INGREDIENTS
- 1 1/2cupsflour
- 1teaspooncream of tartar
- 1/2teaspoonbaking soda
- 3/4cupbrown sugar
- 1/2cupbutter flavor shortening(Crisco is good)
- 1egg, slightly beaten
- 3tablespoons siftedbaking cocoa
- 1teaspoonvanilla
- 1 1/2cupsicing sugar
- 3tablespoonsmilkor half-and-half
- 3tablespoonsbutter
DIRECTIONS
- Set oven to 375 degrees.
- Coat bottom and sides of an 8 x 8-inch square baking pan with soft butter (about 2 Tbsps).
- In a bowl, mix all ingredients except the icing sugar, cream and butter.
- Press three quarters of the mixture into the prepared baking pan. (if desired, sprinkle with tiny chocolate chips or nuts or both on top of the crust).
- In a saucepan, combine the powdered sugar, vanilla, milk (I like to use whipping cream in place of milk for a thicker texture) and the butter; until melted and combined.
- Pour the melted mixture over the crumbled mixture in the baking pan.
- Sprinkle with the remaining crumb mixture (the mixture does not have to cover completely).
- Bake for 25-30 minutes.

INGREDIENTS
- 1/2cupwater
- 1/3cupvinegar
- 1/3cupketchup
- 1/4cupbrown sugar
- 4tablespoonsoil
- 2tablespoonslemon juice
- 2teaspoonssalt
- 2teaspoonspaprika
- 2teaspoonsmustard powder
- 2teaspoonschili powder
- 3-4lbs cut-upchicken pieces
DIRECTIONS
- Set oven to 400 degrees.
- In a bowl, combine all the ingredients, except the chicken.
- Pat the chicken pieces well with paper towels to dry.
- Transfer to a greased baking pan (big enough to hold the amout of chicken pieces that you are using).
- Pour the prepared sauce over the chicken pieces; turning well to coat.
- Cover with foil.
- Bake for 35 mins; uncover, baste with sauce.
- Bake for 10 minutes more, or until the chicken is cooked.

INGREDIENTS
- 4-5lbsham
- 1cupmolassesor brown sugar
- 2teaspoonsdry mustard
- 1tablespoonpepper
- 1cupale
- 18-24wholecloves
- 1largeonion, cut in four
- 1carrot, cut in pieces
- 1stalkcelery, with leaves,chopped
DIRECTIONS
- Use a sharp knife to remove the skin from the ham.
- Score the fat diagonally and place a clove in each diamond.
- Set the ham in the middle of a sheet of heavy-duty aluminium foil.
- Place in a shallow dripping pan.
- Mix the molasses or brown sugar, dry mustard, pepper and the ale.
- Pour over the ham.
- Scatter the veggies around the ham and bring the foil to the top.
- Fold lightly and close the ends of the foil, sealing the ham inside.
- Bake in a 400 F oven for 16-18 minutes per pound.

INGREDIENTS
- 2 1/2-3lbschickens(cut up)
- 1/2cupraspberry vinegar
- 1/2cupdry red wine
- 1/4cupsoy sauce
- 4-5clovesgarlic(finely chopped or minced)
- 1 1/2teaspoonsdried rosemary(crushed)
DIRECTIONS
- Preheaat oven to 375 degrees F.
- In a baking dish place chicken pieces side by side skin side down.
- Combine remaining ingredients and pour over chicken.
- Bake uncovered in a 375 degree F oven until the skin has browned, glazed and the flesh is tender-this should be about 1 1/2 hours.
- Turn chicken occasionally while baking.

INGREDIENTS
- 1 (3 ounce)packagecream cheese
- 1/4lbcottage cheese
- 1smallonion, finely diced
- 1teaspooncapers
- 1pinchcaraway seeds
- 1teaspoonpaprika
- 1teaspoonprepared mustard
- 1teaspoon gratedparmesan cheese
- 1/4cupbeer
DIRECTIONS
- Blend all ingredients together thoroughly.
- Chill until ready to serve.
- If a softer dip is desired, add another 1/4 cup of beer.
