Applesauce-Spice Cake Recipe

INGREDIENTS

  1. 1cupapplesauce, sweetened or not(homemade is best)
  2. 7/8cupbrown sugar, lightly packed
  3. 1/2cupoil
  4. 1 3/4cupsflour
  5. 1teaspoonbaking soda
  6. 1/2teaspoonsalt
  7. 1teaspoonground cinnamon
  8. 1teaspoonground ginger
  9. 1/2teaspoonground cloves
  10. 1/2cupgolden raisins
  11. 1/2cup choppednuts(Black Walnuts are my favorite)

DIRECTIONS

  1. Preheat oven to 350 F.
  2. Mix the Applesauce, Brown Sugar, and Oil.
  3. Sift together the dry ingredients.
  4. Add the Raisins and Nuts to the flour mixture.
  5. Add the Applesauce mixture.
  6. Mix well.
  7. Pour into a 9 x 13 pan that has been buttered and floured.
  8. Bake for 40 min.
  9. Remove from oven.
  10. Invert over a cooling rack for 30 min.
  11. Carefully remove with spatula.
  12. Ice, if you dare.

Apple - Cinnamon Cake Recipe

INGREDIENTS

  1. 1boxspice cake mix(dry)
  2. 1 (21 ounce)canapple pie filling
  3. 3eggs
  4. 3tablespoonssugar
  5. 1teaspoonground cinnamon

DIRECTIONS

  1. Preheat oven to 350.
  2. Beat dry cake mix, pie filling, and eggs in large bowl on low for 2 minutes.
  3. Spread half of batter in prepared pan (2 loaf pans for a breakfast cake, or a 9×13- I prefer the 2 loaf pans).
  4. Mix sugar and cinnamon; sprinkle half of the mixture over the batter in the pan.
  5. Spread remaining batter in the pan; sprinkle with remaining sugar-cinnamon mixture.
  6. Bake for 30-35 minues or until done.
  7. I use a few tablespoons of canned vanilla frosting- heat it in the microwave a few seconds and drizzle over the top of the cake.
  8. This is a great cake- and so easy to make!

Ritz/Cornbread Stuffing Recipe

INGREDIENTS

  1. 1 (1 lb)boxRitz crackers, crushed
  2. 4corn muffins or cornbread, crumbled
  3. 3largeonions, sliced thin
  4. oil, enough to saute’ onions
  5. 1canchicken soup, with noodles,stars,etc.
  6. 1teaspoonsugar
  7. 1carrot, peeled and grated
  8. 1apple, peeled and grated
  9. pepper, to taste
  10. 1/2teaspoonpoultry seasoning
  11. onion powder
  12. garlic powder

DIRECTIONS

  1. Saute’ onions in oil till transparent.
  2. Add carrots and apples and cook till the are softened.
  3. Add remaining ingredients.
  4. Mix together and taste for seasoning.
  5. If too dry you can add a bit of water.
  6. Stuff turkey loosely.
  7. Any leftover stuffing can be cooked along-side turkey in foil or in a casserole dish.
  8. When basting turkey, add some of the juices to any stuffing cooked outside the bird.

Crab Rangoon Recipe

INGREDIENTS

  1. 4 (8 ounce)packages softenedcream cheese
  2. 1cup finely choppedimitation crabmeat
  3. 3 choppedgreen onions
  4. 1teaspoonsugar
  5. 3cloves crushedgarlic
  6. 2packageswonton wrappers
  7. hotoil(enough to deep fry with)

DIRECTIONS

  1. Mix first 5 ingredients well.
  2. Spoon 1-Tbl.
  3. of mixture onto wrapper.
  4. Bring all corners up (at top of mixture) forming a purse, and pinch to secure.
  5. Deep fry in hot oil 1-minute or until golden brown.
  6. Drain on paper towels.
  7. Makes 50-60.
  8. Recipe can be halved.
  9. Dig in and enjoy!

Picnic Basket Bread Recipe

INGREDIENTS

  1. 1 (1/4 ounce)packageactive dry yeast
  2. 2 1/2-3cupsflour
  3. 1tablespoonsugar
  4. 2cups choppedcooked chicken
  5. 1 1/2cups shreddedswiss cheese
  6. 1 (10 ounce)boxfrozen chopped spinach, thawed and drained
  7. 1/4cup gratedparmesan cheese
  8. 1/4cup finely choppedonions
  9. 1 beatenegg white
  10. 2tablespoonssesame seeds (optional)
  11. 1 1/4teaspoonssalt

DIRECTIONS

  1. Preheat oven to 375°.
  2. Mix cheese, spinach, chicken, onion, and 1/4 teaspoon salt for filling.
  3. Set aside.
  4. Dissolve yeast in 1 cup warm water.
  5. Mix yeast mixture, sugar, 1 teaspoon salt, and 1 cup flour in a mixing bowl.
  6. Gradually add 1 1/2 cups flour to dough.
  7. Knead dough until smooth, using other 1/2 cup flour if dough is sticky.
  8. Roll dough into a 16 x 10-inch rectangle.
  9. Spread filling down the middle of dough.
  10. Bring dough edges together and seal.
  11. Place seam-side down on lightly greased cookie sheet.
  12. Brush bread with egg white and sprinkle with sesame seeds.
  13. Bake at 375° for 40 minutes.
  14. Serve warm, or cool and refrigerate.
