INGREDIENTS
- 3cupsmashed sweet potatoes
- 1cupsugar
- 1/2cupbutter, melted
- 2eggs, beaten
- 1tablespoonvanilla
- 1/3cupmilk

Topping
- 1cup packedbrown sugar
- 1/3cupflour
- 1/3cupbutter
- 1cup choppedpecans
DIRECTIONS
- Mix sweet potato ingredients together with mixer.
- Pour into a 12″ X 8″ buttered casserole dish.
- Mix topping ingredients together until crumbly.
- Sprinkle on top of sweet potato mixture and Bake at 350 degrees for 20 minutes.
- Can be made the day before serving, refrigerate.
- On the day to be cooked set out to bring to room temperature, then bake.

INGREDIENTS
- 1cupcooking oil
- 1/2cupflour
- 1cup choppedonions
- 1/4cup choppedgreen onions
- 3quartsboiling water
- Tabasco sauce
- salt
- red peppers
- 2largeduck breasts, sliced
- 1/4cup choppedparsley
- 1/2cup choppedgreen onion tops
- 2clovesgarlic
- 1/2lbsmoked sausage, sliced
- 2cupscooked rice
DIRECTIONS
- Heat 1/2 cup of the oil over medium heat in a large heavy pot.
- Add the flour, stirring constantly until dark brown.
- Add the onion and green onion and cook until tender.
- Add the boiling water and season with Tabasco, salt& red pepper.
- Season the duck with salt& red pepper.
- Heat the remaining oil in a skillet& brown the duck pieces.
- Transfer the duck to the gumbo.
- Simmer, uncovered on low 2-2 1/2 hours.
- Add the sausage slices, green onion tops and parsley.
- Cook 30 minutes longer.
- Serve over hot rice.

INGREDIENTS
- 1 1/4cupswhite sugar
- 1/2cupbutter
- 2eggs, beaten
- 1teaspoonbaking soda
- 1/4cupsour cream
- 1cup mashedbananas(use bananas that are turning black)
- 1 1/2cupscake flour
- 1teaspoonvanilla
DIRECTIONS
- Preheat oven to 350 degrees.
- Grease and flour a 9×9 inch pan.
- Dissolve baking soda in the sour cream.
- In a large bowl, cream butter and sugar until light.
- Add eggs and beat well.
- Add sour cream/baking soda mixture, mashed bananas and vanilla stir to combine.
- Add cake flour and mix well.
- Pour batter into a 9×9 inch pan and bake at 350 degrees for 45 minutes or until done.

INGREDIENTS

CAKE
- 2cupssugar
- 2cupsflour
- 1 1/2cupsoil
- 1teaspoonsalt
- 2teaspoonsbaking soda
- 1teaspooncinnamon
- 3cups gratedcarrots
- 5eggs
- 1 1/2cups choppedwalnuts (optional)

FROSTING
- 1 (8 ounce)packagecream cheese
- 1/4cupmargarine
- 1lbpowdered sugar
- 2teaspoonsvanilla
DIRECTIONS
- For the cake: Preheat oven to 350 degrees.
- Combine dry ingredients.
- Stir in oil, eggs and grated carrots.
- Beat for 2 minutes by hand.
- Add nuts and mix thoroughly.
- Bake in greased and floured 13 x 9 inch pan for 45 minutes.
- For the frosting: Beat the cream cheese, margarine, powdered sugar and vanilla till light and fluffy.
- Spread on cooled cake.

DIRECTIONS
- Juice a carrot and a stalk of celery.
- Pour over ice.
- Add a splash of spicy Bloody Mary Mix or V8.
- Mix and enjoy!
