INGREDIENTS
- 1cupbuttermilk
- 1largeegg
- 3tablespoonsbutter, melted
- 6tablespoonsall-purpose flour
- 6tablespoonsbuckwheat flour
- 1teaspoongranulated sugar
- 1/2teaspoonsalt
- 1teaspoonbaking soda
- 1tablespoonbutter, for frying pancakes
DIRECTIONS
- In a medium bowl, whisk together buttermilk, egg and 3 tablespoons of melted butter.
- In another bowl, mix together, all-purpose flour, buckwheat flour, sugar, salt and baking soda.
- Pour the dry ingredients into the egg-mixture.
- Stir until the two mixtures are just incorporated.
- Heat a griddle or large frying pan on medium-high heat.
- Add 1 tablespoon of butter and let melt.
- Spoon about 3 tablespoons of batter into frying pan for each pancake to form 4 inch pancakes.
- Fry until bubbles form on the top of the pancakes, about 3 minutes.
- Flip them over and cook for another 3 minutes or until done.
- Continue to fry pancakes with the remainng batter.
- Serve with melted butter and syrup or your favorite jams.

INGREDIENTS
- 1cupflour
- 1 1/2tablespoonssalt
- 1 1/2teaspoonspaprika
- 1/4teaspoonblack pepper
- 3lbschicken parts
- vegetable oil
- 4tablespoons meltedbutter
- 4tablespoonsmilk
DIRECTIONS
- Combine first four ingredients and dredge chicken it it.
- Allow to dry for about 5 minutes.
- Unused flour mixture can be used to make gravy.
- Brown chicken in about 1/2″ of hot oil.
- Place browned chicken in shallow baking pan.
- Do not stack or crowd.
- Mix melted butter with milk and drizzle over chicken.
- Bake uncovered at 350° for about 40 minutes or until done.
- If chicken looks dry during baking, pour a little additional milk on it.

- 2cupsseasoned bread crumbs
- 1/2teaspoonsalt
- 1 1/2lbsskinless boneless turkey breasts, slices
- 1/2cupbutteror margarine
DIRECTIONS
- In Shallow bowl beat eggs and milk.
- in another bowl combine bread crumbs and salt.
- Dip turkey slices in egg mixture.
- coat them with bread crumb mixture.
- in large skillet melt butter.
- brown turkey for about 2 mins on each side or until juices run clear.
- serve with stuffing.

INGREDIENTS
- 1teaspoonvegetable oil
- 2tablespoonsbutter
- 2potatoes, peeled & cubed
- 1teaspoon choppedfresh rosemaryor dried rosemary
- salt & freshly ground black pepper
- 1bunchspinach
- 10eggs
- 1/4cupwhipping cream
- 1/2cup gratedgruyere cheese
- 1/2cup choppedchives
DIRECTIONS
- Heat oil& 1 tbsp of the butter in a 10 inch skillet over medium heat.
- Add potatoes& saute until brown& tender, about 8 to 10 minutes.
- Sprinkle with rosemary, season with salt& pepper and reserve in a bowl.
- Wipe out skillet.
- Wash& stem spinach; place in saucepan on medium heat.
- Cover& steam until spinach is tender, about 2 minutes.
- Place in colander& cool slightly; squeeze out all excess water& chop.
- Stir eggs, cream, cheese, chives, salt& pepper in a large bowl.
- Add potatoes& spinach.
- Preheat broiler to high.
- Place skillet over medium-low heat& add last tbsp of butter.
- When melted, add egg mixture.
- Cook slowly until bottom is set, stirring occasionally, about 10 minutes.
- The top will be slightly liquid.
- Place skillet under broiler until top is just set.
- Turn onto a serving platter& cut into wedges.

INGREDIENTS
- 7largewhite mushrooms, stems removed
- 5clovesgarlic, crushed
- 3-4tablespoonspart-skim ricotta cheese
- 1/4teaspoonsalt
- 1/2teaspooncracked black pepper
- 1tablespoonolive oil
- 4tablespoons gratedparmesan cheese
DIRECTIONS
- Preheat oven to 350 degress F.
- Clean mushrooms, remove stems.
- Chop stems, and the one extra mushroom.
- Heat olive oil in saute pan.
- Add chopped stems and the one extra mushroom.
- Halfway through cooking add crushed garlic, salt and pepper.
- Remove from heat and allow to cool slightly in a small mixing bowl.
- Add ricotta and 2 tablespoons grated parmesian.
- Fill caps with the cheese mixture and place on a cookie sheet that has been sprayed with cooking spray.
- Spinkle remaining parmesian on top.
- Bake for approx 20-25 minutes.
