INGREDIENTS
- 2 (14 1/2 ounce)cansfat free chicken broth
- 2 (16 ounce)cansdark red kidney beans, rinsed and drained
- 3mediumred potatoes, diced,i leave them unpeeled
- 1mediumyellow onion, diced
- 1 1/2lbssmoked sausage, i use turkey smoked sausage,sliced
- 1bunchkale or3 (10ounce)packages frozenkale
- 1/8cup gratedparmesan cheese
DIRECTIONS
- Wash and remove the stems of the kale.
- Chop or tear kale into small pieces.
- Put all ingredients in crockpot, exccept for the Parmesan Cheese.
- Cook on low for 8 hours.
- Serve topped with parmesan cheese.

INGREDIENTS
- 3tablespoonsshortening
- 1/2cup slicedfresh mushrooms
- 1tablespoonall-purpose flour
- 1cupchicken stock
- 2cups dicedcooked chicken
- 2tablespoonssherry wine (optional)
- 1teaspoonsalt
- 1/4teaspooncayenne
- 2raw egg yolks
- 1/3cuppimiento strips
DIRECTIONS
- In a skillet over medium heat, melt shortening; brown mushrooms.
- Add flour to mushrooms and stir until blended, then slowly stir in the stock.
- Turn heat to low and cook, stirring constantly, until thick.
- Add chicken, sherry, salt and cayenne to skillet and stir well to combine; cook until chicken is hot.
- Add a small amount of the hot sauce to the egg yolks, which you should have in a small bowl, to temper the egg yolks so they won’t curdle when they hit the hot sauce.
- When tempered, stir egg yolks into chicken mixture and cook, stirring constantly, for about 3 minutes.
- Remove from heat, stir in pimiento strips, and serve over rice or hot biscuits.

INGREDIENTS
- 1 (20 ounce)packagebrownie mix
- 18 mallomarcookies, only available in the winter
DIRECTIONS
- Line 18 muffin cups with liners, set aside Prepare brownie mix according to directions on package.
- Spoon 2 tablespoons of brownie mix into muffin cups.
- Bake@ 350 degrees for 20 minutes.
- Top each brownie with a Mallomar.
- Press lightly.
- Return to oven for 2 minutes or until Mallomar starts to melt.
- Cool completely.
- Store in airtight container.

INGREDIENTS
- 2tablespoonsshortening
- 2tablespoonsall-purpose flour
- 1/2teaspoonsalt
- 1/2teaspoonpepper
- 2cupsmilk
- 2teaspoonsWorcestershire sauce
- 1cup crumbledpotato chips
- 2 (7 ounce)canstuna fish, drained and flaked(about 2 cups of tuna)
DIRECTIONS
- Preheat oven to 350F, have ready a lightly greased casserole dish.
- In a saucepan over medium heat, melt shortening; blend in flour, salt, and pepper.
- Add milk and worcestershire sauce and cook until thick and smooth, whisking constantly; remove from heat.
- Place 1/4 of the chips in the bottom of the casserole dish; top with 1/3 of the tuna.
- Repeat layers, ending with a topping of potato chips.
- Pour the sauce over all and cook in preheated oven for 30 minutes.

INGREDIENTS
- 1lb cookedcrabmeat, fresh or frozen
- 1 1/2cupspanko
- 3tablespoons dicedred bell peppers
- 3tablespoons dicedshallots
- 3tablespoons mincedparsley
- 3tablespoonslemon juice
- 1tablespoondry sherry (optional)
- 1/4cupheavy cream
- 1largeegg, beaten
- 1pinchsalt
- 1pinchwhite pepper
- 1dashTabasco sauce
- 1pinchcelery salt
- 1/2teaspoonpaprika(preferably sweet Hungarian)
- 4tablespoonsbutter or oil(or mixture of both)
DIRECTIONS
- In bowl, mix together 3/4 cup of the panko, bell pepper, shallots, parsley, lemon juice, sherry, cream, egg, salt, pepper, Tabasco, celery salt and paprika.
- Combine thoroughly.
- Add crab and mix well.
- Shape into 8 to 10 patties and coat with remaining panko.
- Refrigerate until chilled, about 1 hour.
- In skillet heat butter&/or oil over medium heat.
- When nice and hot add crab cakes.
- Sear until coating is golden brown and lightly crispy, about 3 to 4 minutes on each side.
- Add more oil or butter as needed to the pan to prevent the cakes from sticking.
