INGREDIENTS
- 1lbground beef
- 1mediumonion, diced
- 1mediumgreen pepper or red pepper, diced
- 1zucchini, diced
- 2tablespoonsolive oil
- 1tablespoonWorcestershire sauce
- 2teaspoonsmixed herbs
- 1teaspoonground nutmeg
- salt and pepper
- 1lbraw cauliflower
- 2tablespoonssour cream
- 2tablespoonsbutter
- salt and pepper
DIRECTIONS
- Preheat oven to 180 Celcius.
- Fry the onions, green peppers and zucchini in olive oil, on medium heat, until soft.
- Add the ground beef and stir until red colour disappears.
- Add the worcester sauce, mixed herbs, nutmeg, salt and pepper and reduce heat to simmer.
- Place cauliflower in microwave dish and cook on high for 10 minutes, until very soft.
- Add sour cream and butter to cauliflower and use masher or food processor to mash.
- Place ground beef mixture in casserole dish and spread mashed cauliflower over the top.
- Scrape the top of the”mash” lightly with a fork to make ridges.
- Cook in oven for 20- 30 minutes, until”mash” starts to brown.

INGREDIENTS
- 4pork loin chops, at least ½ inch thick
- 1onion, chopped coarsely
- 2clovesgarlic
- 1 (10 1/2 ounce)cancondensed cream of mushroom soup
- 1 (16 ounce)jarapplesauce
DIRECTIONS
- Trim all visible fat from the pork chops.
- Chop onions and garlic.
- Mix onions, garlic, applesauce, and condensed soup together.
- Pour mixture over chops.
- Bake covered at 325F for 1 hour, or until pork chops are tender.
- Serve with salad.

INGREDIENTS
- 1tablespoon mincedfresh garlic
- 2tablespoons choppedfresh sage(only fresh should be used)
- 1/4cupolive oil(can use more oil)
- 2tablespoonsbalsamic vinegaror wine vinegar
- salt and pepper
- 4 striploinsteaks
- 1/2cup crumbledblue cheeseor gorgonzola(or to taste)
DIRECTIONS
- In a bowl, whisk together the minced garlic, 1 tbsp chopped sage, 1/4 cup olive oil, vinegar and salt and pepper (I use about 1/4 teaspoon salt).
- Add steaks, turn well to coat.
- Cover, and refrigerate for 4 hours or up to 8 hours.
- Place steaks on grill, season with more pepper if desired and cook to desired doneness.
- Transfer steaks to a platter.
- Sprinkle with crumbled blue cheese and remaining sage.

INGREDIENTS
- 2-3sweet potatoes
- 2-3granny smith apples, peeled, cored and cut into half rings
- 2-3tablespoonsbutter
- 1/2cupmaple syrup(OR 3/4 c brown sugar in 1/3 c water)
- 1cupcranberries
DIRECTIONS
- Cook the sweet potatoes (either microwave or boil), until they are cooked but not mushy.
- Remove the skins and cut into 1/4 inch slices.
- In a 9 x 13 in baking pan, layer sweet potato slices then top with apple slices Dot with the butter.
- Pour either the maple syrup or the brown sugar water mixture over the slices.
- Scatter the cranberries over the top.
- Bake at 375 for 20-30 minutes.

INGREDIENTS
- 1packagemanicotti
- 1/4cup gratedparmesan cheese
- 2cupsspaghetti sauce

Filling
- 2eggs
- 24ouncesricotta cheese
- 1/4cupparmesan cheese
- 2cups shreddedmozzarella cheese
- 1/4teaspoonoregano
- salt, pepper,and parsley
DIRECTIONS
- Cook manicotti shells as directed.
- Mix filling ingredients and spoon about 3 Tablespoons into each shell.
- Place shells into 9×13 inch pan and cover with spaghetti sauce and sprinkle with parmesan.
- Bake at 400 for 15-20 minutes.
