knife, cut circle in top of rind of cheese, leaving 1/4-inch border around top of cheese.
- Carefully remove center circle and discard.
- (Do not cut side of rind.) Place cheese on pie plate or other small shallow ovenproof baking dish.
- In small saucepan, stir together cranberry sauce, sugar, ginger, orange zest, cornstarch and allspice.
- Stir over medium heat until mixture comes to a boil and thickens slightly.
- Remove from heat.
- Spread cranberry mixture on top of cheese.
- Bake 5 to 10 minutes, until cheese is soft but not runny.
- (Do not overheat.) Sprinkle with nuts and chives.
- Serve with ToastedsĀ® crackers.

INGREDIENTS
- 2cupssugar
- 2cupsflour
- 1/2teaspoonsalt
- 1 1/2cupsbutter
- 1cupwater
- 8tablespoonscocoa powder
- 2eggs
- 1/2cupmilk, plus
- 6tablespoonsmilk
- 1tablespoonvinegar
- 1teaspoonbaking soda
- 4teaspoonsvanilla extract, dividied
- 1 1/2cups choppednuts (optional)
- 1 (1 lb)boxpowdered sugar
DIRECTIONS
- Preheat oven to 350*.
- Grease and flour a jellyroll pan.
- For cake: in a large bowl whisk together- 2c.sugar, 2c.flour and 1/2 tsp.of salt, and 1 tsp.baking soda. Set aside.
- In another bowl mix together- 2 eggs, 1/2c.milk, 1 Tblsp.vinegar, 1 tsp. vanilla, and, if desired, 1/2c.nuts. Set aside.
- In a pot over medium heat melt 2 sticks of butter. Add 1c. water, 4 Tblsp. cocoa powder and mix until encorperated. Remove from heat and cool slightly.
- To cooled butter mixture add, little by little and mixing constantly- the egg mixture.
- Then dump all into the big bowl full of the flour mixture. Stir until JUST combined.
- Pour into greased/floured pan and bake 25 minutes or until cake springs back when touched.
- For icing: In a pot melt 1 stick of butter, 4 Tblsp. cocoa powder and 6 Tblsp. of milk.
- Take off of heat and add powdered sugar, 1 Tblsp. vanilla, and, if desired, 1c. nuts. Beat until smooth. Pour over slightly warm cake. Will harden as it cools.

INGREDIENTS
- 2tablespoonsbutter
- 1 1/2tablespoonsdried onion flakes
- 1clovegarlic, crushed
- 1/2teaspoonmarjoram
- 1teaspoonred chili powder(not cayenne)
- 1cuptomato sauce
- salt and pepper
- 1tablespoon dried mincedparsley
- 4eggs
DIRECTIONS
- Melt butter and add onion, garlic, marjoram, chili powder, salt, pepper, parsley, and tomato sauce.
- Simmer for a few minutes to allow flavors to blend.
- Carefully crack eggs into the sauce, cover pan and allow eggs to poach (cooking just a few minutes until whites are set).
- Serve over tortilla chips.
- *Note:if sauce looks too thick, you can add a bit of water to the pan before adding eggs.

INGREDIENTS
- 1 (20 ounce)canchunk pineapple, drained and juice reserved
- 8-12boneless skinless chicken breasts, cut into bite sized pieces
- 2tablespoonsbutter
- 2garlic cloves, diced
- 1largeonion, diced
- 1largebell pepper, diced
- 2 (15 ounce)canskidney beans
- 1 (28 ounce)canchopped tomatoes, undrained
- 1 (24 ounce)jar pace mild-mediumpicante sauce(or your favorite salsa- I use my homemade stuff)
- 1 (6 ounce)cantomato paste
- 3tablespoonschili powder
- 2tablespoonscumin
- 1 1/2teaspoonssalt
DIRECTIONS
- In large pot or dutch oven, melt butter and saute chicken* until almost cooked through.
- Add garlic, onion and bell pepper and cook for 2 more minutes.
- Add reserved pineapple juice and all other ingredients- EXCEPT- for the pineapple chunks.
- Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occassionally.
- Remove from heat, stir in pineapple and serve immediately- OR, WHAT I LIKE TO DO- remove from heat allow to cool, cover and refrigerate over night.
- Next day, reheat on stove top, stir in pineapple and serve.
- *Note about chicken: recipe originally calls for 12 chicken breasts.
- I found this a bit excessive and so tweeked the measurement.
- I find 7-8 breasts works for me.
- I guess it depends on how well endowed your chickens were.
- Judge accordingly.

INGREDIENTS
- 8ounces warmmilk
- 1egg
- 2tablespoonssugar
- 1teaspoonsalt
- 1/4cup softbutter
- 2 3/4cupsbread flour
- 2teaspoonsdry yeast
DIRECTIONS
- Add ingredients to bread machine in the order listed and select the dough setting.
- Remove dough and shape into 12 rolls and let rise 1 hour.
- Bake at 375 degrees for 15 minutes.
