Warm Cranberry Glazed Brie Recipe

INGREDIENTS

  1. 8ounces roundbrie cheese(about 4 inches in diameter)
  2. 1/2cup preparedwhole berry cranberry sauce
  3. 2tablespoonsgranulated sugar
  4. 1teaspoon fresh peeledginger, grated or finely chopped
  5. 1/4teaspoon finely gratedorange zest
  6. 1/4teaspooncornstarch
  7. 1/8teaspoonground allspice
  8. 2tablespoons chopped roasted saltedpistachiosor hazelnutsor pecans
  9. 1tablespoon thinly slicedfresh chives

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. With sharp knife, cut circle in top of rind of cheese, leaving 1/4-inch border around top of cheese.
  3. Carefully remove center circle and discard.
  4. (Do not cut side of rind.) Place cheese on pie plate or other small shallow ovenproof baking dish.
  5. In small saucepan, stir together cranberry sauce, sugar, ginger, orange zest, cornstarch and allspice.
  6. Stir over medium heat until mixture comes to a boil and thickens slightly.
  7. Remove from heat.
  8. Spread cranberry mixture on top of cheese.
  9. Bake 5 to 10 minutes, until cheese is soft but not runny.
  10. (Do not overheat.) Sprinkle with nuts and chives.
  11. Serve with ToastedsĀ® crackers.

Aunt Toni’s Texas Sheet Cake Recipe

INGREDIENTS

  1. 2cupssugar
  2. 2cupsflour
  3. 1/2teaspoonsalt
  4. 1 1/2cupsbutter
  5. 1cupwater
  6. 8tablespoonscocoa powder
  7. 2eggs
  8. 1/2cupmilk, plus
  9. 6tablespoonsmilk
  10. 1tablespoonvinegar
  11. 1teaspoonbaking soda
  12. 4teaspoonsvanilla extract, dividied
  13. 1 1/2cups choppednuts (optional)
  14. 1 (1 lb)boxpowdered sugar

DIRECTIONS

  1. Preheat oven to 350*.
  2. Grease and flour a jellyroll pan.
  3. For cake: in a large bowl whisk together- 2c.sugar, 2c.flour and 1/2 tsp.of salt, and 1 tsp.baking soda. Set aside.
  4. In another bowl mix together- 2 eggs, 1/2c.milk, 1 Tblsp.vinegar, 1 tsp. vanilla, and, if desired, 1/2c.nuts. Set aside.
  5. In a pot over medium heat melt 2 sticks of butter. Add 1c. water, 4 Tblsp. cocoa powder and mix until encorperated. Remove from heat and cool slightly.
  6. To cooled butter mixture add, little by little and mixing constantly- the egg mixture.
  7. Then dump all into the big bowl full of the flour mixture. Stir until JUST combined.
  8. Pour into greased/floured pan and bake 25 minutes or until cake springs back when touched.
  9. For icing: In a pot melt 1 stick of butter, 4 Tblsp. cocoa powder and 6 Tblsp. of milk.
  10. Take off of heat and add powdered sugar, 1 Tblsp. vanilla, and, if desired, 1c. nuts. Beat until smooth. Pour over slightly warm cake. Will harden as it cools.

Huevos Rancheros Recipe

INGREDIENTS

  1. 2tablespoonsbutter
  2. 1 1/2tablespoonsdried onion flakes
  3. 1clovegarlic, crushed
  4. 1/2teaspoonmarjoram
  5. 1teaspoonred chili powder(not cayenne)
  6. 1cuptomato sauce
  7. salt and pepper
  8. 1tablespoon dried mincedparsley
  9. 4eggs

DIRECTIONS

  1. Melt butter and add onion, garlic, marjoram, chili powder, salt, pepper, parsley, and tomato sauce.
  2. Simmer for a few minutes to allow flavors to blend.
  3. Carefully crack eggs into the sauce, cover pan and allow eggs to poach (cooking just a few minutes until whites are set).
  4. Serve over tortilla chips.
  5. *Note:if sauce looks too thick, you can add a bit of water to the pan before adding eggs.

Hawaiian Chicken Chili Recipe

INGREDIENTS

  1. 1 (20 ounce)canchunk pineapple, drained and juice reserved
  2. 8-12boneless skinless chicken breasts, cut into bite sized pieces
  3. 2tablespoonsbutter
  4. 2garlic cloves, diced
  5. 1largeonion, diced
  6. 1largebell pepper, diced
  7. 2 (15 ounce)canskidney beans
  8. 1 (28 ounce)canchopped tomatoes, undrained
  9. 1 (24 ounce)jar pace mild-mediumpicante sauce(or your favorite salsa- I use my homemade stuff)
  10. 1 (6 ounce)cantomato paste
  11. 3tablespoonschili powder
  12. 2tablespoonscumin
  13. 1 1/2teaspoonssalt

DIRECTIONS

  1. In large pot or dutch oven, melt butter and saute chicken* until almost cooked through.
  2. Add garlic, onion and bell pepper and cook for 2 more minutes.
  3. Add reserved pineapple juice and all other ingredients- EXCEPT- for the pineapple chunks.
  4. Bring to a boil, then reduce heat and simmer for 45 minutes, stirring occassionally.
  5. Remove from heat, stir in pineapple and serve immediately- OR, WHAT I LIKE TO DO- remove from heat allow to cool, cover and refrigerate over night.
  6. Next day, reheat on stove top, stir in pineapple and serve.
  7. *Note about chicken: recipe originally calls for 12 chicken breasts.
  8. I found this a bit excessive and so tweeked the measurement.
  9. I find 7-8 breasts works for me.
  10. I guess it depends on how well endowed your chickens were.
  11. Judge accordingly.

Bread Machine Butter Rolls Recipe

INGREDIENTS

  1. 8ounces warmmilk
  2. 1egg
  3. 2tablespoonssugar
  4. 1teaspoonsalt
  5. 1/4cup softbutter
  6. 2 3/4cupsbread flour
  7. 2teaspoonsdry yeast

DIRECTIONS

  1. Add ingredients to bread machine in the order listed and select the dough setting.
  2. Remove dough and shape into 12 rolls and let rise 1 hour.
  3. Bake at 375 degrees for 15 minutes.
