Tortilla Rolls Recipe

INGREDIENTS

  1. 5largeflour tortillas
  2. 3-4green onions, chopped–stems and all
  3. 4ounces choppedgreen chilies, drained
  4. 8ouncescream cheese, softened
  5. 1 (8 ounce)containersour cream
  6. 1/2lbcheddar cheese, shredded
  7. 1dashhot sauce

DIRECTIONS

  1. Have tortillas at room temperature.
  2. Place the remaining ingredients in a bowl and, with an electric mixer, combine all until well distributed.
  3. Spread mixture fairly thinly and evenly on tortillas to within 1/8 inch of edge.
  4. Roll up jelly-roll fashion and wrap each tortilla in plastic film.
  5. Refrigerate overnight.
  6. When ready to serve, slice in 3/4 inch rounds and arrange on serving plate.
  7. Serve with salsa.
  8. Note: tortillas will tend to dry out if rolls are unwrapped and sliced too early.
  9. Cook time is chilling time.

Prawn Salad With Mint, Basil and Coriander Recipe

INGREDIENTS

  1. 200gbean thread noodles
  2. 450g cookedprawns, shelled, deveined
  3. 2teaspoonsfish sauce
  4. 1tablespoonlight soy sauce
  5. 2tablespoonslime juice
  6. 1tablespoonsugar
  7. 1red Thai chile
  8. 1lebanese cucumbers, halved lengthways, seeded, sliced thinly
  9. 250g punnetcherry tomatoes
  10. 1/4cup loosely packed coarsely choppedfresh mint
  11. 1/4cup loosely packed coarsely choppedfresh coriander
  12. 1/4cup loosely packed coarsely choppedfresh basil

DIRECTIONS

  1. Place the noodles in a large heat-proof bowl and cover with boiling water.
  2. Stand until just tender; drain.
  3. Rinse under cold water, drain well and chop coarsely.
  4. Combine sauces, juice, sugar and chile in a small bowl.
  5. Combine noodles, prawns, sauce mixture, cucumber, tomato and herbs in a large bowl; toss gently.

Butterfinger Popcorn Balls Recipe

INGREDIENTS

  1. 6cupspopped popcorn
  2. 3 (2 1/8 ounce) nestlebutterfinger candy bars, chopped
  3. 1/4cupbutter
  4. 3 1/2cupsminiature marshmallows

DIRECTIONS

  1. Combine popcorn and chopped butterfinger bars in a large bowl.
  2. Melt butter in medium saucepan over low heat.
  3. Stir in marshmallows and heat, stirring constantly until marshmallows are melted and mixture is smooth.
  4. Pour over popcorn mixture and quickly toss to coat well.
  5. Spray hands with nonstick cooking spray and form mixture into six 3″ balls.
  6. Place on wax paper to cool.
  7. Store in airtight container.

lemon ginger biscotti Recipe

INGREDIENTS

  1. 2 1/2cupsflour
  2. 1cupsugar
  3. 1teaspoonbaking soda
  4. 1/2teaspoonground ginger
  5. 1/4teaspoonsalt
  6. 1/4cup choppedcrystallized ginger
  7. 2tablespoons gratedfresh lemon rind
  8. 1tablespoonfresh lemon juice
  9. 3largeeggs
  10. cooking spray
  11. 1tablespoonwater
  12. 1egg white
  13. 1tablespoonsugar

DIRECTIONS

  1. preheat oven to 350 combine flour, sugar, baking soda, ginger and salt in a large bowl.
  2. stir in crystallized ginger.
  3. mix lemon rind, lemon juice and eggs together and stir into flour mixture.
  4. the dough will be crumbly.
  5. turn dough out to a lightly floured surface, knead 7-8 times.
  6. divide dough in half.
  7. shape each half into a log.
  8. spray a cookie sheet with non stick spray, place logs 6″ apart.
  9. combine water and eggwhite and brush over tops.
  10. sprinkle with sugar.
  11. bake for 20 minutes.
  12. remove to a wire rack and cool for 10 minutes.
  13. slice each log diagonally into 3/4″ slices.
  14. place back on baking sheet, upright.
  15. lower oven to 325.
  16. bake 20 minutes, remove to a wire rack, cool.

Easy Streamlined White Bread (No Kneading) Recipe

INGREDIENTS

  1. 1 1/4cupswarm water
  2. 1packageactive dry yeast
  3. 2tablespoons softshortening
  4. 2teaspoonssalt
  5. 2tablespoonssugar
  6. 3cupsflour

DIRECTIONS

  1. Using a large mixer bowl, dissolve yeast in warm water.
  2. Add shortening, salt, sugar and half the flour.
  3. Beat 2 minutes at medium speed.
  4. Add remaining flour and blend until smooth.
  5. Scrape batter off sides of bowl and cover with a cloth.
  6. Rise in warm place for 30 minutes, then beat 25 strokes by hand and spread evenly in a greased loaf pan.
  7. Smooth top with floured hand and let rise again until 1/4″ from top of pan (about 40 minutes).
  8. Bake in preheated 375° oven for 45 to 50 minutes or until brown.
