Apricot-Glazed Ham Steaks Recipe

INGREDIENTS

  1. 3/4lblean ham, cut into 4 slices
  2. 1/4cupapricot fruit spread
  3. 1/4cuporange juice

DIRECTIONS

  1. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot.
  2. Add ham; cook for 2-3 minutes on each side or until lightly browned.
  3. Add apricot spread and orange juice to skillet, stirring until spread melts.
  4. Reduce heat and simmer 5-6 minutes or until ham is glazed.
  5. Enjoy!

Cooking Light’s Crock Pot Italian Pot Roast Recipe

INGREDIENTS

  1. 2 1/2lbsboneless round roast
  2. 1mediumonion, sliced
  3. 1/4teaspoonsalt
  4. 1/4teaspoonpepper
  5. 2 (8 ounce)cansno-salt-added tomato sauce(or regular)
  6. 1 (2/3 ounce)packageItalian salad dressing mix

DIRECTIONS

  1. Slice roast in half for even cooking; place in crock pot.
  2. Add onion and remaining ingredients.
  3. Cover and cook on high setting 5 hours or until roast is tender.
  4. Or, cover and cook on high setting one hour; reduce to low setting, and cook 7 hours.
  5. Slice meat to serve.

Mom’s Polish Sausage Recipe

INGREDIENTS

  1. 1 (1 lb)packagePolish sausage
  2. 1green pepper
  3. 1onion
  4. 1 (15 1/2 ounce)can of cutstewed tomatoes
  5. 1 (12 ounce)canbeer

DIRECTIONS

  1. Put polish sausage into medium-sauce pan.
  2. Clean and chop the green pepper and onion.
  3. Add to pan.
  4. Put in the tomatoes and beer.
  5. Simmer for about 1/2 hour.

Hearty Tortellini Soup Recipe

INGREDIENTS

  1. 1lblean ground beef
  2. 2 (19 1/2 ounce)cans beefminestrone soup
  3. 1 (10 1/2 ounce)canbeef broth
  4. 1/2cupketchup
  5. 2tablespoonsWorcestershire sauce
  6. 1 (12 ounce)bag frozenbeef tortellini
  7. parmesan cheese

DIRECTIONS

  1. Brown ground beef; drain off excess fat.
  2. In 2 quart pan, mix together first 5 ingredients.
  3. Bring to a boil and simmer for 10 minutes.
  4. Meanwhile, cook frozen beef tortellini according to package directions; drain.
  5. Fill bottom of soup bowls with drained tortellini.
  6. Ladle soup over tortellini and sprinkle with Parmesan cheese.

Cranberry Sauce Recipe

INGREDIENTS

  1. 4cupsfresh cranberries, picked over & rinsed
  2. 2cupsSplenda sugar substituteor sugar
  3. 6tablespoonswater
  4. 6tablespoonsfresh orange juice
  5. 1/4teaspoonsalt
  6. 2inchesfresh ginger, peeled & cut in 3 pieces(if you don’t have fresh ginger, add 1/2 tsp ground ginger with other spices)
  7. 1orange, zest of
  8. 1teaspooncinnamon
  9. 1/8teaspoonground cloves
  10. 1/2teaspoonallspice

DIRECTIONS

  1. Mix together in large pot, cranberries, sugar (or Splenda), water& juice, salt, ginger pieces (not ground) and orange zest.
  2. Bring to boil and cook about 10 minutes or until all berries have burst.
  3. Remove from heat and allow to cool 1/2 hour.
  4. Remove ginger pieces and add cinnamon, ground cloves and all spice.
  5. Blend thoroughly and allow to cool completely.
  6. Put in covered bowl and refrigerate until ready to use.
