Rich Sweet Potato-chocolate Fudge Cake Recipe

INGREDIENTS

  1. 1 (18 1/4 ounce)packagedevil’s food cake mix
  2. 4eggs
  3. 1/2cupbutter, melted
  4. 1cupwater
  5. 1cup cookedmashed sweet potatoes
  6. 1cupsemi-sweet chocolate chips

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Grease two 9″ round cake pans.
  3. At low speed, beat cake mix with eggs, melted butter and 1 cup water for 30 seconds.
  4. Increase speed to medium; beat 2 minutes.
  5. Reduce speed to low; beat in cooked mashed sweet potatoes, and chocolate chips.
  6. Divide batter between pans.
  7. Bake 25-30 minutes, or until cake test done.
  8. Cool on rack 15 minutes before removing from pans.
  9. Frost cake with desired frosting.

Lazy Day Stew Recipe

INGREDIENTS

  1. 1lblean hamburger
  2. 2largecarrots, sliced lengthwise and cut into chunks
  3. 1celery rib, sliced
  4. 1cantomato soup
  5. 1/2canwater
  6. 1bay leaf
  7. 1teaspooncelery seeds
  8. 2mediumpotatoes, cut into chunks
  9. 1onion, thinly sliced
  10. 1cangreen beans
  11. 1 (6 ounce)canmushrooms

DIRECTIONS

  1. Grease a casserole dish.
  2. Put into it crumbled burger, carrots, celery, soup, water, spices, potatoes, onion, green beans and mushrooms.
  3. Cover and bake at 275 degrees for 4 hours, adding a litle more water if necessary.

Sweet ‘n Sour Meatballs Recipe

INGREDIENTS

  1. 3eggs
  2. 1mediumonion, chopped
  3. 1 1/2cupsdry breadcrumbs
  4. 1teaspoonsalt
  5. 2lbsground beef
  6. 2tablespoonsvegetable oil
  7. Sauce

  8. 3 1/2cupstomato juice
  9. 1cup packedbrown sugar
  10. 10gingersnaps, finely crushed
  11. 1/4cupwhite vinegar
  12. 1teaspoonsalt

DIRECTIONS

  1. In a bowl, combine the eggs, onion, bread crumbs and salt.
  2. Crumble beef over mixture and mix well.
  3. Shape into 1-1/2″ balls.
  4. In a large skillet, brown meatballs in batches in oil.
  5. Transfer to a greased 13″x9″x2″ baking dish.
  6. In a saucepan, combine the sauce ingredients.
  7. Bring to a boil over medium heat, stirring until cookie crumbs are dissolved.
  8. Pour over meatballs.
  9. Bake uncovered at 350 degrees for 40-45 minutes or until meat is no longer pink.

Brie Crisps Recipe

INGREDIENTS

  1. 4ouncesbrie cheese, at room temperature
  2. 1/2cupbutter, at room temperature
  3. 2/3cupflour
  4. 2dashescayenne pepper, to taste
  5. 1/8teaspoonsalt
  6. paprika

DIRECTIONS

  1. Combine butter and cheese in the food processsor and mix until creamy.
  2. Add remaining ingredients and blend until dough almost forms a ball in the food processor.
  3. Shape into a roll 2 inches round and wrap tightly in plastic wrap.
  4. Refrigerate overnight.
  5. Slice rolls into 1/4 inch pieces, place 2 inches apart on cookie sheet and bake at 400 degrees for 10 to 12 mintues or until edges are brown.
  6. Cool on rack.
  7. Sprinkle with paprika and serve immediately.

Low-Fat Beef, Cabbage And Beet Borscht Recipe

INGREDIENTS

  1. 6ouncesextra lean ground beef
  2. 1clovegarlic, minced
  3. 1cup choppedonions
  4. 4cups choppedcabbage
  5. 2 (14 1/2 ounce)cansreduced-sodium stewed tomatoes
  6. 1 3/4cupswater
  7. 3cups shreddedraw beets
  8. 1tablespoonlemon juice
  9. 2tablespoonsbrown sugar(packed)

DIRECTIONS

  1. Coat a large pot with nonstick spray.
  2. Crumble the beef into the pot.
  3. Cook over medium-high heat, breaking up the meat with a wooden spoon, for 4 to 5 minutes, or until lightly browned.
  4. Line a platter with several thicknesses of paper towels.
  5. Transfer the beef to the plate and drain well.
  6. Wipe out the pot with a paper towel.
  7. Add the garlic, onions and cabbage.
  8. Saute over medium heat for 15 minutes, or until the cabbage is softened; if needed, add a few tablespoons water to the pot to prevent sticking.
  9. Add the beef, tomatoes, water, beets, lemon juice and brown sugar.
  10. Bring to a boil over high heat.
  11. Cover, reduce the heat to medium and cook for 10 minutes, or until the beets are tender.
