Min’s Sweet & Sour Meatloaf w/ Sauce Recipe

INGREDIENTS

  1. Sauce

  2. 1 (16 ounce)canstewed tomatoes
  3. 1/2cupbrown sugar
  4. 1/4cupvinegar
  5. 1teaspoonprepared mustard(I prefer Nance’s honey dijon)
  6. 1/3cup choppedgreen peppers
  7. Meat

  8. 2lbsground beef
  9. 2eggs, slightly beaten
  10. 1/2mediumonion, minced
  11. 3/4cupherb seasoned stuffing mix
  12. 3tablespoons preparedpasta sauce
  13. 1teaspoonsalt
  14. 1/2teaspoongarlic salt
  15. 1/2teaspoonpepper

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Mix together all sauce ingredients.
  3. Simmer until brown sugar dissolves.
  4. Combine meat loaf ingredients and pat into square baking dish.
  5. Pour 1/4 cup sauce over top of meat loaf.
  6. Cook, uncovered, for 1 hour.
  7. Heat the remaining sauce and serve with meat loaf.
  8. Serve meat loaf with egg noodles and a spinach and veggie salad.

Cranberry Nut Bars Recipe

INGREDIENTS

  1. 2largeeggs
  2. 1cupsugar
  3. 1cupflour
  4. 1/3cupbutter, melted
  5. 1 1/4cupsfresh cranberries
  6. 1/2cup choppedwalnuts

DIRECTIONS

  1. Heat oven to 350° and grease an 8-inch baking pan.
  2. Beat eggs in a medium mixing bowl until thick, gradually add sugar, beating until thoroughly blended; stir in flour and melted butter; blend well.
  3. Add cranberries and walnuts, mixing gently just until combined then spread mixture evenly in prepared pan.
  4. Bake for 40-45 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  5. Cool and cut into bars.

Apple Dumplings Recipe

INGREDIENTS

  1. Pastry

  2. 3cupsflour
  3. 1 1/2teaspoonssalt
  4. 8-9tablespoonswater
  5. 1 1/2cupsvegetable shortening
  6. Apple filling

  7. 6cupsapples, peeled,chopped
  8. 1teaspooncinnamon
  9. 12tablespoonssugar
  10. Cinnamon Sauce

  11. 3cupswater
  12. 1dashsalt
  13. 1 1/2teaspoonscinnamon
  14. 1 1/2cupssugar
  15. 1/4cupbutter

DIRECTIONS

  1. For Pastry;Mix flour and salt, and cut shortening into flour until crumbly.
  2. Stir in water until completely moistened.
  3. Then from into 3 balls.
  4. Flatten each ball on lightly floured surface and roll to 1/8-inch thick.
  5. Cut each piece into four equal parts, making 12 pieces total.
  6. Apple filling; Mix cinnamon and sugar.
  7. on each pastry (12 total), place 1/2 cup chopped apples and 1 tablespoon cinnamon and sugar mixture.
  8. Bring edges of dough to center, and pinch edges together, Place all 12 dumplings in a 9×13-inch baking dish, Pinched side down.
  9. Cinnamon Sauce; Bring sauce ingredients to a boil and pour generously over dumplings.
  10. Bake at 400 degrees for 15 minutes, Then Reduce Heat to 350 degrees for an additional 40 minutes.

Honduras Torrejas ( Ladyfingers in Syrup) Recipe

INGREDIENTS

  1. 1cup firmly packedlight brown sugar
  2. 1cupwater
  3. 2cinnamon sticks
  4. 12ladyfingers

DIRECTIONS

  1. Boil sugar, water, and cinnamon together about 10 minutes.
  2. Arrange ladyfingers in shallow dish.
  3. Pour syrup over and let stand for at least 5 minutes before serving.
  4. Serve hot.
  5. Makes 4 to 6 servings.

Honduran Liver Recipe

INGREDIENTS

  1. 1smallonion, minced
  2. 1/2green pepper, chopped
  3. 1tablespooncider vinegar
  4. 1/2teaspoonhot pepper sauce
  5. 1lbliver, cut in small pieces
  6. 2tablespoonsbutteror margarine
  7. 1tablespoonfine dry breadcrumbs
  8. 3/4cup choppedsalted cashews
  9. 1/2cupwater
  10. hotcooked rice

DIRECTIONS

  1. Mix first 5 ingredients and set aside 15 minutes.
  2. Melt butter in skillet and add liver mixture, crumbs, nuts and water.
  3. Cover and simmer 20 minutes, or until liver is tender.
  4. Serve with rice.
  5. Makes 4 servings.
