Asparagus Bake Recipe

INGREDIENTS

  1. 5tablespoonsbutter
  2. 2cups slicedfresh asparagus
  3. 1smallonion, sliced
  4. 1tablespoonflour
  5. salt and pepper
  6. 1cupsour cream
  7. 1cup gratedswiss cheese
  8. 1/4cupcracker crumbs

DIRECTIONS

  1. Melt 2 tbsps butter in a large skillet.
  2. Saute aspargus 2-3 minutes or until just tender.
  3. Remove and reserve.
  4. In the same skillet, saute onion in 2 tbsps butter until soft and transparent.
  5. Stir in flour, salt and pepper.
  6. Cook 1 minute or until flour is well blended.
  7. Add sour cream and cheese.
  8. Cook over low heat, stirring constantly, until cheese melts.
  9. Butter (or spray) a 1 quart baking dish.
  10. Place asparagus into the prepared dish and top with the cheese and sour cream mixture.
  11. Sprinkle with cracker crumbs.
  12. dot with remaining 1 Tbsp of butter.
  13. Bake at 400 degrees for 20 minutes.
  14. Can be place under a broiler for final 2 minutes to brown top.

Peggy’s Favorite Summer Squash Bake Recipe

INGREDIENTS

  1. 1lbsummer squash
  2. 1cuponions, finely grated
  3. 1cup shreddedcheddar cheese
  4. 1/4cuplight cream
  5. 2tablespoons meltedbutter
  6. 1egg, slightly beaten
  7. 1dashnutmeg
  8. salt and pepper
  9. 1/2cupcracker crumbs
  10. paprika

DIRECTIONS

  1. Cook squash in a small amount of water.
  2. Drain and add onion, cheese, cream, butter, egg, nutmeg, salt and pepper.
  3. Mix all together and put in a greased 1 1/2 quart casserole.
  4. Sprinkle with cracker crumbs and paprika.
  5. Bake at 350 degrees for 25 minutes, or untl mixutre bubbles and top is brown.

Trish’s Zucchini Bake Recipe

INGREDIENTS

  1. 4eggs, beaten
  2. 3/4teaspoonsalt
  3. 1lb shreddedmonterey jack cheese
  4. 1 1/2lbs slicedzucchini
  5. 1/2cupmilk
  6. 3tablespoonsflour
  7. 1tablespoonbaking powder
  8. 1/2cupbreadcrumbs
  9. 2tablespoonsbutter

DIRECTIONS

  1. Cook zucchini in a small amount of water.
  2. Drain.
  3. Mix eggs, milk, salt, baking powder, and flour in a large bowl.
  4. Sir in zucchini and cheese.
  5. Turn out in a greased 2 quart casserole.
  6. Sprinkle with bread crumbs and dot with butter.
  7. Bake at 350 degrees for 35 minutes.

Spinach Bake Recipe

INGREDIENTS

  1. 3boxesfrozen spinach, thawed and squeezed dry
  2. 1 (4 ounce)packagecream cheese
  3. 1envelopeonion soup mix
  4. 1/2pintsour cream

DIRECTIONS

  1. Mix all ingredients well.
  2. Turn into a greased flat casserole.
  3. Bake at 350 degrees for 45 minutes, or until bubbly.

Chocolate Coconut Bites Recipe

INGREDIENTS

  1. 8ouncessemisweet chocolate, chopped
  2. 6tablespoonsbutter or margarine, cut up
  3. 1/3cupflour
  4. 1/4cupcocoa
  5. 1/2teaspoonbaking powder
  6. 1/4teaspoonsalt
  7. 3/4cupsugar
  8. 2teaspoonsvanilla
  9. 2eggs
  10. 1cupchocolate chips
  11. 1cupsweetened flaked coconut

DIRECTIONS

  1. In 1 quart saucepan, melt chocolate and butter together over low heat, stirring occasionally.
  2. Pour into large bowl and let cool for about 10 minutes.
  3. Combine flour, cocoa, baking powder and salt.
  4. Stir sugar and vanilla into chocolate mixture.
  5. Mix in eggs, one at a time.
  6. Add flour mixture, chocolate chips and coconut.
  7. Cover with plastic and refrigerate for 1 hour.
  8. Heat oven to 350.
  9. Shape dough into 1 1/2 inch balls and place 2 inches apart on ungreased cookie sheet.
  10. Cook for 12-14 minutes, until set.
  11. Cool on cookie sheet for two minutes and transfer to wire rack.
  12. Will keep at room temp for 1 week or freeze for up to 3 months.
  13. Prep time does not include chilling time and cooking time is per batch.
