DIRECTIONS
- Pour Baileys and Kahlua into Irish coffee glass.

INGREDIENTS
- 3/4lbsweet Italian sausage links
- 1lblean ground beef
- 1/2cup finely choppedonions
- 2garlic cloves, crushed
- 1 (28 ounce)cancrushed tomatoes
- 2 (6 ounce)canstomato paste
- 2 (6 1/2 ounce)canscanned tomato sauce
- 1/2cupwater
- 2tablespoonssugar
- 1 1/2teaspoonsdried basil leaves
- 1tablespoonsalt
- 1/2teaspoonfennel seeds
- 1/4teaspoonground black pepper
- 4tablespoons choppedfresh parsley
- 12lasagna noodles
- 16ouncesricotta cheese
- 1egg
- 1/2teaspoonsalt
- 3/4lbmozzarella cheese, sliced
- 3/4cup gratedparmesan cheese
DIRECTIONS
- In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Drain and return to pot.
- Stir in crushed tomatoes, tomato paste, tomato sauce,and water.Season with sugar, Basil, Fennel seeds, Italian seasoning, 1 tablespoonsalt, pepper, and 2 tablespoons parsley.
- Simmer, covered, for about 1 1/2 hours, stirring occasionally.
- Bring a large pot of lightly salted water to a boil.
- Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. Dry noodles on some paper towels.
- In a mixing bowl, Combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9×13 inch baking dish.
- Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture.Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese.
- Repeat layers, and top with remaining mozzarella and Parmesan cheese.
- Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
- Bake in preheated oven for 25 minutes.
- Remove foil, and bake an additional 15 -20 minutes.
- Cool for 15-20 minutes before serving. This makes for easier slicing.

INGREDIENTS
- 1/2cupbasmati riceor jasmine riceor other sweet asianrice
- 1 (14 ounce)cancoconut milk(you can use the light kind if you want, it just makes it a little less rich)
- 1/2cupsugar
- 1mango, sliced
DIRECTIONS
- Rice: Cook rice according to package directions, but substitute coconut milk for half of the water, and add half the sugar.
- It should be fairly dry when you finish cooking it, without any liquid visible in the pot.
- Sauce: In a medium saucepan, boil the rest of the coconut milk with the second half of the sugar.
- Keep this at a full boil until the rice is cooked, or until it reaches a thick, syrupy consistency.
- Presentation: Arrange the cooked coconut rice in a bowl or plate with the mango slices in some kind of pretty formation and dribble a bit of the sauce over the whole thing.

DIRECTIONS
- brown and drain hamburger onion and garlic.
- drain.
- pour in pot.
- cook for 10 min.
- top with sour cream and cheese.

INGREDIENTS
- 4ouncessemisweet chocolate
- 1/2cup sifted bakingcocoa powder
- 2cupsself-rising flour
- 1teaspoonbaking powder
- 1/4cupbrown sugar, packed
- 1/4cupsemi-sweet chocolate chips
- 1/4cupwhite chocolate chips
- 1cuphalf-and-halfor milk
- 1/4cupolive oil
- 1egg
DIRECTIONS
- Set oven to 425 degrees.
- Line a deep 12-cup muffin pan with paper liners.
- Melt the chocolate squares in the microwave, stirring occasionally.
- Remove the chocolate.
- Using a wooden spoon, stir in the cocoa powder, flour, baking powder, brown sugar, semisweet, and white chocolate chips, milk, olive oil and the egg, until very well blended.
- Divide the batter among the lined muffin cups.
- Bake for 15-17 minutes, or until well risen, and firm to the touch.
- Serve warm or room-temp.
