Mushroom-Herb Rice Recipe

INGREDIENTS

  1. 2cupsvegetable broth
  2. 1cupmedium grain rice
  3. 1/4teaspoonsalt
  4. 1tablespoonolive oil
  5. 1cup choppedonions
  6. 1tablespoonolive oil
  7. 1tablespoonbutter
  8. 1cup finely slicedcelery
  9. 1cup slicedfresh mushrooms
  10. 1/4teaspoonsalt
  11. 1/4teaspoonpepper
  12. 2tablespoons choppedfresh herbs(choice of basil, oregano, parsley, thyme, verbena, lemon thyme, or a mixture)
  13. 1teaspoon finely choppedfresh rosemary

DIRECTIONS

  1. Bring vegetable broth to a boil in a saucepan with 1/4 tsp salt and tbsp of olive oil; add rice.
  2. Bring mixture to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed.
  3. Remove pan from heat and allow to sit undisturbed for 10 minutes.
  4. While waiting on rice, saute onion and celery in butter and rest of oil until tender.
  5. Add mushrooms, remaining salt and pepper, and cook 1 minute more, or until mushrooms are soft.
  6. Remove lid from rice, and stir in vegetables, chopped herbs and rosemary.

Easy Healthy Creamy Gravy(No fat) Recipe

INGREDIENTS

  1. 2tablespoonscornstarch
  2. 2cupsbroth(Chicken, veggie, or beef)
  3. 1/4cupmilk
  4. 1tablespoonWorcestershire sauce
  5. 2teaspoonsonion soup mix
  6. pepper

DIRECTIONS

  1. Heat broth, worcestershire, and onion soup mix to a boil Mix 2 tbs cornstarch with cold milk and add to the boiling broth and stir well.
  2. Bring mixture to a boil and let boil for additional 1-2 minutes until it thickens.
  3. Season to taste with pepper and serve.

Tender Bread Machine Rolls Recipe

INGREDIENTS

  1. 3/4cupmilk, slightly warmed
  2. 6tablespoonsbutter or margarine, softened and cut into pieces
  3. 1egg, slightly beaten
  4. 3cupsbread flour
  5. 1/4cupsugar
  6. 1teaspoonsalt
  7. 1 1/2teaspoonsyeast

DIRECTIONS

  1. Place ingredients into bread machine in order instructed by the manufacturer.
  2. Usually all wet, (as listed above) or all dry first.
  3. Set machine to dough cycle.
  4. (usually 90 minutes) When dough cycle is complete, remove dough onto floured board.
  5. Cut dough in equal sized peices and place into greased muffin tins.
  6. You should have exactly 18 rolls or you can shape them another way you prefer and place on a cookie sheet.
  7. Cover and let rise in a warm place for thirty minutes or until doubled in size.
  8. (Note: a damp paper towel sprayed with nonstick cooking spray works great!) Brush with melted butter and bake for 15 to 20 minutes.

  1. Open box of Shredded mini wheat and jar of peanut butter.
  2. Dip shredded mini-wheat into peanut butter, eat, and be in heaven.

Smokey Sausage Chicken Recipe

INGREDIENTS

  1. 1/4cupflour
  2. pepper
  3. 8chicken thighs or4 chicken breasts
  4. 2tablespoonsoil
  5. 1onion, chopped
  6. 4cloves mincedfresh garlic
  7. 2smoked sausage, sliced
  8. 2stalkscelery, chopped
  9. 2teaspoonscajun seasoning
  10. 1 (19 ounce)cantomatoes
  11. 1green bell pepper, chopped
  12. 2green onions(for garnish)

DIRECTIONS

  1. In a plastic bag, combine the flour and pepper.
  2. Add the chicken; shake to coat.
  3. Reserve the remaining flour mixture.
  4. In a skillet, heat oil over med-high heat; brown the chicken on all sides (about 10 minutes).
  5. Remove to plate; set aside.
  6. Add the chopped onion and garlic to the same skillet; cook over medium heat for about 3 minutes.
  7. Add sausages, celery and seasoning; cook for 1-5 minutes, or until veggies are tender.
  8. Add the reserved flour mixture.
  9. Stir in tomatoes, (mashing slightly with a fork) and the bell pepper; bring to a boil.
  10. Return chicken to pan; reduce heat.
  11. Cover and simmer, stirring occasionally, for about 35 minutes, or until the chicken is fully cooked.
  12. Serve garnished with green onions.
