Creamy Seafood Casserole Recipe

INGREDIENTS

  1. 1 1/2lbslarge shrimp, peeled and deveined
  2. 1 1/2cupsdry white wine
  3. 1/4cup choppedonions
  4. 1/4cupfresh parsley sprigs
  5. 4tablespoonsbutter, divided
  6. 1teaspoonsalt
  7. 1lbbay scallops
  8. 3tablespoonsflour
  9. 1cuphalf-and-half
  10. 2ouncesswiss cheese, shredded
  11. 1tablespoonlemon juice
  12. 3/4teaspoonlemon-pepper seasoning
  13. 1 (7 ounce)cansliced mushrooms, drained
  14. 1cupsoft breadcrumbs
  15. 1/4cup gratedparmesan cheese
  16. 1/4cupsliced almonds
  17. 2tablespoonsbutter, melted
  18. steamed rice

DIRECTIONS

  1. In a large pot, place wine, onion, parsley, 1 tbsp of the butter, and the salt.
  2. Bring to a boil.
  3. Add seafood and cook until shrimp turn pink, about 3 minutes.
  4. Drain shrimp, and reserve 2/3 cup of broth.
  5. Place remaing butter in pan and add flour and cook 1 minute, stirring.
  6. Add half and half gradually, stirring constantly, until mixture thickens.
  7. Add Swiss and stir until cheese melts.
  8. Add lemon juice and lemon-pepper seasoning to reserved broth and stir into sauce gradually.
  9. Add shrimp and mushrooms to pan.
  10. Place mixture into a large buttered casserole dish.
  11. Cover with foil or a lid and bake at 350 F for 40 minutes.
  12. Mix breadcrumbs with melted butter, Parmesan and almonds.
  13. Sprinkle mixture evenly over the casserole and bake 10 minutes more.
  14. Allow to stand 10 minutes before serving.
  15. Serve with steamed rice.

Easy Clam Dip Recipe

INGREDIENTS

  1. 1packagePhiladelphia Cream cheese
  2. 1 (6 1/2 ounce)canminced clams
  3. Ritz crackersor plain Doritos

DIRECTIONS

  1. Place cream cheese in microwave safe bowl and heat for 35 seconds.
  2. Drain clams and add to cream cheese.
  3. Stir and serve luke warm with Ritz Crackers or Doritos.
  4. Enjoy!

Old-Fashioned Maple Walnut Butter Balls Recipe

INGREDIENTS

  1. 1cupbutter, softened(no substitutions)
  2. 1/3cupbrown sugar
  3. 2teaspoonsmaple extract
  4. 2cupsflour
  5. 1/2teaspoonsalt
  6. 2cups finely choppedwalnuts
  7. powdered sugar, for rolling

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Prepare an ungreased cookie sheet.
  3. Cream butter, sugar and maple extract until fluffy.
  4. Sift together flour and salt.
  5. Add to the creamed mixture; mix well.
  6. Stir in walnuts.
  7. Shape dough into 1-inch balls.
  8. Place on cookie sheet.
  9. Bake for 12-15 minutes.
  10. Immediately remove with spatula.
  11. When still warm, but cool enough to handle, roll baked cookies in powdered sugar.

Chocolate Almond Macaroons Recipe

INGREDIENTS

  1. 3egg whites
  2. 1/4teaspoonsalt
  3. 1cupsugar
  4. 1/2cup finely groundalmonds
  5. 1/2teaspoonvanilla
  6. 1cupsemi-sweet chocolate chips, melted and cooled

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Butter generously a large cookie sheet.
  3. Beat egg whites and salt until stiff, but not dry.
  4. Beat in sugar, a little at a time; beat until mixture is thick and glossy (mixture should stand in peaks).
  5. Fold in almonds, vanilla and melted chocolate.
  6. Drop macaroons by teaspoonfuls, onto a well-greased cookie sheet.
  7. Bake for 12-15 minutes.
  8. Careful not to overbake, as the cookies will lose their texture.

Honey Chicken Bake Recipe

INGREDIENTS

  1. 1wholefrying chicken, cut up
  2. salt and pepper
  3. 1/2cuphoney
  4. 1 (29 ounce)canpeach halves in syrup, drained
  5. 1cupketchup
  6. 1largelemon, sliced

DIRECTIONS

  1. Set oven to 325 degrees. /Grease a shallow baking pan (enough to hold chicken)./Arrange the chicken parts in the baking pan, and season with salt and pepper (if desired, you could brown the chicken parts in hot oil, before arranging them in a dish) Combine ketchup and honey; pour over the chicken parts, turning to coat well./ Place the lemon slices over the chicken./ Bake chicken uncovered for approx.
  2. 1 hour. /Turn chicken pieces halfway through baking. /During the last 15 minutes of baking, increase heat to 350 degrees, and arrange the drained peach halves around the chicken. /Note: if you are browning the chicken pieces before baking, cooking time must be reduced by 15-20 minutes.
