Mrs. Mountain’s Pork Chops Recipe

INGREDIENTS

  1. 2cupswater
  2. 1cupketchup
  3. 1/4cupwhite vinegar
  4. 1/2cupWorcestershire sauce
  5. 1/2cupbrown sugar
  6. 1teaspoonsalt
  7. 1teaspoonchili powder
  8. 1teaspooncelery seeds
  9. 1-2dashTabasco sauce
  10. 2largeonions, sliced medium
  11. 4lemons, sliced medium about
  12. 6-8pork chops

DIRECTIONS

  1. Bring all ingredients except pork chops to a boil in a medium saucepan.
  2. Simmer on low for 1/2 hour.
  3. Place pork chops in large baking pan.
  4. Place one or two slices of onion on each chop and top off with lemon slice.
  5. Pour sauce over top of chops.
  6. Cover with foil wrap.
  7. Bake at 375 degrees for 1 1/2 hours.

cran-apricot sauce Recipe

INGREDIENTS

  1. 1 (12 ounce)bagfresh cranberries
  2. 1 1/2cupsapricot preserves
  3. 1tablespooncinnamon
  4. 2tablespoonssugar
  5. 2/3cuporange juice

DIRECTIONS

  1. put apricot preserves, cinnamon, sugar and orange juice in large saucepan and bring to a boil.
  2. add cranberries and bring mixture back to a boil.
  3. simmer till sauce is thickened and cranberries have popped.
  4. put mixture in a food mill and process till solids are separated.
  5. let cool and serve!

Spanish Rosquillas (Fried Cakes) Recipe

INGREDIENTS

  1. 1cupall-purpose flour
  2. 1/3cupgranulated sugar
  3. 1egg
  4. 1teaspoonbaking powder
  5. 1/4teaspoonvanilla extract
  6. 2tablespoons softbutter
  7. hotbutteror margarine
  8. confectioners’ sugar(icing)

DIRECTIONS

  1. Sift flour into a bowl; add sugar, egg, baking powder, vanilla, and butter.
  2. Mix with wooden spoon until you have a firm dough.
  3. Leave in warm room to let dough rise slightly.
  4. Shape into circlets or half moons about the diameter of a silver dollar, and spread as evenly as possible so that they’ll cook through.
  5. Fry in a small amount of hot butter about 4 minutes but do not burn.
  6. Sift confectioners’ sugar over and serve warm.

Spanish Mella’s Ladyfinger Dessert Recipe

INGREDIENTS

  1. 1cupmilk
  2. 2eggs, well beaten(divided)
  3. 3tablespoonsgranulated sugar
  4. 1tablespooncornstarch
  5. 1teaspoon gratedfresh lemon rind
  6. 24ladyfingers
  7. 12graham crackers, crushed into fine crumbs
  8. hotbutteror margarine
  9. confectioners’ sugar

DIRECTIONS

  1. In saucepan combine milk, 1 egg, granulated sugar mixed with cornstarch, and lemon rind.
  2. Stir gently over low heat for 5 minutes, or until mixture thickens.
  3. Cool at room temperature.
  4. Split 24 ladyfingers.
  5. Fill with cooled custard filling and put together.
  6. Dip into remaining beaten egg, then into graham cracker crumbs.
  7. Fry in hot butter for 4 minutes on each side, or until brown but not burned.
  8. Sprinkle with confectioners’ sugar; serve warm.
  9. Makes 24 cakes.

Sparkle Punch Recipe

INGREDIENTS

  1. 1/2cuppineapple juice
  2. 1/2cuplemon juice
  3. 1/3cuptriple sec
  4. 1cupbrandy
  5. 1/3cupgrenadine
  6. 1bottledry white wine
  7. 2bottleschampagne

DIRECTIONS

  1. Mix all ingredients except champagne in a punch bowl over ice.
  2. Add champagne just before serving.
