INGREDIENTS

Salad
- 2largered apples, unpeeled and cubed(I like Gala Apples)
- 1 (20 ounce)canpineapple chunks, drained(reserve juice)
- 2cups seedlesswhite grapes
- 1 1/2cups toastedpecans, broken

Dressing
- 1/4cupsugar
- 1/4cupbutter
- 1tablespoonlemon juice
- 2tablespoonscornstarch
- 2tablespoonswater
- 1cupmayonnaise
- 1teaspoonpoppy seeds
DIRECTIONS
- Make dressing by combining the reserved pipeapple juice, sugar, butter and lemon juice in a small saucepan.
- Heat to boiling.
- Dissolve the cornstarch in the water; add to the pineapple mixutre, stirring constantly.
- Cook until thick and smooth.
- Chill completely before stirring in mayonnaise and poppy seeds.
- Combine apples, pineapple chunks and grapes in large bowl.
- Add chilled dressing; refrigerate until time to serve.
- Stir in pecans right before serving for maximum crunchiness.

- 2eggs

- 4cupsflour
- 4teaspoonsbaking powder
- 2teaspoonsbaking soda
- 1teaspoonsalt
- 1 1/2cupschocolate chips

- 1cupmargarine
- 1cupCrisco
- 2cupsmarshmallow creme
- 5cupsconfectioners’ sugar
- 1/2teaspoonsalt, dissolved in
- 2tablespoonswarm water
- 2 1/2teaspoonsvanilla
DIRECTIONS
- preheat oven 375 Mix well pumpkin, eggs, oil, sugar, vanilla, cinnamon, and nutmeg blend in flour, baking powder, baking soda, and salt add chocolate chips (the batter is going to be very thick).
- grease cookie sheets spoon onto sheets, usally I spray spoon with Pam cooking spray.
- Shape cookies Filling– cream together margarine, crisco, fluff, 2 cups confectioners sugar.
- Beat in salt and vanilla.
- Then gradually beat in 2-3 cups confectioners sugar.

INGREDIENTS
- 1tablespoonvegetable oil
- 1red onion, chopped
- 1green bell pepper, chopped
- 1 1/2tablespoonschili powder
- 1tablespooncumin powder
- 1lbground beef
- 1 (8 ounce)cantomato sauce
- 1cup frozencorn kernels, thawed
- 1 (9 1/2 ounce)packagecorn muffin mix
- 1egg
- 2tablespoonsmilk
- 1tablespoonchives, chopped fresh
DIRECTIONS
- preheat oven 400.
- in a large skillet heat oil over medium heat.
- add onion and pepper cook 8min.
- till soft.
- add chili powder and cumin cook 1 min.
- add beef cook 4 min or till browned.
- stir in tomato sauce and corn.
- spoon mixture into 10″ pie plate.
- Topping: in a large bowl combinecorn mix with egg and milk.
- spoon batter into decorating bag.
- pipe into shape of a cactus.
- sprinkle with chopped chives.
- bake until cactus is browned.

- 1 1/2lbsbeef
- 1/2teaspoonsalt
- 1/2teaspoonpepper
- 4slicessharp cheddar cheese
- 4 crustyrolls
- 4leaveslettuce
- 1tomato, sliced
DIRECTIONS
- filling: melt butter in skillet add onion cook 4min add mushrooms, thyme, and salt cook until liquid evaporates cool Burgers: divide meat into 8 portions shape into 3 1/2″ patties spoon quarter filling in center and spreand leaving 1/2″ border top with another patty and pinch together.
- Flatten.
- cover and chill in freezer 15minutes season sides with salt and pepper grill 6-8 minutes per side top with cheese during last 4 minutes grill rolls.
- 2min serve burgers on rolls with lettuce and tomato.

INGREDIENTS
- 16sliceswhite bread, cut in cubes
- 1lbsharp cheddar cheese, grated
- 1cupbutter, melted
- 8eggs
- 4cupsmilk or half-and-half(1 quart)
DIRECTIONS
- Arrange the bread cubes in a buttered rectangular casserole dish; sprinkle with grated cheese.
- Pour the melted butter over the cheese.
- In a bowl, beat eggs well; add milk.
- Pour the milk over bread mixture.
- Refrigerate overnight.
- Remove from fridge, bake at 350 degrees for about 1 hour.
