Low-carb Cottage Pie Recipe

INGREDIENTS

  1. 1lbground beef
  2. 1mediumonion, diced
  3. 1mediumgreen pepper or red pepper, diced
  4. 1zucchini, diced
  5. 2tablespoonsolive oil
  6. 1tablespoonWorcestershire sauce
  7. 2teaspoonsmixed herbs
  8. 1teaspoonground nutmeg
  9. salt and pepper
  10. 1lbraw cauliflower
  11. 2tablespoonssour cream
  12. 2tablespoonsbutter
  13. salt and pepper

DIRECTIONS

  1. Preheat oven to 180 Celcius.
  2. Fry the onions, green peppers and zucchini in olive oil, on medium heat, until soft.
  3. Add the ground beef and stir until red colour disappears.
  4. Add the worcester sauce, mixed herbs, nutmeg, salt and pepper and reduce heat to simmer.
  5. Place cauliflower in microwave dish and cook on high for 10 minutes, until very soft.
  6. Add sour cream and butter to cauliflower and use masher or food processor to mash.
  7. Place ground beef mixture in casserole dish and spread mashed cauliflower over the top.
  8. Scrape the top of the”mash” lightly with a fork to make ridges.
  9. Cook in oven for 20- 30 minutes, until”mash” starts to brown.

Pork Chop Casserole Recipe

INGREDIENTS

  1. 4pork loin chops, at least ½ inch thick
  2. 1onion, chopped coarsely
  3. 2clovesgarlic
  4. 1 (10 1/2 ounce)cancondensed cream of mushroom soup
  5. 1 (16 ounce)jarapplesauce

DIRECTIONS

  1. Trim all visible fat from the pork chops.
  2. Chop onions and garlic.
  3. Mix onions, garlic, applesauce, and condensed soup together.
  4. Pour mixture over chops.
  5. Bake covered at 325F for 1 hour, or until pork chops are tender.
  6. Serve with salad.

Strip Loin Steak With Blue Cheese and Sage Recipe

INGREDIENTS

  1. 1tablespoon mincedfresh garlic
  2. 2tablespoons choppedfresh sage(only fresh should be used)
  3. 1/4cupolive oil(can use more oil)
  4. 2tablespoonsbalsamic vinegaror wine vinegar
  5. salt and pepper
  6. 4 striploinsteaks
  7. 1/2cup crumbledblue cheeseor gorgonzola(or to taste)

DIRECTIONS

  1. In a bowl, whisk together the minced garlic, 1 tbsp chopped sage, 1/4 cup olive oil, vinegar and salt and pepper (I use about 1/4 teaspoon salt).
  2. Add steaks, turn well to coat.
  3. Cover, and refrigerate for 4 hours or up to 8 hours.
  4. Place steaks on grill, season with more pepper if desired and cook to desired doneness.
  5. Transfer steaks to a platter.
  6. Sprinkle with crumbled blue cheese and remaining sage.

Freeway Sweet Potatoes Recipe

INGREDIENTS

  1. 2-3sweet potatoes
  2. 2-3granny smith apples, peeled, cored and cut into half rings
  3. 2-3tablespoonsbutter
  4. 1/2cupmaple syrup(OR 3/4 c brown sugar in 1/3 c water)
  5. 1cupcranberries

DIRECTIONS

  1. Cook the sweet potatoes (either microwave or boil), until they are cooked but not mushy.
  2. Remove the skins and cut into 1/4 inch slices.
  3. In a 9 x 13 in baking pan, layer sweet potato slices then top with apple slices Dot with the butter.
  4. Pour either the maple syrup or the brown sugar water mixture over the slices.
  5. Scatter the cranberries over the top.
  6. Bake at 375 for 20-30 minutes.

Meatless Manicotti Recipe

INGREDIENTS

  1. 1packagemanicotti
  2. 1/4cup gratedparmesan cheese
  3. 2cupsspaghetti sauce
  4. Filling

  5. 2eggs
  6. 24ouncesricotta cheese
  7. 1/4cupparmesan cheese
  8. 2cups shreddedmozzarella cheese
  9. 1/4teaspoonoregano
  10. salt, pepper,and parsley

DIRECTIONS

  1. Cook manicotti shells as directed.
  2. Mix filling ingredients and spoon about 3 Tablespoons into each shell.
  3. Place shells into 9×13 inch pan and cover with spaghetti sauce and sprinkle with parmesan.
  4. Bake at 400 for 15-20 minutes.
