INGREDIENTS
- 5largeflour tortillas
- 3-4green onions, chopped–stems and all
- 4ounces choppedgreen chilies, drained
- 8ouncescream cheese, softened
- 1 (8 ounce)containersour cream
- 1/2lbcheddar cheese, shredded
- 1dashhot sauce
DIRECTIONS
- Have tortillas at room temperature.
- Place the remaining ingredients in a bowl and, with an electric mixer, combine all until well distributed.
- Spread mixture fairly thinly and evenly on tortillas to within 1/8 inch of edge.
- Roll up jelly-roll fashion and wrap each tortilla in plastic film.
- Refrigerate overnight.
- When ready to serve, slice in 3/4 inch rounds and arrange on serving plate.
- Serve with salsa.
- Note: tortillas will tend to dry out if rolls are unwrapped and sliced too early.
- Cook time is chilling time.

INGREDIENTS
- 200gbean thread noodles
- 450g cookedprawns, shelled, deveined
- 2teaspoonsfish sauce
- 1tablespoonlight soy sauce
- 2tablespoonslime juice
- 1tablespoonsugar
- 1red Thai chile
- 1lebanese cucumbers, halved lengthways, seeded, sliced thinly
- 250g punnetcherry tomatoes
- 1/4cup loosely packed coarsely choppedfresh mint
- 1/4cup loosely packed coarsely choppedfresh coriander
- 1/4cup loosely packed coarsely choppedfresh basil
DIRECTIONS
- Place the noodles in a large heat-proof bowl and cover with boiling water.
- Stand until just tender; drain.
- Rinse under cold water, drain well and chop coarsely.
- Combine sauces, juice, sugar and chile in a small bowl.
- Combine noodles, prawns, sauce mixture, cucumber, tomato and herbs in a large bowl; toss gently.

INGREDIENTS
- 6cupspopped popcorn
- 3 (2 1/8 ounce) nestlebutterfinger candy bars, chopped
- 1/4cupbutter
- 3 1/2cupsminiature marshmallows
DIRECTIONS
- Combine popcorn and chopped butterfinger bars in a large bowl.
- Melt butter in medium saucepan over low heat.
- Stir in marshmallows and heat, stirring constantly until marshmallows are melted and mixture is smooth.
- Pour over popcorn mixture and quickly toss to coat well.
- Spray hands with nonstick cooking spray and form mixture into six 3″ balls.
- Place on wax paper to cool.
- Store in airtight container.

INGREDIENTS
- 2 1/2cupsflour
- 1cupsugar
- 1teaspoonbaking soda
- 1/2teaspoonground ginger
- 1/4teaspoonsalt
- 1/4cup choppedcrystallized ginger
- 2tablespoons gratedfresh lemon rind
- 1tablespoonfresh lemon juice
- 3largeeggs
- cooking spray
- 1tablespoonwater
- 1egg white
- 1tablespoonsugar
DIRECTIONS
- preheat oven to 350 combine flour, sugar, baking soda, ginger and salt in a large bowl.
- stir in crystallized ginger.
- mix lemon rind, lemon juice and eggs together and stir into flour mixture.
- the dough will be crumbly.
- turn dough out to a lightly floured surface, knead 7-8 times.
- divide dough in half.
- shape each half into a log.
- spray a cookie sheet with non stick spray, place logs 6″ apart.
- combine water and eggwhite and brush over tops.
- sprinkle with sugar.
- bake for 20 minutes.
- remove to a wire rack and cool for 10 minutes.
- slice each log diagonally into 3/4″ slices.
- place back on baking sheet, upright.
- lower oven to 325.
- bake 20 minutes, remove to a wire rack, cool.

INGREDIENTS
- 1 1/4cupswarm water
- 1packageactive dry yeast
- 2tablespoons softshortening
- 2teaspoonssalt
- 2tablespoonssugar
- 3cupsflour
DIRECTIONS
- Using a large mixer bowl, dissolve yeast in warm water.
- Add shortening, salt, sugar and half the flour.
- Beat 2 minutes at medium speed.
- Add remaining flour and blend until smooth.
- Scrape batter off sides of bowl and cover with a cloth.
- Rise in warm place for 30 minutes, then beat 25 strokes by hand and spread evenly in a greased loaf pan.
- Smooth top with floured hand and let rise again until 1/4″ from top of pan (about 40 minutes).
- Bake in preheated 375° oven for 45 to 50 minutes or until brown.
