Sweet Potato Casserole w/ Praline Topping Recipe

INGREDIENTS

  1. 3cupsmashed sweet potatoes
  2. 1cupsugar
  3. 1/2cupbutter, melted
  4. 2eggs, beaten
  5. 1tablespoonvanilla
  6. 1/3cupmilk
  7. Topping

  8. 1cup packedbrown sugar
  9. 1/3cupflour
  10. 1/3cupbutter
  11. 1cup choppedpecans

DIRECTIONS

  1. Mix sweet potato ingredients together with mixer.
  2. Pour into a 12″ X 8″ buttered casserole dish.
  3. Mix topping ingredients together until crumbly.
  4. Sprinkle on top of sweet potato mixture and Bake at 350 degrees for 20 minutes.
  5. Can be made the day before serving, refrigerate.
  6. On the day to be cooked set out to bring to room temperature, then bake.

E’s Duck Gumbo Recipe

INGREDIENTS

  1. 1cupcooking oil
  2. 1/2cupflour
  3. 1cup choppedonions
  4. 1/4cup choppedgreen onions
  5. 3quartsboiling water
  6. Tabasco sauce
  7. salt
  8. red peppers
  9. 2largeduck breasts, sliced
  10. 1/4cup choppedparsley
  11. 1/2cup choppedgreen onion tops
  12. 2clovesgarlic
  13. 1/2lbsmoked sausage, sliced
  14. 2cupscooked rice

DIRECTIONS

  1. Heat 1/2 cup of the oil over medium heat in a large heavy pot.
  2. Add the flour, stirring constantly until dark brown.
  3. Add the onion and green onion and cook until tender.
  4. Add the boiling water and season with Tabasco, salt& red pepper.
  5. Season the duck with salt& red pepper.
  6. Heat the remaining oil in a skillet& brown the duck pieces.
  7. Transfer the duck to the gumbo.
  8. Simmer, uncovered on low 2-2 1/2 hours.
  9. Add the sausage slices, green onion tops and parsley.
  10. Cook 30 minutes longer.
  11. Serve over hot rice.

Banana Cake Recipe

INGREDIENTS

  1. 1 1/4cupswhite sugar
  2. 1/2cupbutter
  3. 2eggs, beaten
  4. 1teaspoonbaking soda
  5. 1/4cupsour cream
  6. 1cup mashedbananas(use bananas that are turning black)
  7. 1 1/2cupscake flour
  8. 1teaspoonvanilla

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Grease and flour a 9×9 inch pan.
  3. Dissolve baking soda in the sour cream.
  4. In a large bowl, cream butter and sugar until light.
  5. Add eggs and beat well.
  6. Add sour cream/baking soda mixture, mashed bananas and vanilla stir to combine.
  7. Add cake flour and mix well.
  8. Pour batter into a 9×9 inch pan and bake at 350 degrees for 45 minutes or until done.

Carrot Cake Recipe

INGREDIENTS

  1. CAKE

  2. 2cupssugar
  3. 2cupsflour
  4. 1 1/2cupsoil
  5. 1teaspoonsalt
  6. 2teaspoonsbaking soda
  7. 1teaspooncinnamon
  8. 3cups gratedcarrots
  9. 5eggs
  10. 1 1/2cups choppedwalnuts (optional)
  11. FROSTING

  12. 1 (8 ounce)packagecream cheese
  13. 1/4cupmargarine
  14. 1lbpowdered sugar
  15. 2teaspoonsvanilla

DIRECTIONS

  1. For the cake: Preheat oven to 350 degrees.
  2. Combine dry ingredients.
  3. Stir in oil, eggs and grated carrots.
  4. Beat for 2 minutes by hand.
  5. Add nuts and mix thoroughly.
  6. Bake in greased and floured 13 x 9 inch pan for 45 minutes.
  7. For the frosting: Beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy.
  8. Spread on cooled cake.

Veggie Juice Cocktail Recipe

DIRECTIONS

  1. Juice a carrot and a stalk of celery.
  2. Pour over ice.
  3. Add a splash of spicy Bloody Mary Mix or V8.
  4. Mix and enjoy!
