INGREDIENTS
- 5tablespoonsbutter
- 2cups slicedfresh asparagus
- 1smallonion, sliced
- 1tablespoonflour
- salt and pepper
- 1cupsour cream
- 1cup gratedswiss cheese
- 1/4cupcracker crumbs
DIRECTIONS
- Melt 2 tbsps butter in a large skillet.
- Saute aspargus 2-3 minutes or until just tender.
- Remove and reserve.
- In the same skillet, saute onion in 2 tbsps butter until soft and transparent.
- Stir in flour, salt and pepper.
- Cook 1 minute or until flour is well blended.
- Add sour cream and cheese.
- Cook over low heat, stirring constantly, until cheese melts.
- Butter (or spray) a 1 quart baking dish.
- Place asparagus into the prepared dish and top with the cheese and sour cream mixture.
- Sprinkle with cracker crumbs.
- dot with remaining 1 Tbsp of butter.
- Bake at 400 degrees for 20 minutes.
- Can be place under a broiler for final 2 minutes to brown top.

INGREDIENTS
- 1lbsummer squash
- 1cuponions, finely grated
- 1cup shreddedcheddar cheese
- 1/4cuplight cream
- 2tablespoons meltedbutter
- 1egg, slightly beaten
- 1dashnutmeg
- salt and pepper
- 1/2cupcracker crumbs
- paprika
DIRECTIONS
- Cook squash in a small amount of water.
- Drain and add onion, cheese, cream, butter, egg, nutmeg, salt and pepper.
- Mix all together and put in a greased 1 1/2 quart casserole.
- Sprinkle with cracker crumbs and paprika.
- Bake at 350 degrees for 25 minutes, or untl mixutre bubbles and top is brown.

INGREDIENTS
- 4eggs, beaten
- 3/4teaspoonsalt
- 1lb shreddedmonterey jack cheese
- 1 1/2lbs slicedzucchini
- 1/2cupmilk
- 3tablespoonsflour
- 1tablespoonbaking powder
- 1/2cupbreadcrumbs
- 2tablespoonsbutter
DIRECTIONS
- Cook zucchini in a small amount of water.
- Drain.
- Mix eggs, milk, salt, baking powder, and flour in a large bowl.
- Sir in zucchini and cheese.
- Turn out in a greased 2 quart casserole.
- Sprinkle with bread crumbs and dot with butter.
- Bake at 350 degrees for 35 minutes.

INGREDIENTS
- 3boxesfrozen spinach, thawed and squeezed dry
- 1 (4 ounce)packagecream cheese
- 1envelopeonion soup mix
- 1/2pintsour cream
DIRECTIONS
- Mix all ingredients well.
- Turn into a greased flat casserole.
- Bake at 350 degrees for 45 minutes, or until bubbly.

INGREDIENTS
- 8ouncessemisweet chocolate, chopped
- 6tablespoonsbutter or margarine, cut up
- 1/3cupflour
- 1/4cupcocoa
- 1/2teaspoonbaking powder
- 1/4teaspoonsalt
- 3/4cupsugar
- 2teaspoonsvanilla
- 2eggs
- 1cupchocolate chips
- 1cupsweetened flaked coconut
DIRECTIONS
- In 1 quart saucepan, melt chocolate and butter together over low heat, stirring occasionally.
- Pour into large bowl and let cool for about 10 minutes.
- Combine flour, cocoa, baking powder and salt.
- Stir sugar and vanilla into chocolate mixture.
- Mix in eggs, one at a time.
- Add flour mixture, chocolate chips and coconut.
- Cover with plastic and refrigerate for 1 hour.
- Heat oven to 350.
- Shape dough into 1 1/2 inch balls and place 2 inches apart on ungreased cookie sheet.
- Cook for 12-14 minutes, until set.
- Cool on cookie sheet for two minutes and transfer to wire rack.
- Will keep at room temp for 1 week or freeze for up to 3 months.
- Prep time does not include chilling time and cooking time is per batch.
