INGREDIENTS
- 3cupsgraham cracker crumbs
- 1cupevaporated milk
- 1cupsugar(or more if you want sweeter)
- 6ouncessemi-sweet chocolate chips
- 1/4cupbutter, softened
- 1/2cup choppednuts
- 1teaspoonvanilla
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 9-inch square baking dish.
- In a bowl, mix all ingredients.
- Spread into prepared baking dish.
- Bake for 35 minutes, or until bars just pull away from sides of pan.
- Cool before cutting.
- Can be frosted if desired.

INGREDIENTS
- 6eggs
- 1cupall-purpose flour
- 1/2teaspoonsalt
- 1cupmilk
- 2tablespoons meltedbutter
- 1/4cuppowdered sugar
DIRECTIONS
- Preheat oven to 450 degrees F.
- Put a buttered 9 x 13 baking pan into your freezer.
- In a bowl, beat eggs with a fork and slowly add flour (beat well).
- Add salt, milk and melted butter (mix well).
- Remove pan from freezer.
- Pour mixture into cold pan and bake at 450 degrees F for 18 minutes- turn oven down to 350 degrees F and bake for another 10 minutes.
- The baking mixture will start to brown fairly quickly- that is ok- Don’t be tempted to shorten either baking times!
- The end result will be dark golden brown and a big surprise for the kids!
- Let cool for a few minutes and then lightly dust with powdered sugar- cut into serving pieces and top with butter and syrup.

INGREDIENTS
- 1 1/2lbslean ground beef
- 1largeonion, chopped
- 2tablespoons mincedfresh garlic(or to taste)
- 1green bell pepper, chopped
- 1red bell pepper, chopped
- salt and pepper(I use seasoning salt for this)
- 1/2lbfresh mushrooms, sliced(or to taste)
- 3/4cupparmesan cheese(or to taste)
- 1 (28 ounce)jar favoritespaghetti sauce(can use more)
- 12-16ounces uncookednoodles(use larger pasta like spaghetti or penne)
- 3cupscheddar cheese, shredded(or to taste)
- 3cupsmozzarella cheese, shredded(or to taste)
- 6ounces slicedpepperoni(or to taste)
DIRECTIONS
- Brown the ground beef with the onions, garlic and peppers, season with salt and pepper;drain fat.
- Add in the Parmesan cheese; mix to combine.
- When just done, add the sliced mushrooms, and cook for 1 minute.
- Cook the noodles until still a bit hard (don’t overcook the noodles, as they will get mushy in the crock pot).
- Add spaghetti sauce; simmer until bubbly; remove from heat.
- Add in noodles; toss to combine, then season with salt and pepper.
- In a crock pot, put a layer of the pasta mixture, then cheeses, then pepperoni; repeat layers.
- Cook on high for 30 minutes, then low for 1-2 hours.

INGREDIENTS
- 3/4cupapple juice
- 1lbsweet potatoes, peeled and sliced 1/4 inch thick
- 1apple, chopped(any kind)
- 1/8cupdried cranberries
- 2tablespoonsmaple syrup
- 2tablespoonsrum
- 1/4teaspoonsalt
- 2tablespoons choppedwalnuts
DIRECTIONS
- In a 10-inch skillet heat apple juice.
- Add sweet potato slices, spreading evenly.
- Cook, covered, over low heat for 12 minutes or until potatoes are nearly tender.
- Stir in apple, cranberries, maple syrup, rum, and salt.
- Cook, covered, over low heat for 3-4 minutes more or until apple is just tender.
- Uncover; boil gently for 3-4 minutes more or until liquid is syrupy.
- Place in serving bowl.
- Sprinkle with walnuts.

INGREDIENTS
- 2teaspoonsespresso powder
- 2tablespoonsboiling water
- 1/2cupbutter
- 1cupgranulated sugar
- 2eggs
- 1teaspoonvanilla
- 1/2cupall-purpose flour
- 1/2cupcocoa

FROSTING
- 4ouncescream cheese
- 2tablespoonsbutter
- 2teaspoonsinstant espresso powder
- 1teaspoonvanilla
- 1 1/2cupsicing sugar(approx)
- cocoa, for dusting
DIRECTIONS
- Dissolve espresso powder in water; set aside.
- In mixing bowl, cream together butter and sugar.
- Add eggs, espresso mixture and vanilla; beat just until blended.
- Sift together flour and cocoa; stir inches.
- Spread batter in greased 9-inch square baking pan.
- Bake in 350 degrees oven for 20 to 25 minutes or until tester comes out clean (don’t over bake) Let cool.
- FROSTING: With electric mixer, beat together cream cheese, butter, espresso powder and vanilla until smooth.
- Gradually beat in enough icing sugar to give spreading consistency.
- Spread over cooled base.
- Dust top lightly with cocoa through a small sieve.
- (May be wrapped airtight and stored up to 1 day or frozen) Cut into bars.
