INGREDIENTS
- 1cucumber, peeled,seeded,diced
- 1mango, peeled and diced
- 1-2tablespoonlime juice
- 1-2tablespoonlemon juice
- 1/2teaspoonchili peppers, minced
- 1smallred pepper, minced
- 2tablespoonsdried shredded coconut
- 2teaspoonsbrown sugar
DIRECTIONS
- Mix everything in a bowl.
- Chill for 15-20 minutes before serving.
- Works very well with Brazilian, Thai or Indian dishes!

INGREDIENTS
- 2cupsbutter, softened
- 3cupsflour
- 1cupicing sugar
- 1/4-1/2cup crushedpistachios(approx, a bit time consuming to shell these but so worth it)
- 1/4-1/2cupSkor English toffee bits(approx)
- 6-8ouncessemisweet chocolate(approx)
DIRECTIONS
- preheat oven to 350* mix flour, butter and icing sugar together~blend well.
- form into balls a bit smaller than golf balls.
- place on cookie sheet about 2 inches apart.
- slightly flatten– very slightly.
- bake for 15-17 mins.
- until golden.
- watch to not overbake.
- cool on wire rack.
- melt chocolate on low heat.
- cool.
- dip about 1/3 of the cookie in chocolate.
- let excess drip off.
- dip into crushed pistachios.
- do the same with next 12 cookies but dip in skor bits.
- put some melted chocolate in ziploc baggie snip off one corner or use a icing bag and drizzle over some plain cookies.
- you will end up with 3 types 12 each kind:chocolate dipped with pistachios, chocolate dipped with skor bits and chocolate drizzle.

INGREDIENTS
- 1/4cupsoy sauce(lite okay)
- 2tablespoonslemon juice
- 2tablespoonsoil, divided
- 1clovegarlic, pressed
- 4boneless skinless chicken breasts
- 1/2cupmayonnaise, lite okay(not salad dressing)
- 1/2teaspoonsugar
- 2headsromaine lettuce, torn into pieces
- 1cupcroutons (optional)
- 1/4cupparmesan cheese, shredded (optional)
DIRECTIONS
- Blend soy sauce, lemon juice, 1 tablespoon oil and garlic in small bowl.
- Remove 2 tablespoons of mixture and place in another small bowl.
- To reserved 2 tablespoon mixture, blend in mayonnaise, sugar, and 1 tablespoon oil.
- Cover and refrigerate.
- Grill chicken, basting with soy mixture (without mayo).When it is too cold to use the outside grill, I have used the Foreman and that works just as well.
- Divide lettuce on to 4 plates, top with grilled chicken, dressing to taste, croutons and Parmesan cheese.

INGREDIENTS
- 1lbsausage
- 12ouncesFrench breador Italian bread
- 2 (4 ounce)cansmushrooms, drained
- 6largeeggs
- 1quartmilk
- 2teaspoonsitalian seasoning
- 1/2teaspoongarlic powder
- 1/4teaspoonpepper
- 8ouncesmozzarella cheese, shredded
- 4ouncescheddar cheese, shredded
DIRECTIONS
- In large skillet, cook sausage, drain.
- Grease a 9×13 baking dish.
- Cut bread into 1/2 inch cubes.
- In a large bowl, combine sausage, bread and mushrooms.
- Put in prepared pan.
- In same large bowl, wisk together eggs, milk and seasonings.
- Pour over bread mixture.
- Cover with plastic wrap and refrigerate overnight.
- In the morning, preheat oven to 350.
- Bake uncovered 1 hour Sprnkle evenly with cheeses.
- Bake 15 minutes longer.
- Let stand 10 minutes before serving.

INGREDIENTS
- 3lbslean beef
- 1/2lbsuet
- 6lbssour apples
- 3lbs seededraisins
- 2lbsseedless raisins
- 1/2lbcitron, minced
- 1nutmeg, grated
- 2lbssugar
- 2cupscider vinegar
- 2cupsbeef stock
- 2cupsmolasses
- 1tablespooncloves
- 1teaspooncinnamon
- 1teaspoonmace
- 1tablespoonsalt
DIRECTIONS
- Cut meat in cubes, cover with water and simmer until tender.
- Cool.
- Force meat, suet and pared and cored apples through a food chopper.
- Add remaining ingredients plus 2 cups stock and simmer 1 hour, stirring frequently.
- Fill into sterilized jars, seal and keep in a cool place.
- I’m Adding”Can in a waterbath 20 min of low boil after the jars are sealed”.
