INGREDIENTS
- 2cupsall-purpose flour
- 2teaspoonspumpkin pie spice
- 1teaspoonbaking powder
- 3/4teaspoonsalt
- 1/2teaspoonbaking soda
- 6tablespoonsunsalted butter, room temperature
- 1cupsugar, plus
- 1tablespoonsugar
- 2largeeggs
- 1cup cannedpumpkin puree
- 1teaspoonvanilla extract
- 2/3cupbuttermilk
- 1/2cupdried sweetened cranberries(I plan to use fresh.)
- 1/2cup coarsely choppedwalnuts
DIRECTIONS
- Preheat oven to 350°F.
- Butter 9 1/4×5 1/4×3-inch loaf pan.
- Line bottom and 2 long sides with waxed paper.
- Whisk flour, pumpkin pie spice, baking powder, salt, and baking soda in medium bowl to blend.
- Using electric mixer, beat butter in large bowl until fluffy.
- Gradually add 1 cup sugar, beating until blended.
- Beat in eggs, 1 at a time.
- Beat in pumpkin, then vanilla.
- Beat in dry ingredients alternately with buttermilk in 2 additions each.
- Fold in cranberries and nuts.
- Transfer batter to pan.
- Sprinkle with 1 tablespoon sugar.
- Bake bread until tester inserted into center comes out clean, about 1 hour 10 minutes.
- Cool bread in pan on rack 15 minutes.
- Cut around bread at short ends to loosen from pan.
- Turn bread out onto rack; peel off waxed paper.
- Cool bread completely.
- (Can be made 2 days ahead. Wrap and store at room temperature.).

INGREDIENTS
- 2cups cubedcooked chicken
- 1 (10 3/4 ounce)cancream of chicken soup, undiluted
- 1cup cannedgreen beans, drained or mixed vegetables(or both)
- 1cup slicedfresh mushroomsor canned mushrooms
- 1cup shreddedAmerican cheese, i use velveeta
- 1/2cupmayonnaise(not salad dressing)
- 1canrefrigerated biscuits(Pillsbury is good)
- 2-3tablespoonsbutter, melted
- 1/4cupseasoned bread crumbs
DIRECTIONS
- Set oven to 375 degrees.
- Grease a 2-qt baking dish.
- In a medium saucepan, combine chicken, chicken soup, green beans, mushrooms, cheese and mayo.
- Heat until hot and bubbling.
- Pour the hot mixture into a prepared baking dish.
- Separate biscuits and arrange over the chicken mixture.
- Brush biscuits with melted butter; sprinkle with bread crumbs over the biscuits.
- Bake for 25-30 minutes, or until the bicuits are golden brown, and casserole is bubbly.
- Serve immediately.
- Note frozen veggies are good also, just run under hot water to thaw, then squeeze out excess water before adding to casserole.

INGREDIENTS
- 1 1/2cupsall-purpose flour
- 1/2teaspoonbaking powder
- 1/4teaspoonsalt
- 1/2cupvegetable shortening
- 3/4cuppowdered sugar
- 3tablespoonscream
- 2teaspoons pureorange extract
- 1teaspoon freshly gratedorange zest
- 1 1/2cupsfresh cranberries, chopped
- 1-3teaspooncandied ginger, very finely chopped
- 2tablespoonsfresh orange juice
- 1cuppowdered sugar
- 4-6dropsorangesor red food coloring
DIRECTIONS
- Combine flour, baking powder and salt.
- Cream sugar and shortening together until light and fluffy.
- Add cream, orange extract and grated orange rind.
- Gradually add flour mixture.
- Fold in cranberries and candied ginger.
- Form dough into 2 logs, each about 1 1/2- inches in diameter.
- Wrap in waxed paper and chill for at overnight.
- Preheat oven to 375° and lightly grease cookie sheets.
- Cut the logs into 1/4-inch thick slices and bake for 12-15 minutes.
- For glaze mix together orange juice, powdered sugar and food coloring.
- Drizzle on cooled cookies.

INGREDIENTS
- 4sweet apples, peeled and sliced
- 1/2cupbutter, very well softened
- 3/4cupwhite sugar(or half white and half brown or more, depending on how sweet you like it)
- 1 1/2cupsflour
- 1tablespoonlemon juice
- 1/4teaspoonnutmeg
- 1/4teaspooncinnamon
DIRECTIONS
- Set oven to 350 degrees.
- Butter a 2-qt baking dish.
- Place sliced apples into the bottom of prepared baking dish.
- In a bowl, mix butter, sugar and flour together.
- Sprinkle the butter mixture on top of the sliced apples.
- Sprinkle the lemon over the butter mixture.
- Then sprinkle the cinnamon and nutmeg over everything.
- Bake for approx 25-30 mins, or until the top is slightly crisp.
- Spoon into serving dishes.

- Miracle Whip(not mayo)
- golden sweetcanned corn niblets
- white bread
- iceberg lettuce
DIRECTIONS
- put miricle whip on white bread.
- add the corn and lettuce in between and enjoy!
- (Note) If you use mayo, it won’t taste as good, so I sugest Miracle Whip.
