INGREDIENTS
- 1cupbutter, softened
- 1/2cupvegetable shortening(Crisco is good)
- 2 1/2cupssugar
- 2teaspoonsvanilla
- 5largeeggs
- 1tablespooninstant coffee granules
- 1/4cup very hotwater
- 2cupsall-purpose flour
- 3/4cup siftedbaking cocoa
- 1teaspoonsalt
- 1teaspoonbaking powder
- 1cupbuttermilk, room temp
- 1cupmini chocolate chips
DIRECTIONS
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease well, 2 9×5-in loaf pans, or 6 mini loaf pans.
- In a large bowl, cream butter, shortening, sugar and vanilla; add eggs, one at a time, beating well after each addition; scrape the bowl frequently.
- Dissolve the coffee granules in hot water.
- Sift together the flour, cocoa, salt and baking powder; add alternately with coffee and buttermilk to the creamed mixture, beating until well blended.
- Add in the chocolate chips; mix well.
- Divide the batter equally between well-greased prepared baking pans.
- Bake for 1 hour (for 9×5-in), 40 minutes (for mini loaf pans).
- Cool 10 minutes before removing to a wire rack.

INGREDIENTS
- 1 1/2cupswhite sugar
- 1/2cupbrown sugar
- 1cupapple cider
- 1 (12 ounce)packagecranberries
DIRECTIONS
- Combine all ingredients in a saucepan.
- Bring to a boil over medium high heat.
- Reduce heat and simmer on medium low heat for 20 minutes or until cranberries pop, stirring occassionally.

INGREDIENTS
- 1/2cupmilk
- 1teaspoonvanilla
- 1egg
- 1 1/2cupscake flour
- 2tablespoons meltedbutter
- 1/4teaspoonsalt
- 1tablespoonorange rind
- 1tablespoonbaking powder
- 1/2cup choppedapples(skin on)
- 1/2cupsugar
DIRECTIONS
- Blend all wet ingredients.
- Fold in orange peel, salt and baking powder.
- Fold in flour.
- Fold in chopped apples.
- Do not over mix.
- Drop spoonfuls of batter in 325 degree oil and fry until golden brown.

INGREDIENTS
- 1 (510 g)boxyellow cake mix
- 3eggs
- 1/2cupbutter, melted
- 1 (16 ounce)boxicing sugar(2 cups)
- 1 (8 ounce)packagecream cheese, softened
- 1teaspoonvanilla
DIRECTIONS
- Set oven to 350 degrees.
- Grease a 13×9-in baking pan.
- In a bowl, combine the cake mix, 1 egg and 1/2 cup melted butter.
- Spread the mixture in the prepared baking pan.
- Cream together the icing sugar, 2 eggs, cream cheese and vanilla.
- Spread mixture over the cake batter.
- Bake for 35-40 minutes, or until cake tests done, and is a golden brown.

INGREDIENTS
- 1lbconfectioners’ sugar(about 4 cups)
- 1/2cupinstant nonfat dry milk powder
- 1/4cupbutter
- 1/2cuppeanut butter
- 1/2cupKaro light corn syrup
- 1tablespoonwater
- 1teaspoonvanilla extract
- 1/2cup choppedwalnuts
DIRECTIONS
- Sift the confectioner’s sugar and milk together and set aside.
- (If you don’t, the fudge will be lumpy.) Melt butter and peanut butter over low heat in saucepan.
- Stir in corn syrup, water and vanilla.
- Blend in the sifted ingredients in two additions, stirring until well blended.
- Remove from heat and stir in the walnuts.
- Turn into a buttered 8″ square pan.
- Cool and cut in squares.
- **Youcan use either creamy or chunky peanut butter.
- The walnuts are also optional.
- You can also add chopped peanuts instead of the walnuts if you want.
