Bodacious Chili Recipe

INGREDIENTS

  1. 2lbsboneless beef chuck roast, cut into 1 inch cubes
  2. 2largeonions, chopped
  3. 3stalkscelery, sliced into 1 inch pieces
  4. 1largegreen bell pepper, coarsely chopped
  5. 1largered bell pepper, coarsely chopped
  6. 1cup slicedfresh mushrooms
  7. 2jalapeno peppers, seeded and chopped
  8. 4clovesgarlic, minced
  9. 3tablespoonsolive oil
  10. 2tablespoonscocoa
  11. 2tablespoonschili powder
  12. 1teaspoonground cumin
  13. 1teaspoondried oregano
  14. 1teaspoonpaprika
  15. 1teaspoonground turmeric
  16. 1/2-1teaspoonsalt
  17. 1/2teaspoonground cardamom
  18. 1/4teaspoonpepper
  19. 1tablespoonmolasses
  20. 1/2cupBurgundy wine
  21. 2 (16 ounce)canswhole tomatoes, undrained and chopped
  22. 1 (16 ounce)cankidney beans, rinsed and drained
  23. 1 (15 ounce)cangarbanzo beans, rinsed and drained
  24. shreddedcheddar cheese

DIRECTIONS

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the first 8 ingredients; cook and stir continuously until the meat is browned; drain and return mixture to the pot.
  3. Add in the next 14 ingredients; stir to combine.
  4. Bring to a boil; cover, lower heat, and simmer 1 1/2 hours; stir occasionally.
  5. Serve hot, topped with shredded cheddar cheese.

Crock Pot Creamy Ranch Chicken Light Recipe

INGREDIENTS

  1. 4boneless skinless chicken breasts
  2. 1package hidden valleyranch dressing mix
  3. 8ounceslight sour cream
  4. 1canlow-fat cream of chicken soup
  5. 1/2 choppedyellow onion
  6. 1/2cupwater
  7. 1pinchsalt
  8. pepper

DIRECTIONS

  1. Put all ingredients into the crock pot (my chicken was partially thawed).
  2. Cook on low for 6 hours stirring occasionally.

Crunchy Peanut Butter Spread Recipe

Delicious Dr Pepper Baked Beans Recipe

INGREDIENTS

  1. 2lbskielbasa, cut into 1/4 inch rounds(or your favorite sausage)
  2. 1 3/4cupsDr. Pepper cola, divided
  3. 4 (15 ounce)canspinto beans, drained
  4. 1 (15 ounce)bottle of good-qualityketchup(I use Heinz)
  5. 1/4cupred wine vinegar
  6. 1tablespoonWorcestershire sauce
  7. 1dashTabasco sauce
  8. 2tablespoonssoy sauce
  9. 1/2teaspoonsalt, to taste
  10. 1/4teaspoonpepper
  11. 1/2teaspoongarlic powder
  12. 1/2teaspoondry mustard
  13. 1/2mediumonion, finely chopped
  14. 1/2lbcheddar cheese, grated
  15. 1/2cupbreadcrumbs

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Butter a 3-qt baking dish.
  3. Heat a skillet over med heat with 1 tbsp oil.
  4. Add sausage, and 3/4 cup Dr Pepper drink; bring to boil.
  5. Cover; and lower the heat.
  6. Continue cooking about 30 mins, until Dr Pepper becomes syrupy.
  7. Drain the pinto beans; place in a large saucepan, add 1 cup Dr Pepper, ketchup, wine vinegar, Worcestershire sauce, Tabasco sauce, soy sauce, salt, pepper, garlic powder and onion.
  8. Bring to simmer, stirring occasionally.
  9. Pour into a 3-qt buttered baking dish.
  10. Stir in sausage mixture.
  11. Top with cheese and bread crumbs.
  12. Bake, covered for 40 mins, or until cheese is melted, and mixture is bubbling.

Baked Mushroom Casserole Recipe

INGREDIENTS

  1. 1lbfresh mushrooms(sliced)
  2. 1largeonion(chopped)
  3. 1/4cupbutter(4 Tbs)
  4. 2eggs(lightly beaten)
  5. 1/2cuplight cream(half and half)
  6. 3/4cupchicken broth
  7. 1/2teaspoonsalt
  8. 1/4teaspoonblack pepper
  9. 1cupsaltine crumbs(about 25 squares)
  10. 4ounces gratedcheddar cheese
  11. 1/8teaspoonpaprika

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Saute mushrooms and onions in butter until soft.
  3. Combine remaining ingredients (except Paprika) in a bowl.
  4. Add the mushrooms and onions (mix well) Pour into a greased 1 1/2 quart casserole dish.
  5. Garnish top with small amount of Paprika.
  6. Baked covered in a 350 degree F oven for 30 mins.
  7. Remove cover and bake for another 30 mins.
