INGREDIENTS
- 2cupsvegetable broth
- 1cupmedium grain rice
- 1/4teaspoonsalt
- 1tablespoonolive oil
- 1cup choppedonions
- 1tablespoonolive oil
- 1tablespoonbutter
- 1cup finely slicedcelery
- 1cup slicedfresh mushrooms
- 1/4teaspoonsalt
- 1/4teaspoonpepper
- 2tablespoons choppedfresh herbs(choice of basil, oregano, parsley, thyme, verbena, lemon thyme, or a mixture)
- 1teaspoon finely choppedfresh rosemary
DIRECTIONS
- Bring vegetable broth to a boil in a saucepan with 1/4 tsp salt and tbsp of olive oil; add rice.
- Bring mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed.
- Remove pan from heat and allow to sit undisturbed for 10 minutes.
- While waiting on rice, saute onion and celery in butter and rest of oil until tender.
- Add mushrooms, remaining salt and pepper, and cook 1 minute more, or until mushrooms are soft.
- Remove lid from rice, and stir in vegetables, chopped herbs and rosemary.

INGREDIENTS
- 2tablespoonscornstarch
- 2cupsbroth(Chicken, veggie, or beef)
- 1/4cupmilk
- 1tablespoonWorcestershire sauce
- 2teaspoonsonion soup mix
- pepper
DIRECTIONS
- Heat broth, worcestershire, and onion soup mix to a boil Mix 2 tbs cornstarch with cold milk and add to the boiling broth and stir well.
- Bring mixture to a boil and let boil for additional 1-2 minutes until it thickens.
- Season to taste with pepper and serve.

INGREDIENTS
- 3/4cupmilk, slightly warmed
- 6tablespoonsbutter or margarine, softened and cut into pieces
- 1egg, slightly beaten
- 3cupsbread flour
- 1/4cupsugar
- 1teaspoonsalt
- 1 1/2teaspoonsyeast
DIRECTIONS
- Place ingredients into bread machine in order instructed by the manufacturer.
- Usually all wet, (as listed above) or all dry first.
- Set machine to dough cycle.
- (usually 90 minutes) When dough cycle is complete, remove dough onto floured board.
- Cut dough in equal sized peices and place into greased muffin tins.
- You should have exactly 18 rolls or you can shape them another way you prefer and place on a cookie sheet.
- Cover and let rise in a warm place for thirty minutes or until doubled in size.
- (Note: a damp paper towel sprayed with nonstick cooking spray works great!) Brush with melted butter and bake for 15 to 20 minutes.

DIRECTIONS
- Open box of Shredded mini wheat and jar of peanut butter.
- Dip shredded mini-wheat into peanut butter, eat, and be in heaven.

INGREDIENTS
- 1/4cupflour
- pepper
- 8chicken thighs or4 chicken breasts
- 2tablespoonsoil
- 1onion, chopped
- 4cloves mincedfresh garlic
- 2smoked sausage, sliced
- 2stalkscelery, chopped
- 2teaspoonscajun seasoning
- 1 (19 ounce)cantomatoes
- 1green bell pepper, chopped
- 2green onions(for garnish)
DIRECTIONS
- In a plastic bag, combine the flour and pepper.
- Add the chicken; shake to coat.
- Reserve the remaining flour mixture.
- In a skillet, heat oil over med-high heat; brown the chicken on all sides (about 10 minutes).
- Remove to plate; set aside.
- Add the chopped onion and garlic to the same skillet; cook over medium heat for about 3 minutes.
- Add sausages, celery and seasoning; cook for 1-5 minutes, or until veggies are tender.
- Add the reserved flour mixture.
- Stir in tomatoes, (mashing slightly with a fork) and the bell pepper; bring to a boil.
- Return chicken to pan; reduce heat.
- Cover and simmer, stirring occasionally, for about 35 minutes, or until the chicken is fully cooked.
- Serve garnished with green onions.
