Fruit Cheese Roll Recipe

INGREDIENTS

  1. 1/2cup choppedmixed dried fruit
  2. 1/4cup choppedmixed glace fruit
  3. 2tablespoonsport wine
  4. 1 (250 g)packetcream cheese
  5. 1/2cup gratedcheddar cheese
  6. 1teaspoon gratedorange rind
  7. 3/4cuppoppy seeds

DIRECTIONS

  1. Combine fruits in bowl, add port, cover and allow to stand for 1-2 hours.
  2. Beat softened cream cheese and cheddar together in electric mixer, stir in rind and fruit mixture.
  3. Refrigerate covered for 1 hour.
  4. Roll mixture into a log shape about 20cm in length, roll in poppy seeds, cover and refrigerated 24 hours.
  5. Serve with crackers.

Mock Bailey’s Irish Cream Recipe

INGREDIENTS

  1. 1cansweetened condensed milk
  2. 2tablespoonscocoa(may want to add a little more)
  3. 1pintheavy cream
  4. 4dropscoconut essence
  5. 1cupIrish whiskey(or a little more ;-)

DIRECTIONS

  1. Mix all together.
  2. Store in dark bottles in the fridge.
  3. Don’t tell anyone you have it or it will be gone soon!
  4. (I have alot of luck mixing this up in a blender).

French Canadian Frosted Maple Gingerbread Recipe

INGREDIENTS

  1. 2 1/3cupsall-purpose flour
  2. 1teaspoonbaking soda
  3. 1 1/2teaspoonsginger
  4. 1/2teaspoonsalt
  5. 1egg
  6. 1cuppure maple syrup
  7. 1cupsour cream
  8. 4tablespoons meltedbutteror bacon fat
  9. FROSTING

  10. 2-3cupsicing sugar, sifted
  11. 2tablespoons softbutter
  12. 3tablespoonsmaple syrup
  13. 1tablespoonsour creamor whipping cream

DIRECTIONS

  1. Sift together the flour, soda, ginger and salt.
  2. Beat the egg until it is foamy, then gradually beat in the maple syrup, sour cream, and butter or bacon fat.
  3. Gradually add the dry ingredients, beating until well blended.
  4. Pour into a greased and lightly floured 11 x 7 x 1 1/2 inch baking pan.
  5. Bake at 350 F.
  6. for 30 to 40 minutes, or until cake pulls away from the sides of the pan.
  7. Remove from the oven and let it cool.
  8. Combine all the frosting ingredients in a bowl, beat with an electric mixer until smooth, creamy and of spreading consistency.
  9. Place the icing in big swirls on the cake and sprinkle to taste with chopped walnuts.

Bacon Cheddar Appetizers Recipe

INGREDIENTS

  1. 8ounces finely shreddedcheddar cheese
  2. 1/2cupmayonnaise
  3. 3tablespoons finely choppedonions
  4. 1/2cup oscar mayerbacon bits
  5. 60 triscuit thin crispscrackers

DIRECTIONS

  1. Mix all ingredients except crackers Place crackers on cookie sheet.
  2. Top with about 1 tsp.
  3. cheese mixture.
  4. Broil 2 minutes or until cheese is melted.
  5. Garnish with chopped red and green pepper, if desired.

Mini Cheese and Meatballs Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1egg, beaten
  3. 1/4cupfine dry breadcrumbs
  4. 2tablespoonscatsup
  5. 2teaspoonsWorcestershire sauce
  6. 1teaspoonprepared mustard
  7. 1/2teaspoonsalt
  8. fresh ground pepper
  9. 10ounces rectangle kraftCracker Barrel Cheese or flavoredcheese, cut into 36 1/2 inch cubes

DIRECTIONS

  1. Preheat oven to 450*.
  2. Mix ground beef with all the ingreients except cheese.
  3. Mold 1 TBS meat mixture around a cube of cheese.
  4. Bake at 450* for 7-10 minutes or until meat is nicely browned on the outside.
