Cranberry-Walnut Pumpkin Bread Recipe

INGREDIENTS

  1. 2cupsall-purpose flour
  2. 2teaspoonspumpkin pie spice
  3. 1teaspoonbaking powder
  4. 3/4teaspoonsalt
  5. 1/2teaspoonbaking soda
  6. 6tablespoonsunsalted butter, room temperature
  7. 1cupsugar, plus
  8. 1tablespoonsugar
  9. 2largeeggs
  10. 1cup cannedpumpkin puree
  11. 1teaspoonvanilla extract
  12. 2/3cupbuttermilk
  13. 1/2cupdried sweetened cranberries(I plan to use fresh.)
  14. 1/2cup coarsely choppedwalnuts

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Butter 9 1/4×5 1/4×3-inch loaf pan.
  3. Line bottom and 2 long sides with waxed paper.
  4. Whisk flour, pumpkin pie spice, baking powder, salt, and baking soda in medium bowl to blend.
  5. Using electric mixer, beat butter in large bowl until fluffy.
  6. Gradually add 1 cup sugar, beating until blended.
  7. Beat in eggs, 1 at a time.
  8. Beat in pumpkin, then vanilla.
  9. Beat in dry ingredients alternately with buttermilk in 2 additions each.
  10. Fold in cranberries and nuts.
  11. Transfer batter to pan.
  12. Sprinkle with 1 tablespoon sugar.
  13. Bake bread until tester inserted into center comes out clean, about 1 hour 10 minutes.
  14. Cool bread in pan on rack 15 minutes.
  15. Cut around bread at short ends to loosen from pan.
  16. Turn bread out onto rack; peel off waxed paper.
  17. Cool bread completely.
  18. (Can be made 2 days ahead. Wrap and store at room temperature.).

Chicken and Biscuit Casserole Recipe

INGREDIENTS

  1. 2cups cubedcooked chicken
  2. 1 (10 3/4 ounce)cancream of chicken soup, undiluted
  3. 1cup cannedgreen beans, drained or mixed vegetables(or both)
  4. 1cup slicedfresh mushroomsor canned mushrooms
  5. 1cup shreddedAmerican cheese, i use velveeta
  6. 1/2cupmayonnaise(not salad dressing)
  7. 1canrefrigerated biscuits(Pillsbury is good)
  8. 2-3tablespoonsbutter, melted
  9. 1/4cupseasoned bread crumbs

DIRECTIONS

  1. Set oven to 375 degrees.
  2. Grease a 2-qt baking dish.
  3. In a medium saucepan, combine chicken, chicken soup, green beans, mushrooms, cheese and mayo.
  4. Heat until hot and bubbling.
  5. Pour the hot mixture into a prepared baking dish.
  6. Separate biscuits and arrange over the chicken mixture.
  7. Brush biscuits with melted butter; sprinkle with bread crumbs over the biscuits.
  8. Bake for 25-30 minutes, or until the bicuits are golden brown, and casserole is bubbly.
  9. Serve immediately.
  10. Note frozen veggies are good also, just run under hot water to thaw, then squeeze out excess water before adding to casserole.

Cranberry Orange Cookies With Crystallized Ginger Recipe

INGREDIENTS

  1. 1 1/2cupsall-purpose flour
  2. 1/2teaspoonbaking powder
  3. 1/4teaspoonsalt
  4. 1/2cupvegetable shortening
  5. 3/4cuppowdered sugar
  6. 3tablespoonscream
  7. 2teaspoons pureorange extract
  8. 1teaspoon freshly gratedorange zest
  9. 1 1/2cupsfresh cranberries, chopped
  10. 1-3teaspooncandied ginger, very finely chopped
  11. 2tablespoonsfresh orange juice
  12. 1cuppowdered sugar
  13. 4-6dropsorangesor red food coloring

DIRECTIONS

  1. Combine flour, baking powder and salt.
  2. Cream sugar and shortening together until light and fluffy.
  3. Add cream, orange extract and grated orange rind.
  4. Gradually add flour mixture.
  5. Fold in cranberries and candied ginger.
  6. Form dough into 2 logs, each about 1 1/2- inches in diameter.
  7. Wrap in waxed paper and chill for at overnight.
  8. Preheat oven to 375° and lightly grease cookie sheets.
  9. Cut the logs into 1/4-inch thick slices and bake for 12-15 minutes.
  10. For glaze mix together orange juice, powdered sugar and food coloring.
  11. Drizzle on cooled cookies.

Apple Pudding Dessert Recipe

INGREDIENTS

  1. 4sweet apples, peeled and sliced
  2. 1/2cupbutter, very well softened
  3. 3/4cupwhite sugar(or half white and half brown or more, depending on how sweet you like it)
  4. 1 1/2cupsflour
  5. 1tablespoonlemon juice
  6. 1/4teaspoonnutmeg
  7. 1/4teaspooncinnamon

DIRECTIONS

  1. Set oven to 350 degrees.
  2. Butter a 2-qt baking dish.
  3. Place sliced apples into the bottom of prepared baking dish.
  4. In a bowl, mix butter, sugar and flour together.
  5. Sprinkle the butter mixture on top of the sliced apples.
  6. Sprinkle the lemon over the butter mixture.
  7. Then sprinkle the cinnamon and nutmeg over everything.
  8. Bake for approx 25-30 mins, or until the top is slightly crisp.
  9. Spoon into serving dishes.

Sweet Sandwich Recipe

INGREDIENTS

  1. Miracle Whip(not mayo)
  2. golden sweetcanned corn niblets
  3. white bread
  4. iceberg lettuce

DIRECTIONS

  1. put miricle whip on white bread.
  2. add the corn and lettuce in between and enjoy!
  3. (Note) If you use mayo, it won’t taste as good, so I sugest Miracle Whip.
