4 Layer Lemon Pie Recipe

INGREDIENTS

  1. 3/4cupbutter
  2. 1 1/2cupsflour
  3. 1cuppecans, chopped
  4. 1 (8 ounce)packagecream cheese
  5. 1cupconfectioners’ sugar
  6. 1 (16 ounce)containerwhipped topping
  7. 2canscondensed milk
  8. 6egg yolks
  9. 3/4cuplemon juice

DIRECTIONS

  1. 1st Layer: Combine butter (melted), flour and pecans and press into a 13″ X 9″ casserole dish.
  2. Bake at 350 degrees for 25 minutes.
  3. Let cool.
  4. 2nd Layer: Combine cream cheese (softened), sugar and 1/2 of large whipped topping.
  5. Spread over cooled crust.
  6. 3rd Layer: Combine condensed milk, egg yolks and lemon juice, spread over 2nd layer.
  7. 4th Layer: Top with remainder of whipped topping.
  8. Garnish with lemon slices and mint, if you like.

Plain Cookies Recipe

INGREDIENTS

  1. 1cup softbutter
  2. 3/4cupwhite sugar
  3. 1/4cupbrown sugar
  4. 1largeegg
  5. 1 1/2cupsall-purpose flour
  6. 1 1/2teaspoonsbaking powder
  7. 1/2teaspoonbaking soda
  8. 2teaspoonsvanilla extract
  9. 1/2teaspoonsalt
  10. 1cuprolled oats(not instant 5 - 20 minutes type.)
  11. 1cup kellogsRice Krispies
  12. 1/2cupdesiccated coconut
  13. 1cupwhite chocolate chips
  14. 1/2cupdried cranberriesor dried cherries

DIRECTIONS

  1. Cream butter and sugars well.
  2. Add egg and vanilla.
  3. Beat well.
  4. Add flour, salt, powder, soda, mix well.
  5. Add coconut, oats, cranberries, and krispies, and chipits.
  6. Combine everthing by hand thouroughly.
  7. Roll in to round balls.
  8. Flatten with a fork.
  9. Place on parchment lined baking sheets.
  10. Bake 325 degrees F.
  11. for 15 minutes.

Incredible Lemon Squares Recipe

INGREDIENTS

  1. 1cupbutter(preferably)or margarine, at room temperature
  2. 1/2cupicing sugar, plus
  3. 1tablespoonicing sugar
  4. 2 1/3cupsflour
  5. 4eggs
  6. 1 3/4cupssugar
  7. 1/3cupfresh lemon juice
  8. 1/2teaspoonbaking powder

DIRECTIONS

  1. Preheat oven to 350.
  2. In medium bowl, cream butter and 1/2 cup icing sugar.
  3. Add 2 cups flour and stir with wooden spoon until well combined.
  4. Pat evenly into a 13 by 9 inch baking pan.Bake for 20 minutes.
  5. Combine eggs, sugar, remaining 1/3 cup flour, lemon juice and baking powder in blender container; cover and blend for 5 seconds.Scrape down sides of blender and blend another 5 seconds.
  6. Pour over partially baked crust and bake another 25 minutes or until light brown.
  7. Cool completely on wire rack.
  8. Sprinkle with remaining icing sugar.
  9. Cut into 32 squares.

Texas Caviar Recipe

INGREDIENTS

  1. 1 (15 1/2 ounce)canyellow hominy, drained
  2. 1 (15 ounce)canblack-eyed peas, rinsed and drained
  3. 3green onions, finely chopped
  4. 3clovesgarlic, minced
  5. 1largetomato, chopped
  6. 1green bell pepper, diced
  7. 1jalapeno pepper, seeded and minced(I use more)
  8. 1/3cup choppedflat leaf parsley
  9. 1/4cup choppedonions
  10. 1/2cup preparedItalian salad dressing
  11. parsley sprigs(for garnish)(optional)
  12. tortilla chips

DIRECTIONS

  1. Combine all ingredients and toss gently.
  2. Place in covered container and refrigerate several hours (gets better even overnight).
  3. Garnish with parsley sprigs before serving.
  4. Serve with warmed tortilla chips (heat in 350F oven 5-6 minutes).

Black Forest Parfaits Recipe

INGREDIENTS

  1. 1 (3 1/2 ounce)package fat-freewhite chocolate flavor instant pudding & pie filling mix
  2. 2cupsskim milk
  3. 1 (20 ounce)canlight cherry pie filling
  4. 3/4cupchocolate wafer crumbs(about 16 cookies)
  5. 6tablespoons frozenreduced-calorie whipped topping, thawed
  6. fresh cherries (optional)

DIRECTIONS

  1. Prepare pudding mix according to package directions, using skim milk.
  2. Divide half of pudding evenly among 6 (6 oz) parfait or stemmed glasses.
  3. Spoon half of pie filling evenly over pudding in glasses.
  4. Top parfaits evenly with half of cookie crumbs.
  5. Repeat layers with remaining pudding, pie filling, and cookie crumbs.
  6. Top each serving with 1 tablespoon whipped topping, and garnish with fresh cherries, if desired.
