INGREDIENTS
- 12-16ounces rawlarge shrimp
- 2red chilies
- 5tablespoonsolive oil
- 3clovesgarlic, crushed
- salt and pepper
DIRECTIONS
- Remove the heads and shells of the shrimp, leaving the tails intact.
- Halve each chile lengthwise and discard seeds.
- Heat the olive oil in a flameproof pan, suitable for serving.
- Add all the shrimp, chiles, and garlic to the pan and cook over high heat for about 3 minutes, stirring until the shrimp turn pink.
- Season lightly with salt and pepper and serve immediately.

INGREDIENTS
- 1lbplum tomatoes, sliced
- 8ouncesmozzarella cheese, sliced
- 1red onion, finely chopped
- 4-6piecessun-dried tomatoes packed in oil, drained and chopped
- 1/4cupolive oil
- 1teaspoonred wine vinegar
- 1/2teaspoonDijon mustard
- 4tablespoons chopped freshmixed herbs(ie. basil, parsley, oregano, and chives)
- salt and pepper
- fresh herbs, to garnish
DIRECTIONS
- Arrange the sliced tomatoes and mozzarella in circles in four individual shallow flameproof dishes.
- Sprinkle the chopped red onion and sun-dried tomatoes on top.
- Preheat the broiler to high.
- Whisk together the olive oil, vinegar, mustard, chopped herbs, and seasoning.
- Pour over the salads.
- Place the salads under the hot broiler for 4-5 minutes, until the mozzarella starts to melt.
- Sprinkle pepper over the salads, and serve immediately, garnished with fresh herb sprigs.

- 6cupsorange sections, seeds &,membranes removed
- 3cupsfresh pineapple, chopped
- 3cupsfresh coconut, shredded
- 1 1/2cupsmaraschino cherries, halved,drained,and rinsed
- powdered sugar
DIRECTIONS
- Combine all ingredients in a large bowl.
- Cover and refrigerate.

INGREDIENTS
- 1canchickpeas, drained
- 2clovesgarlic
- 2tablespoonstahinior unsweetenedsmooth peanut butter
- 1/4cupolive oil
- 1lemon, juice of
- 1/2teaspooncayenne pepper
- 1tablespoonsesame seeds
- sea salt
DIRECTIONS
- Rinse the chickpeas well and place in a blender or food processor with the garlic and a pinch of sea salt.
- Add the tahini or peanut butter and process until fairly smooth.
- With the motor still running, slowly pour in the oil and lemon juice.
- Stir in the cayenne pepper and add more sea salt to taste.
- If the mixture is too thick, stir in a little cold water.
- Transfer the puree to a serving bowl.
- Heat a small nonstick pan and add the sesame seeds.
- Cook for 2-3 minutes, shaking the pan, until the seeds are golden.
- Allow to cool, then sprinkle over the puree.

INGREDIENTS
- 1loafciabatta
- 1/4cupsun-dried tomato pesto
- 2smallwhite onions
- olive oil, for brushing
- 8ouncesmozzarella cheese
- 8black olives
DIRECTIONS
- Preheat the broiler to high.
- Cut the bread in half horizontally and toast lightly.
- Spread with the pesto.
- Leave the broiler on.
- Peel the onions and cut them horizontally into thick slices.
- Brush with oil and broil for 3 minutes, until lightly browned.
- Slice the cheese and arrange over the bread.
- Lay the onion slices on top and sprinkle on some olives.
- Place under a hot broiler for 2-3 minutes, until the cheese melts, and the onion chars.
- Cut in half diagonally.
