INGREDIENTS
- 1 1/2lbslarge shrimp, peeled and deveined
- 1 1/2cupsdry white wine
- 1/4cup choppedonions
- 1/4cupfresh parsley sprigs
- 4tablespoonsbutter, divided
- 1teaspoonsalt
- 1lbbay scallops
- 3tablespoonsflour
- 1cuphalf-and-half
- 2ouncesswiss cheese, shredded
- 1tablespoonlemon juice
- 3/4teaspoonlemon-pepper seasoning
- 1 (7 ounce)cansliced mushrooms, drained
- 1cupsoft breadcrumbs
- 1/4cup gratedparmesan cheese
- 1/4cupsliced almonds
- 2tablespoonsbutter, melted
- steamed rice
DIRECTIONS
- In a large pot, place wine, onion, parsley, 1 tbsp of the butter, and the salt.
- Bring to a boil.
- Add seafood and cook until shrimp turn pink, about 3 minutes.
- Drain shrimp, and reserve 2/3 cup of broth.
- Place remaing butter in pan and add flour and cook 1 minute, stirring.
- Add half and half gradually, stirring constantly, until mixture thickens.
- Add Swiss and stir until cheese melts.
- Add lemon juice and lemon-pepper seasoning to reserved broth and stir into sauce gradually.
- Add shrimp and mushrooms to pan.
- Place mixture into a large buttered casserole dish.
- Cover with foil or a lid and bake at 350 F for 40 minutes.
- Mix breadcrumbs with melted butter, Parmesan and almonds.
- Sprinkle mixture evenly over the casserole and bake 10 minutes more.
- Allow to stand 10 minutes before serving.
- Serve with steamed rice.

INGREDIENTS
- 1packagePhiladelphia Cream cheese
- 1 (6 1/2 ounce)canminced clams
- Ritz crackersor plain Doritos
DIRECTIONS
- Place cream cheese in microwave safe bowl and heat for 35 seconds.
- Drain clams and add to cream cheese.
- Stir and serve luke warm with Ritz Crackers or Doritos.
- Enjoy!

INGREDIENTS
- 1cupbutter, softened(no substitutions)
- 1/3cupbrown sugar
- 2teaspoonsmaple extract
- 2cupsflour
- 1/2teaspoonsalt
- 2cups finely choppedwalnuts
- powdered sugar, for rolling
DIRECTIONS
- Set oven to 375 degrees.
- Prepare an ungreased cookie sheet.
- Cream butter, sugar and maple extract until fluffy.
- Sift together flour and salt.
- Add to the creamed mixture; mix well.
- Stir in walnuts.
- Shape dough into 1-inch balls.
- Place on cookie sheet.
- Bake for 12-15 minutes.
- Immediately remove with spatula.
- When still warm, but cool enough to handle, roll baked cookies in powdered sugar.

INGREDIENTS
- 3egg whites
- 1/4teaspoonsalt
- 1cupsugar
- 1/2cup finely groundalmonds
- 1/2teaspoonvanilla
- 1cupsemi-sweet chocolate chips, melted and cooled
DIRECTIONS
- Set oven to 350 degrees.
- Butter generously a large cookie sheet.
- Beat egg whites and salt until stiff, but not dry.
- Beat in sugar, a little at a time; beat until mixture is thick and glossy (mixture should stand in peaks).
- Fold in almonds, vanilla and melted chocolate.
- Drop macaroons by teaspoonfuls, onto a well-greased cookie sheet.
- Bake for 12-15 minutes.
- Careful not to overbake, as the cookies will lose their texture.

INGREDIENTS
- 1wholefrying chicken, cut up
- salt and pepper
- 1/2cuphoney
- 1 (29 ounce)canpeach halves in syrup, drained
- 1cupketchup
- 1largelemon, sliced
DIRECTIONS
- Set oven to 325 degrees. /Grease a shallow baking pan (enough to hold chicken)./Arrange the chicken parts in the baking pan, and season with salt and pepper (if desired, you could brown the chicken parts in hot oil, before arranging them in a dish) Combine ketchup and honey; pour over the chicken parts, turning to coat well./ Place the lemon slices over the chicken./ Bake chicken uncovered for approx.
- 1 hour. /Turn chicken pieces halfway through baking. /During the last 15 minutes of baking, increase heat to 350 degrees, and arrange the drained peach halves around the chicken. /Note: if you are browning the chicken pieces before baking, cooking time must be reduced by 15-20 minutes.
