German Onion Pie Recipe

INGREDIENTS

  1. 2 1/2lbswhite onionsor yellow onions
  2. 4ouncesbutter
  3. 1/2teaspoonsalt
  4. 3tablespoonsflour
  5. 4largeeggs
  6. 1pintsour cream
  7. 1tablespooncaraway seeds(or enough for your taste)
  8. 1largeyeast bread dough, enough for a large size pizza

DIRECTIONS

  1. Line a large slightly oiled pizza pan with your favourite pizza yeast dough, about 1/4 inch thick.
  2. I usually use a large cookie sheet with low sides.
  3. Press dough on bottom and give slight edges.
  4. Fry onions slowly in the butter.
  5. Do not brown the onions, make them transparent and cooked but not browned.
  6. Beat eggs with the salt, sour cream, flour, and seeds.
  7. Mix in the cooked onions and butter.
  8. Pour over the pizza dough.
  9. Bake at 350 degrees for 40- 50 minutes or until knife comes out clean.
  10. Serve hot, or at room temperature.

Teriyaki Sauce Recipe

INGREDIENTS

  1. 1cupbeef broth
  2. 1cupwater
  3. 1/4-1/3cupbrown sugar(may sub. white)
  4. 1tablespoonrice vinegar
  5. 3tablespoonssoy sauce(I use Kikkomen)
  6. 1tablespoonfresh ginger(sliced or grated)
  7. 3-5clovesgarlic(thin sliced)
  8. 1tablespooncornstarch
  9. toasted sesame seeds (optional)
  10. honey (optional)

DIRECTIONS

  1. Combine broth, water, garlic and ginger in saucepan and simmer on low heat until liquid is reduced by half.
  2. Strain and discard garlic and ginger.
  3. Return reserved liquid to saucepan.
  4. Allow to cool slightly.
  5. Dissolve corn starch in soy sauce.
  6. Add soy sauce mixture, sugar and rice vinegar to saucepan with strained liquid and bring to beginning boil- just until slightly thickened.
  7. Add sesame seeds if desired.
  8. I usually toast approximately 2 Tbsp. of these and add if I am making a sauce for chicken.
  9. For the sesame teriyaki I use the larger measure of sugar (1/3 C.) producing a slightly sweeter sauce.
  10. I have also added a few Tbsp. honey on top of the sugar for a relatively sweet sauce and even added an extra Tbsp. of rice vinegar for extra tang.
  11. Feel free to adjust any quantities to suit your own personal taste.
  12. Powdered ginger and garlic are very poor substitutes.
  13. Take the time to select fresh firm garlic heads and ginger roots in the produce section.
  14. Here’s a tip for storing fresh ginger: Place your unused ginger root in a small clay pot filled with clean slightly damp sand.Each time you need a chunk dig it up, slice off what’s needed and return to pot.Moisten sand on occasion and enjoy fresh plump ginger for the life of the root.

Southwest Style Tilapia Recipe

INGREDIENTS

  1. 1 1/2lbstilapia fillets
  2. 1/2cupparmesan cheese, shredded
  3. 1/4cupyellow cornmeal
  4. 2tablespoonsflour
  5. 1teaspoonpaprika
  6. 1/2teaspoonblack pepper
  7. salt
  8. vegetable oil cooking spray

DIRECTIONS

  1. Preheat oven to 400 degrees.
  2. Combine Parmesan cheese, cornmeal, flour, paprika, pepper and salt in a bag.
  3. Place fish in dry mixture and shake to coat each fillet.
  4. Spray baking Dish with cooking spray; Place fish in baking dish, Spray with cooking spray, Sprinkle remaining cheese mixture over fish fillets.
  5. Bake for 15 to 20 minutes or until fillets flakes when tested with fork.

Priscilla’s Taco Thing Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1packagetaco seasoning mix
  3. 1/3cupwater
  4. 8ouncescream cheese
  5. 8ouncessour cream
  6. 2tablespoonssalsa
  7. 8ounces shreddedcheese, of your choice

DIRECTIONS

  1. Brown ground beef.
  2. Drain and add taco seasoning and water.
  3. Mix cream cheese, sour cream, and salsa together.
  4. Spread gound beef in 9″x 13″ pan.
  5. Spread cream cheese mixture over beef.
  6. Cover with shredded cheese.
  7. Bake at 350 degrees for 20 minutes.
  8. Serve with tortilla chips or corn chips.

Low Fat Brownies Recipe

INGREDIENTS

  1. 1/2cupall-purpose flour
  2. 1/2cupcocoa powder
  3. 1/4teaspoonsalt
  4. 1cupgranulated sugar
  5. 2 beatenegg whites
  6. 1teaspoonvanilla
  7. 1/3cupunsweetened applesauce
  8. 1/4cup choppednuts (optional)

DIRECTIONS

  1. Spray an 8 inch square pan or a 9 x 7 inch pan.
  2. Combine all dry ingredients together well.
  3. Add beaten egg whites, vanilla and applesauce into dry mix.
  4. Mix well, all by hand.
  5. Bake in prepared pan at 325 degrees for 19- 21 minutes.
  6. Cool.
  7. Cut and serve.
