Sausage Kale Soup Recipe

INGREDIENTS

  1. 2 (14 1/2 ounce)cansfat free chicken broth
  2. 2 (16 ounce)cansdark red kidney beans, rinsed and drained
  3. 3mediumred potatoes, diced,i leave them unpeeled
  4. 1mediumyellow onion, diced
  5. 1 1/2lbssmoked sausage, i use turkey smoked sausage,sliced
  6. 1bunchkale or3 (10ounce)packages frozenkale
  7. 1/8cup gratedparmesan cheese

DIRECTIONS

  1. Wash and remove the stems of the kale.
  2. Chop or tear kale into small pieces.
  3. Put all ingredients in crockpot, exccept for the Parmesan Cheese.
  4. Cook on low for 8 hours.
  5. Serve topped with parmesan cheese.

Crisco Chicken A La King Recipe

INGREDIENTS

  1. 3tablespoonsshortening
  2. 1/2cup slicedfresh mushrooms
  3. 1tablespoonall-purpose flour
  4. 1cupchicken stock
  5. 2cups dicedcooked chicken
  6. 2tablespoonssherry wine (optional)
  7. 1teaspoonsalt
  8. 1/4teaspooncayenne
  9. 2raw egg yolks
  10. 1/3cuppimiento strips

DIRECTIONS

  1. In a skillet over medium heat, melt shortening; brown mushrooms.
  2. Add flour to mushrooms and stir until blended, then slowly stir in the stock.
  3. Turn heat to low and cook, stirring constantly, until thick.
  4. Add chicken, sherry, salt and cayenne to skillet and stir well to combine; cook until chicken is hot.
  5. Add a small amount of the hot sauce to the egg yolks, which you should have in a small bowl, to temper the egg yolks so they won’t curdle when they hit the hot sauce.
  6. When tempered, stir egg yolks into chicken mixture and cook, stirring constantly, for about 3 minutes.
  7. Remove from heat, stir in pimiento strips, and serve over rice or hot biscuits.

Brownies from Heaven Recipe

INGREDIENTS

  1. 1 (20 ounce)packagebrownie mix
  2. 18 mallomarcookies, only available in the winter

DIRECTIONS

  1. Line 18 muffin cups with liners, set aside Prepare brownie mix according to directions on package.
  2. Spoon 2 tablespoons of brownie mix into muffin cups.
  3. Bake@ 350 degrees for 20 minutes.
  4. Top each brownie with a Mallomar.
  5. Press lightly.
  6. Return to oven for 2 minutes or until Mallomar starts to melt.
  7. Cool completely.
  8. Store in airtight container.

Crisco Tuna Chip Casserole Recipe

INGREDIENTS

  1. 2tablespoonsshortening
  2. 2tablespoonsall-purpose flour
  3. 1/2teaspoonsalt
  4. 1/2teaspoonpepper
  5. 2cupsmilk
  6. 2teaspoonsWorcestershire sauce
  7. 1cup crumbledpotato chips
  8. 2 (7 ounce)canstuna fish, drained and flaked(about 2 cups of tuna)

DIRECTIONS

  1. Preheat oven to 350F, have ready a lightly greased casserole dish.
  2. In a saucepan over medium heat, melt shortening; blend in flour, salt, and pepper.
  3. Add milk and worcestershire sauce and cook until thick and smooth, whisking constantly; remove from heat.
  4. Place 1/4 of the chips in the bottom of the casserole dish; top with 1/3 of the tuna.
  5. Repeat layers, ending with a topping of potato chips.
  6. Pour the sauce over all and cook in preheated oven for 30 minutes.

Crab Cakes Recipe

INGREDIENTS

  1. 1lb cookedcrabmeat, fresh or frozen
  2. 1 1/2cupspanko
  3. 3tablespoons dicedred bell peppers
  4. 3tablespoons dicedshallots
  5. 3tablespoons mincedparsley
  6. 3tablespoonslemon juice
  7. 1tablespoondry sherry (optional)
  8. 1/4cupheavy cream
  9. 1largeegg, beaten
  10. 1pinchsalt
  11. 1pinchwhite pepper
  12. 1dashTabasco sauce
  13. 1pinchcelery salt
  14. 1/2teaspoonpaprika(preferably sweet Hungarian)
  15. 4tablespoonsbutter or oil(or mixture of both)

DIRECTIONS

  1. In bowl, mix together 3/4 cup of the panko, bell pepper, shallots, parsley, lemon juice, sherry, cream, egg, salt, pepper, Tabasco, celery salt and paprika.
  2. Combine thoroughly.
  3. Add crab and mix well.
  4. Shape into 8 to 10 patties and coat with remaining panko.
  5. Refrigerate until chilled, about 1 hour.
  6. In skillet heat butter&/or oil over medium heat.
  7. When nice and hot add crab cakes.
  8. Sear until coating is golden brown and lightly crispy, about 3 to 4 minutes on each side.
  9. Add more oil or butter as needed to the pan to prevent the cakes from sticking.
