Uncle Bill’s Best Buckwheat Pancakes Recipe

INGREDIENTS

  1. 1cupbuttermilk
  2. 1largeegg
  3. 3tablespoonsbutter, melted
  4. 6tablespoonsall-purpose flour
  5. 6tablespoonsbuckwheat flour
  6. 1teaspoongranulated sugar
  7. 1/2teaspoonsalt
  8. 1teaspoonbaking soda
  9. 1tablespoonbutter, for frying pancakes

DIRECTIONS

  1. In a medium bowl, whisk together buttermilk, egg and 3 tablespoons of melted butter.
  2. In another bowl, mix together, all-purpose flour, buckwheat flour, sugar, salt and baking soda.
  3. Pour the dry ingredients into the egg-mixture.
  4. Stir until the two mixtures are just incorporated.
  5. Heat a griddle or large frying pan on medium-high heat.
  6. Add 1 tablespoon of butter and let melt.
  7. Spoon about 3 tablespoons of batter into frying pan for each pancake to form 4 inch pancakes.
  8. Fry until bubbles form on the top of the pancakes, about 3 minutes.
  9. Flip them over and cook for another 3 minutes or until done.
  10. Continue to fry pancakes with the remainng batter.
  11. Serve with melted butter and syrup or your favorite jams.

Chicken Baked In Milk And Butter Recipe

INGREDIENTS

  1. 1cupflour
  2. 1 1/2tablespoonssalt
  3. 1 1/2teaspoonspaprika
  4. 1/4teaspoonblack pepper
  5. 3lbschicken parts
  6. vegetable oil
  7. 4tablespoons meltedbutter
  8. 4tablespoonsmilk

DIRECTIONS

  1. Combine first four ingredients and dredge chicken it it.
  2. Allow to dry for about 5 minutes.
  3. Unused flour mixture can be used to make gravy.
  4. Brown chicken in about 1/2″ of hot oil.
  5. Place browned chicken in shallow baking pan.
  6. Do not stack or crowd.
  7. Mix melted butter with milk and drizzle over chicken.
  8. Bake uncovered at 350° for about 40 minutes or until done.
  9. If chicken looks dry during baking, pour a little additional milk on it.

Breaded Turkey Slices Recipe

INGREDIENTS

  1. 2eggs
  2. 3tablespoonsmilk
  3. 2cupsseasoned bread crumbs
  4. 1/2teaspoonsalt
  5. 1 1/2lbsskinless boneless turkey breasts, slices
  6. 1/2cupbutteror margarine

DIRECTIONS

  1. In Shallow bowl beat eggs and milk.
  2. in another bowl combine bread crumbs and salt.
  3. Dip turkey slices in egg mixture.
  4. coat them with bread crumb mixture.
  5. in large skillet melt butter.
  6. brown turkey for about 2 mins on each side or until juices run clear.
  7. serve with stuffing.

Potato, Spinach & Chive Frittata Recipe

INGREDIENTS

  1. 1teaspoonvegetable oil
  2. 2tablespoonsbutter
  3. 2potatoes, peeled & cubed
  4. 1teaspoon choppedfresh rosemaryor dried rosemary
  5. salt & freshly ground black pepper
  6. 1bunchspinach
  7. 10eggs
  8. 1/4cupwhipping cream
  9. 1/2cup gratedgruyere cheese
  10. 1/2cup choppedchives

DIRECTIONS

  1. Heat oil& 1 tbsp of the butter in a 10 inch skillet over medium heat.
  2. Add potatoes& saute until brown& tender, about 8 to 10 minutes.
  3. Sprinkle with rosemary, season with salt& pepper and reserve in a bowl.
  4. Wipe out skillet.
  5. Wash& stem spinach; place in saucepan on medium heat.
  6. Cover& steam until spinach is tender, about 2 minutes.
  7. Place in colander& cool slightly; squeeze out all excess water& chop.
  8. Stir eggs, cream, cheese, chives, salt& pepper in a large bowl.
  9. Add potatoes& spinach.
  10. Preheat broiler to high.
  11. Place skillet over medium-low heat& add last tbsp of butter.
  12. When melted, add egg mixture.
  13. Cook slowly until bottom is set, stirring occasionally, about 10 minutes.
  14. The top will be slightly liquid.
  15. Place skillet under broiler until top is just set.
  16. Turn onto a serving platter& cut into wedges.

Garlic Ricotta Stuffed Mushrooms Recipe

INGREDIENTS

  1. 7largewhite mushrooms, stems removed
  2. 5clovesgarlic, crushed
  3. 3-4tablespoonspart-skim ricotta cheese
  4. 1/4teaspoonsalt
  5. 1/2teaspooncracked black pepper
  6. 1tablespoonolive oil
  7. 4tablespoons gratedparmesan cheese

DIRECTIONS

  1. Preheat oven to 350 degress F.
  2. Clean mushrooms, remove stems.
  3. Chop stems, and the one extra mushroom.
  4. Heat olive oil in saute pan.
  5. Add chopped stems and the one extra mushroom.
  6. Halfway through cooking add crushed garlic, salt and pepper.
  7. Remove from heat and allow to cool slightly in a small mixing bowl.
  8. Add ricotta and 2 tablespoons grated parmesian.
  9. Fill caps with the cheese mixture and place on a cookie sheet that has been sprayed with cooking spray.
  10. Spinkle remaining parmesian on top.
  11. Bake for approx 20-25 minutes.
